These rolls are so light and moist, you won’t believe they're made with 100% whole wheat. But they are--just regular old whole wheat flour. It’s the eggs and butter and honey that make these a so-good-you-can’t-eat-just-one type of roll. Out of the oven, they are light and fluffy and almost don’t need any butter - but go ahead anyway.
This has been one of the most popular recipes on An Oregon Cottage blog for many years. But if you treat the dough like regular bread dough, your rolls will not turn out. This dough is much more sticky and can fool you into adding too much flour

I just made these for today's dinner. I cut the recipe in half (but used the same amount of butter, honey, and 2 eggs). This made a total of 15 rolls. These were absolutely delicious and much softer than any rolls I've ever had (store bought or homemade). I had to stop myself from eating the whole pan. Thank you so much for this recipe!

Unbelievable....perfect rolls with a perfect recipe especially the hint about using butter and salt. 24 of them ......and they got over one and a half day between 3 children. I must add that I don't have a kitchen aid and used my hands for mixing and here your one finger test to check the dough was very helpful....thanx once again.

I made this last night and it is the best recipe I have ever made for whole wheat bread without having to add white flour.!!! The women on Hutterite colonies in southern Alberta are known for their delicious breads and buns, I was able to get a recipe but it made 45 loaves of bread, your recipe has the "secret" ingredients of milk, eggs and butter (they did use a butter and chicken fat combination). I can't wait to try your recipe out. On your .com website you commented that you need new bread pans, the secret to making really tasty bread is to use well aged bread pans and the darker they get the better the bread tastes. This was advice given to me by a little old lady, Mrs. Townsend, who baked 10 loaves of bread a week for her large family. Thank you so much for the video.

My husband and I are vegan. I adapted the recipe by replacing the eggs with flax eggs, used vegan margerine, and almond milk with 1 tblsp of ACV to make buttermilk. The rolls came out soft and delicious. Thank you for a great recipe.

Just tried these tonight and they turned out awesome!! Thank you for sharing. I will say though that mine did require a little more floor than the extra 2 tbsp. Everytime I checked with my finger it would stick to my finger and I was barely touching it. I think I added about 5 maybe 6 tbsp. I was using a heritage unbleached bread flour, so maybe that was why. I also didn't have to let rise quite as long as suggested either which turned out nice for my time schedule today.
Yes, using unbleached flour instead of whole wheat will make a difference. Also just how we measure a bit more water each time, requiring more flour. That's why the finger test is best!
AnOregonCottage I think my flour is still whole wheat since it's a heritage variety, even though it's unbleached. They looked whole wheat too. 😊 I'm just grateful to find your video and plan to experiment with some other grains I have that I mill myself!

Will this recipe work if you grind your own wheat berries? I’m just new at doing that. And I have heard that you have to use extra flour because it maybe heavier than what your using .If you have any information about making rolls with your own ground flour please enlighten me.
I think you have to use less flour if it's home ground - or add more water? I'm not sure, as I don't do that. I think there are places that give details on adjusting bread recipes to home ground flour.

I've never done it, but think it should be okay.There are lots of roll recipes that use white flour, though, if you just want to try one of them.

I love your recipe but I still have a question. Your recipe said 1/2 cup of warm water to dissolve the yeast. In your video however, it looks like you have more than 1/2 cup of warm water in your measuring cup. So how much warm water do we need to dissolve the yeast exactly? Can this dough be made ahead of time and stored somehow? I'm new to bread baking so I'm clueless
I don't know if it can be frozen as dough, but what I've done with success is to make the full recipe ahead and then freeze the rolls in ziplock baggies like I mention in the video.
I would love to make these rolls but only have the classic kitchenaid mixer and don't want to ruin my motor. How can I still make these rolls ? Also, can these be made by hand for those who don't have money to buy this kind of mixer?
I made these for many years with a classic mixer and I don't think this recipe is too hard for the motor - I was making a larger batch of whole wheat bread weekly and that's what contributed to the burn-out of my first mixer (but after almost 15 years). And I know some readers have left comments on my blog that they've made it by hand, though I haven't. Since it's a sticky dough, that would be the only thing to watch for - adding too much flour will ruin the soft texture.

I haven't tried these rolls any other way, so can't really say. You can experiment with the flax seed replacement and see if that will work.

+Kim Montes I do mention that in the video - I use either instant or active dry the same way and always just follow the recipe with proofing the yeast. I don't want to mess it perfection. :)

It usually means too much flour was added - try adding less and only use enough to coat your fingers to shape them. The lightly floured towel helps.

I have never done that, so I can't say if it would turn out. You could try with a replacement, but I'm sure your results will vary.
I have only a hand mixer, so I assume that the traditional method of hand kneading won't produce a light, soft product?
It might, you'd just have to deal with the wet dough and not add too much flour when hand kneading - that's a death knell to these rolls.

I am terrible at bread making but I decided to try these rolls ONLY because I had all the ingredients, including the correct dish. I used organic, sprouted whole wheat flour. The only exception was, my butter was frozen so I melted it, then added the other ingredients as per your instructions. I visited your website too and love it.
I ate three, hot rolls in one sitting. Now, here I am rubbing my tummy with a grin and much pride.

Made this today. The dough rose so high - and they are very soft and fluffy. The only thing is, they didn't quite taste sweet enough? Maybe just my taste? I used King Arthur whole wheat flour - and a nice honey that I bought at a roadside stand in Tennessee. But it just was a little bit flavorless? Beautiful dough though. Fluffy rolls - - picture perfect.

The video calls for one cup of warm water, but your recipe link calls for only 1/2 cup water, which is what I used. Since I had to add quite a bit of water to loosen it up for kneading, I think your video is correct and the recipe link needs to be corrected. With that said, I have been on a quest for years to find a truly soft 100% whole wheat bread recipe, but to my disappointment they always produce dense, rough, crumbly texture with no flavor or else they call for a blend of white and wheat flour :{ But when I found your great recipe I struck gold ... Eureka!!! Last night, I made the most fabulous 100% whole wheat bread we've ever tasted. I just can't thank you enough. This bread is so scrumptious. fresh out of the oven, slathered in butter and dripping with oooey-goooey honey!

It is a great thing to finally eat a light and soft 100% WW bread. :) However, the 1/2 cup measurement is correct and that's how I make the rolls all the time. I made a mistake in the video (which I thought we had corrected with a note, but I don't see it…) - talking and cooking at the same time is hard, lol.

I remember hearing that flour to liquid ratio can sometimes vary,due to the hardness of similar flours. I used Gold Medal Whole Wheat, but this time I'll use King Arthur's Whole Wheat with 1/2 c water. Thanks for your reply!

Yes, you want to knead just a bit - too much and it just absorbs the flour which makes you need more flour and more flour = tough rolls.

I'm not familiar with the differences in the WW flour in India - it may work fine! I've never tried substituting the eggs - it's one of the ways this is a soft recipe. :)

If you don't have a mixer like I show, lots of people have told me they've mixed by hand. Still knead the dough only a couple minutes, being very careful not to add too much flour (it will be sticky - I would use a pastry cloth or tea towel). Good luck!
