"Dave's Killer Bread" Copycat Recipe

  • I am cutting out most of the processed foods my family has been eating for years and now I am making foods homemade and with love. I have never eaten Daves Killer Bread, as it is too expensive for me, but this bread is tasty and nutritious.
    Dave's Killer Bread Copycat Recipe
    2 1/8 cup warm water
    1 teaspoon honey
    2 Tablespoons yeast
    **mix and proof for 5 minutes
    2 Tablespoons oil
    3 Tablespoons molasses
    3 Tablespoons honey
    1 Tablespoon salt
    1/2 cup vital wheat gluten
    3 cups white whole wheat (can use red whole wheat-I used 4 cups)
    **mix to combine
    1/4 cup each: oatmeal, flax seed, sunflower seeds, quinoa (I have tried adding a bit more and it never seems as good to me)
    **mix again for about 1 minute
    1 1/2-2 cups A.P or Bread flour (I only used 1 cup) -
    **Add just enough to get the correct dough texture.
    **Now knead in a mixer for 8 minutes.
    **Rest, covered in a lightly oiled bowl for 45 minutes or until dough has doubled
    **Divide dough into two. Place in 8x4 pans for best results
    **Let rise until 1" above the rim of the pan, about 45-60 minutes
    **Bake at 400ºF 15 min. uncovered and 15 minutes covered
    **Temperature should be above 180ºF
    **Rest on cooling rack for at least 1 hour before slicing.

    WOW...lots of ingredients. Wonder if 9 x 5 tins would work? Seems
    like a lot of "stuff" for 8 x 4 tins? I like the recipe. Sounds healthy
    with Minor changes I will make. Looking forward to Baking it. Thank you for sharing.

      I have made this bread for several years and it is always a hit with my family. I just like using a smaller bread pan as the loaf will be taller and slices similar to store bought slices

      @@soniadooley57 you could just skip adding. It will just take a bit longer to rise

    Skip the vital wheat gluten! It is so highly processed!!! All you have to do is not add too much flour and knead for about twice as long as you think you have to. Your bread will rises even better than it does when adding the VWG. I’ve had many loaves that have risen almost too much! I would also do 100% fresh ground flour as well.     I have not tried the brand name version either, but made a similar loaf last week. Store bought bread is not good anymore so this will be my go to. I used my bread machine, but will not on my next try as it needs to rise a bit longer, still, it is good bread. Thank you for the video.
    Update: I made again, but without the bread machine. It was much better.
