    Did you suggest somewhere that you could leave the gluten out and it would still come out OK? If not, what is the negative effect of leaving out the gluten?

    So this is my first attempt at bread making. I did not have vital gluten, nor do I know what that is. So I quickly googled substitutions and put an egg in the wet mix.
    I didn’t rise as high as two inches above the pan, but it did rise. Then I accidentally hit the top of one with the edge of the other pan and it flattened. So I covered them again for another 1/2 hour. They are in the oven now.
    Upon further reading, it appears I could have just left the “gluten” ingredient out. We shall see!!

    Wait, if you're adding white flour, is that not 100% whole wheat? I'm trying to learn how to make bread from 100% whole wheat flour. NO REFINED FLOUR. Am I in the right place?

      White whole wheat is still whole wheat. The difference between the two is the color of berry but both are still high protein whole wheat flour. Hope that helps.

      css500elite 50% of the bread is 100% whole wheat.

      Hard white wheat is whole wheat. The darker brown flout is from red winter wheat. There are different varieties of wheat berries ground into flour. You could argue that the vital wheat gluten is not 100%, but otherwise, these are 100% whole wheat flours.

    Very complicated procedure! I use a bread machine that cost me less than $50. It works well. A mixer such as shown costs well over one hundred dollars. They, like many other kitchenware, are much overpriced - for a motor, a bowl and stand, and a stirrer!

    if you add a load of wheat gluten, it is not a hundred percent wholemeal

    What is white wheat flour?

      It is whole wheat flour ground from white wheat berries instead of red wheat berries. White wheta flour has less of a strong wheat flavor and i usually lower in protein allowing for a more tender texture in baked goods you make with it. In contrast to white flour it contains all the fiber because it contains the whole wheat berry.

    Looks to be too good to believe that 100% whole-wheat flour can have such fluffiness.
    I request the same recipe be repeated and shown using 100% whole-wheat flour (Self/Home-ground).
    I am stressing this because Store-bought 100% whole-wheat flour contain lesser amount of bran than Self/Home-ground flour.

      arba eden I think if you substitute the butter with olive oil the bread will taste even better!
