Not sure if you know this yet, but the a7siii can actually create proxies in camera so you don't have to let your computer sit and create them from scratch. It also gives you the option of creating 720p or 1080p proxy files. The only thing to keep in mind is the 720p proxies are 8bit color and the 1080p proxies are 10 bit. This is important because if you do color grading to the 8bit proxy files and then turn the proxies off to render, you will notice a color shift, because your color grading or luts will look different on 10 bit footage vs 8 bit footage.

The A6500, as pointed out, will color match what the A7siii can do, retails for easily under $1000, and has been replaced by the A6600 that can be purchased for slightly over $1100. Since the A6600 is an APSC camera the lenses are 1/2 the cost, size and weight of full frame lenses. I can't recommend enough comparing the actual real-world quality of the APSC Sony a6600 compared to the Sony 7siii prior to springing for such an expensive camera (7siii retails for three times the cost of the A6600 ($3500 vs $1100)
