I love that you kinda go against the "common knowledge" and show that it can be ok to do so - it'll still work out! Also, I've been cooking from "That Sounds So Good," and the sausage and beans and greens soup is now in my top 5 fave soups! If you didn't know, it actually freezes perfectly, so us singletons can make it, put it in individual serving containers, and freeze it for lunches for at least a month. I ate it all within a month, so i can't say beyond that, but with good containers and a good freezer, you could probably go to at least 3 months.

You dont really taste the cheddar, it just adds a bit of savory and sour qualities to the crust.
