    This looks absolutely delicious! I feel "authenticity" has become a dogma rather than a way to make food more delicious, so a Greek-ish salad is right up my alley. Plus I feel the Greeks are probably way less judgmental than those Italian Foodies who can't seem to wrap their heads around people doing stuff non-traditionally... 😂

      No one has a problem with non-traditional food. They have a problem with calling non-traditional dishes by traditional names when they're only inspired by the traditional dish. Notice Carla isn't calling this a "Greek salad" but rather "Greek-ish."

    If you use the fine ground bulgur that we use for tabouli, you only have to soak and not cook it. Then you'd have a Greek/Lebanese-ish salad. But tomatoes are a must.

    Carla I made this without the grains (only because I didn’t have any) and subbed a jalapeño because it’s what I had on hand and holy moly!!! So so amazing a bursting with flavor. It’s really a foolproof and simple yet so delicious recipe. Great job developing!! 😊😊

    another amazing benefit of soaking: using less energy to cook your food! especially with the gas prices in europe (and probably the rest of the world) right now, 3+ hours on the stove is not great.

    you wouldn't want to cook it with the soaking liquid to keep all the nutrients and starch or is it too much?

    For the record, in Bulgaria we don’t call our cheese Feta and it’s actually different from Feta. Yes, we have these food fights in the Balkans😅

    Oh man This must be how the Italians feel when they see American pasta videos. Hahah This tomato-free salad looks great though. It's time we take wheat berry out of the strictly funeral food category over here. I'll definitely try this Carla, thanks for sharing and cheers from Greece!

    So feta is protected by PDO, BUT the US still retains the use of feta as a generic term. It makes finding genuine feta kind of impossible. As with most cheese most of what we get is made in Wisconsin. Which is tasty but I would like to find the genuine one sometime.
    Maybe they're in specialty cheese shops here 😅

    Ugh there is absolutely nothing greek about this salad. Not even the cheese
