That's tiny amount of chili flakes, "a touch" is appropriate. you're just too white. And that's also like a tea spoon of olive oil, I know this because I always measure my oil, it might looks more than a tea spoon but it's not.

Ramsay is at his absolute best when he's teaching. No screaming, no idiot sandwiches, just a man and his craft. And I'm glad that Hexclad, through their partnership with him, continues to showcase that side of him. We've seen plenty of the tyrant. This is the mentor, the master.

What I love about Ramsay's recipes for home cooks is that he provides advice that really elevates your cooking such as taking the pan off and on the fire to control the heat for scrambled eggs in order to get that fluffy texture. With the amount of so called celebrity chefs on youtube you would think that it's easy to find simple recipes that are easy to cook at home and that make your cooking look, smell and taste great. It's not. Most are entertainers and when you try their recipes, most are only OK. Ramsay is a 3 Michelin star chef who knows how to make entertaining videos that teaches simple but delicious home cooking that can be copied by almost everyone. That is rare.

I have been making these for a couple of weeks now and it is spot on and incredibly easy. Delicious! I have been overcooking my scrambled eggs for decades. THIS is the way you do it. As he says, the secret is on and off the heat and continuous stirring. Hint, you can use sour cream if you don't have creme fresh.
