Perfecting the Chicken Caesar Salad Wrap

- When I asked y’all your opinions about what belongs in a chicken Caesar wrap, the responses were truly wild. Intentionally soggy lettuce? Grape halves? French fries inside? Chickpeas??? The passion was irrefutable. Whether I agreed or not-well, that’s another story. After many tests and a few tribulations, I landed on Chicken Caesar Wrap My Way™: Crunchy-gone- soggy-gone crunchy croutons, juicy diced dark meat chicken, something called a “lettuce hug,” blender Parm, a quality wrap, and, of course, the world’s greatest Caesar dressing. Let’s jump in, shall we?

As much as I like to think of a wrap as a "walking around" food, it is a "make at home" recipe. I've never had one as good as this one, ever, in the world. Feel free to disagree, but you have to try it first.
NOOOOO! Add some sardine oil to the pan for the croutons. Also, lemon zest on the damm croutons! You already have the fucking ingredients there!

Putting anchovies in the wrap? I am good cook and after around a decade of more serious home cooking, I realized, that I had to trust other chefs and try their tastes out without changing anything. I kid you not, my taste and cooking have improved A LOT since doing that. Definitely putting radicchio and anchovies in my next wrap!

Your way is better texturally and aesthetically, but I sometimes have trouble biting through whole lettuce due to having blunt teeth - so I understand “chop it all up; chop it all in.”

I rarely comment on recipe videos, but I want to say to everyone in New York, the Wolf Nights wraps are 100% worth buying. The texture is SUPERB! Better than any other store-bought wrap or tortilla. It really takes this recipe over the top.

yay for chicken thighs. actually love the whole anchovy addition. would have never come up with that. in my mind, feel like maybe the first method (lettuce kept whole with the wrapping) maybe would keep the lettuce more intact and retain its texture? but either way it seems like the wrap should be assembled and eaten quickly so the lettuce does not get too soggy with time. my main concern is just keeping the lettuce part as crispy as possible. in terms of aesthetics I can see that the whole lettuce method would result in a prettier view when you cut down the middle of the wrap...

nothing about this video made me say no or want to fight you haha, my heart is so happy you went with the traditional route and didn't add random things in the wrap! and to me what makes a perfect caesar wrap is the dressing! This is a great video not only in terms of making what’s looking to be an absolute delicious wrap that I can’t wait to try over the weekend and prep in advance for the next couple of days. But also because of it provides a great look into developing better cooking skills by showing her own approach to recipe development and the thought process behind the choices she makes as she is making them.

Looks delicious Carla! A few enhancements I made: for the crouton making deglazing, I used part butter part olive oil before going in the oven. The croutons had a buttery note which made it amazing. I also added fresh grated parm to the croutons when they came out of the oven for more umami. Amazing dish, thank you!

I’ve made versions of these wraps many many times over the last few weeks and I must say, this has been one of my favorite recipes that I came across in quite some while. Thank you for making such an accessible recipe, it’s insanely flexible and changeable and really helps me batch cook a bunch of it and keep them to feed myself as I try and get out of the slump that I am in. I made a soup the other day that called for bone-in, skin-one thighs. It them called for removing the skin and rendering the fat out to make crispy skin. Chopped it up and used it as a topping.
I think i could use that method here. I could use the rendered fat for the croutons and add the crispy skins in the wrap too.
Totally. That's where I started too. But the 20-min stovetop cook time and splatter was like ... not for a wrap! I'm already getting yelled at enough

You crack me up Carla! But I will stand by the rotisserie chicken from the right place. Those are so flippin good I have a hard time not eating them as I pick them. To each his own. Our local store does an amazing, flavorful, juicy rotisserie chicken so I'm happy with that. Still love your show though, especially your pasta videos! That being said, this recipe is brilliant and i WILL be trying it (minus the whole anchovy filets lol)! Tysm! God bless❤❤❤

omg Wolfnights! I spent a summer living in NYC during my college years and went to their lower east side location all the time. the wraps were killer.
I don't know if I'll ever make this wrap, but I do know that I am definitely going to make those croutons.
Reminds me a bit of the Turkish Pizza we used to have at the Amsterdam Plage years ago. Some of the ingredients differ, of course, but substitute a pita for the tortilla, use some more Middle Eastern fillings and you're halfway there.
