Exactly! I do like a solid omelette, I usually finely grate in Gruyere cheese into the raw eggs with a good dash of black truffle oil, then season with salt and pepper and cook. I find mixing the Gruyere cheese in with the truffle oil before cooking the omelette stops the cheese from sticking to my uncoated/seasoned stainless steel pan.
Love the vids helping me be a better cook.

Nice classic french omelet! At the hotel restaurant where i work i add all the toppings in the pan, then the egg. Fold it in a half moon shape and add cheese if you like.

Excellent. Your channel is helping me get through my first fine dining gig. We make omelletes just like this. In America we have Omelet too which is way different, so I never made it this way.

I found Fallow from a mcdonalds pov video and thank god i did because this has supplied me with entertainment and knowledge for a good few weeks.
Have watched quite a number of omelette videos. For me, this is the best one and it worked well.
Way too much butter for me I don’t want to gain 40lbs when eating eggs personally.

Jaques Pepin's omlette video still yet to be surpassed after all these years, but this way is something anyone can do first try which is nice.

I find this method the most useful for french omlettes, but Jaques Pepin's method the best for country style ones.

good luck i'm 25 have been cooking for years, can bake bread from scratch, and still haven't made an omelette that didn't turn into scrambled eggs

@fallowlondon can’t beat a nice quick tasty omelette, I love to add some gently fried mushrooms spring onion or chives with thyme and oregano, (and a generous savoury sprinkling of flavoursome med/strong grated cheddar or your favourite cheese) into the middle before folding the omelette over to melt the cheese into a gooey mess prior to serving, absolutely divine and very simple comfort food, served with some lovely soft fresh buttered bread to mop up the delicious savoury decadent juices, topped off with a drizzle of creamy fresh mayo and cracked black pepper to complete the flavour combination and dressing of the dish 😉😋 nom nom, there’s something really magical about the mushroom and oregano especially that works with the egg 😎
And just finish with a little...........creme fraiche 😂

I like my omelette like this not runny cooked properly yet not overdone perfect
I usually add a 1/4 cup of half and half or third of a cup of coffeemate original creamer right in the mixing. As its cooking on low I go around and push the cooked in and let the softer drift to the edges. Once it's flipped and smooth, I add the cheese and sausage depending on what the diner wants. Flip it, season it and serve it. Works nice. Some restaurants let it go too long and it becomes browner and harder.

Lately I have started making eggs for my partner, as I don't eat them. Once the omelette has formed and off the heat, would grated parmigiano reggiano instead of salt be a good choice?

You, I made an omelet this morning (no garnish nor cheese filling). I added some milk to the egg mixture and only pepper and turned it to a style that combines both the french omelet and country omelet.

I have never been happy w/my scrambled eggs much less any attempt I made at omelettes, but I see from watching this video that I’ve been rushing the cooking & need to slow down some. I don’t like any moistness in my eggs so I’ve been trying to flip them before they’re done so they can cook on both side & then fold them. I’ll just take my time & see if they’ll cook all the way thru from one side. Thanks!

I am by no means a cook of any sort. I have recently begun to cook more often out of necessity alone. I've learned that many foods are best cooked slowly. I used to cook eggs like I was racing the clock. But now, i get that 5 or 5 1/2 minute target on just between medium and medium high in a oneida thick bottomed small pan. i use about the same amount of butter, and i flip my omelette. i will try cooking it longer on the first side and not flipping it to see what happens, but i was surprised that my general method here was so similar to yours!

HAHA, I was just thinking the same thing. While I am sure it tastes great (it better with that much butter), that is DEFINITLEY not something you want to eat more than once a while if you value healthy eating.
While i do love and respect this type of omelette....a fast and hot omelette on a flat top still is delicious.

I was supposed to have pork chops tonight but after seeing this I *_had_* to change it to 2 three-egg omelets with cheese!
Superb omlette.. I made this request two days ago highlighting how watching alot of china restaurants on UA-cam and how they do there omelette is similar with no colour.. but they put it on a mound of rice and slit it and it opens up infront of the customer over the mound revealing the moist runnier part of the omelette. Cannot stand an omelette with burnt butter, even worse with oil. YUK!

I prefer the 15 minute ultra low heat French omelet that with constant stirring once the eggs begin to form, turns into a great custard. Need 4 eggs because most of the water will evaporate and the eggs shrink to a few tablespoons. Utter delight
