- Опубліковано 6 вер 2024
- This easy recipe shows you how to make the best potato crusted vegan quiche in the world! Or at least I think so :-) It has an egg texture and delicious creamy mouth feel.
It's simple to customize and add whatever fillings you like eg. steamed broccoli, mushrooms, fried onions etc
Personally I love the combination of spinach, artichokes and pumpkin in this eggless quiche recipe. The flavors combine so well and taste amazing!
You can print the recipe at: www.cookingwith...
Ingredients:
Potato Crust
2 clean organic potatoes sliced into 1mm slices
Vegan Quiche Filling
1 tbs nutritional yeast
1/3 cup chick pea flour (Besan flour)
1/4 cup cashews
1/2 cup oats
1 cup dairy free milk (soy, almond, oat, rice etc)
3 tbs lemon juice
2 - 4 garlic cloves
1 tsp celtic sea salt + 1/2 tsp black Himalayan salt (if you don't have this, then just use another 1/2 tsp of celtic sea salt)
1 tsp Dijon mustard
....................................
Then pulse through:
280 drained artichokes (Marinated in salt brine)
2 cups of baby spinach leaves
2 cups steamed pumpkin (or filling of your choice - eg. mushrooms, onions, broccoli, sweet potato etc)
Sprinkle with nutmeg and freshly ground black pepper
Enjoy xx

I have lost over 50 pounds and reversed heart issues. A plant based lifestyle has totally changed my life and brought back my health, energy and vitality! The journey all started when I watched the movie Forks Over Knives - to get your own copy of this life changing dvd, visit my affiliate page on Amazon if interested at amzn.to/1MgHoDy And I also read The China Study: amzn.to/1MgHsDt
Grrrrrrlllll, I made this yesterday with mushrooms, spinach and artichokes. Oh my goodness gracious. I can't stop eating it, it was supposed to last me a week for meal prep but I can't stop eating it😭😭😭. Making another one tonight. Btw I accidentally left it in the oven for 30minutes. Doesn't matter still tastes great
So glad you like it as much as I do :-)
I'm doing the same mushroom, spinach and artichoke. It's in the oven now and I can't wait to try it!!
I tried this with 1/3 of a cup soaked (overnight) sunflower seeds. I used broccoli, zucchini, and spinach. It also kept it's shape once it cooled. I've never been a fan of any kind of quiche, but I really like this one. The possibilities are endless. Thank you!
I love sunflower seeds, so to use it in this is a fabulous idea. So glad you gave it a go and that you like it :-) x
CookingWithPlants
oh nice, did you use seeds because of a nut allergy? I can't use the cashews so I was trying to imagine a sub for them...
I'm going for sunflower seeds bc they're cheaper. I'm glad you commented that it works! Thank you
Constant Wonder I finally made this fantastic quiche and I actually added chickpeas instead of the cashews (nut allergy in my house) and it turned out beautifully. The vegetables I used were spinach and some lightly fried up onions and broccoli. I blended the spinach with the rest but left the onions and broccoli bits whole. The green color was very lovely! I ate it over the course of two days and even as a quick snack if I was in a rush. It tasted good cold out of the fridge as well!
I have been a vegetarian for 40 years and vegan for a lot of those. I have recently wondered about a vegan quiche and viola, here you are.
I am enjoying your recipes and can't wait to try them.
Thank you
You have lovely presence and your sweetness comes through loud and clear. Your husband is a lucky man. You can tell him I said so.
Don MacLeod
Thats so sweet :)
Much respect to you for over 40 years of being Plant Based
I made this for a friend's birthday potluck using a mix of button/ cremini mushrooms that I sauteed with roasted garlic. I topped it with a ground walnut and nutritional yeast mixture to make a crust. It came out absolutely amazing thanks so much for the inspiration!
Great variation
Sound fancy with mishrooms and roasted garlic
I honestly made this quiche so many times already and with different veggie fillings and I can never tell which one was the best. The one that is in the oven at the moment has carrots, green peas, corn, pumpkin, onions, garlic. I put some cumin in as well :D Thank you for the inspiration, Anja!
My goodness, you are a master chef :-) That quiche looks absolutely delectable...This is going to be dinner soon, I have just the right fresh French artichokes for the job :-) Thanks for sharing
Thank you :-) Let me know how you like it. It tastes amazing!!!
Anja, this is one of the most delicious meals I've ever tried, thank you! I've used onions, , greated carrot, garlic, chilli pepper, baked zucchini and asparagus. It came out amazing!
+H Ivanova S So glad you like this recipe as much as I do. It is one of my all time favorite go to meals :-)
Very delicious! I had to substitute almond paste (from almond milk leftovers) for the crust, and I used 1 TBS flax seed soaked in 3 TBS water instead of the nutritional yeast. I'm so grateful for this recipe! I have so many allergies that I seldom get to eat something that tastes this good!
+iamfree Fantastic!
I made this the other day and it went down so well, all of my family loved it! Fantastic recipe
Made 3 of these while on holiday with my cousin cos we loved them so much! 1.Broccoli, spinach and tomatoes. 2.Roast peppers, roast potatoes and tomatoes. 2.Aubergine, green beans and broccoli. First 2 were the best. Would defy anyone to know it wasn't the usual eggy quiche. Thank you. Love your recipes, so accessible.
artyj135 That's awesome! I make it all the time to. It is an easy go to recipe and everyone always loves it :-) Glad you like it as much as I do :-)
Hi I tried this recipe for the first time today. I doubled up on the recipe as I made a much larger one. The flavours were lovely especially with the pumpkin and grated nutmeg on top. My only problem with this recipe is the texture it’s not very firm. I would have to say almost doughy. I tried cooking for extra 35 minutes which helped a bit, but still not perfect. Is this the texture it’s meant to be?
Absolutely delicious! The perfect vegan meal to bring to Easter brunch. I used caramelized onions and mushrooms instead of butternut squash and the flavor combination with the spinach and artichoke was fantastic! The potato crust was genius! Even the more "anti-vegan" relatives were commenting on how beautiful the quiche looked and smelled. This is the first of many "Cooking with Plants" recipes I intend to try!
Side note: Thank you for providing metric and imperial measurements in your recipes. I am American and live up to the stereotype of being inept at unit conversions. Greetings from Chicago! :)
What's an amazing comment. Bravo to you for being so positive and supportive. Your comment makes me definitely want to make this soon.
Thank you!
Nom! This looks freaking incredible. I love your combo of ingredients; so many of my faves like pumpkin and potatoes
Thank you :-) It tastes fantasmagorical!!!! Let me know if you make it and how it turns out :-)
Do you think this recipe would work substituting the white potatoes for sweet potatoes?
I'm incredibly inspired by your recipes. Thanks so much for what you do and for sharing your knowledge with us. I began my Vegan journey about 2 months ago after struggling for years with chronic inflammation in my body, leaky gut, chronic pain, and and being 50lbs overweight despite eating no grains or sugars...but still eating dairy and meat. 2 months in and my body has drastically changed. I have TONS more energy firstly and I don't have the urge to eat constantly like I did before. I eat three plentiful whole foods plant based meals until I'm full and I feel great. I'm so excited for the next year as I hope to lose the 50lbs I gained in my early 30's and am excited to see what my 39th year feels like with this new lifestyle. Thanks to all the Vegan youtubers out there, I'm never at a loss for what to cook up and I'm having a blast in the kitchen.
Forget best vegan quiche ever, its the best quiche I have ever had. Omg it came out amazing. Thanks for sharing.
It really is!
I just love your channel! I really enjoy watching you explain the recipes and suggesting alternatives. I like that the recipes are dishes that I would actually try. Thanks so much for your efforts.
I'm so glad you love the channel and watching my recipes. Remember too that you can print all of the recipes off my website at www.cookingwithplants.com
Hi Maya, it's an amazing recipe, thank you! Just a tip, try adding spring onions to the recipe, it's mind blowing!
+Beatrice Oppong Glad you like the recipe... my name is Anja though lol :-) x
I've been making your recipes for years and they have become classics in my household, thanks so much for sharing
Anja, your site is a treasure trove! My husband and I are both 70 and are in reasonably good health but each had higher cholesterol readings than either of our doctors wanted to see so we are turning to a plant-based diet. I particularly appreciate your videos which demystify the preparation of vegan recipes in such a clear, straightforward way and your 30 day series is an inspiration to me. (We had the Potato Crusted Quiche for dinner with friends last night--delicious!) Because I come from a long history of food addiction (I've never been obese but for my height, I've weighed as much as 25 lbs. more than what was recommended), I also track everything I eat. Have you any suggestions on how to calculate the nutritional information for your recipes, or better yet, do you have any plans to include that in the future? With thanks and warm regards, Sarah
+Sarah Satterlee You can use www.cronometer.com to track nutrition info. I don't track any more... I just eat a variety of whole plant based foods and get an annual blood test done to check that all is on track :-) x
I made this today with kale instead of spinach and no artichokes. I added caramelized onion, sauteed mushrooms and broccoli instead of pumpkin, and it came out very good! I reduced the salt to just 1 tsp also. Very good dish!!! I think I will invest in a mandolin slicer since I liked this dish so much, and the idea of potatoes being the crust!!!
Fantastic! So glad you like the recipe and I love your improvisations.
I made this and its soooooooooooooooooooooooo good. I did not have the chickpea flour so I used a good quality vegan egg replacer and it turned out wonderful. Boy oh boy the 2nd day I served this it was much yummier. This is a keeper for sure !!!Thank you !!!
So glad you like it as much as I do :-)
This is perfect, no oil, no vegan cheeses...love it!
Did this in my cooking last night and my students loved it! Showed them your video, and although they can't understand English they said the video was easy to follow. I used baked cauliflower instead of pumpkin. Delicious!
Awesome! It might turn into sushi quiche lol It's also great with broccoli and kale... and pretty much anything else :-)
I'm sure it is. Will be experimenting with other veggies for sure!
I am going to the veggie plot tomorrow to harvest the first pumpkins. I had no idea what to do with them. Now I know :-) Thanks for coming up with these great recipes!!
Fantastic... can you send some to Australia :-) Let me know how you go with the recipe xx
I love it when you do the tasting at the end :) You are so adorable and make me smile!!! Thank you for your recipes. My in-laws are visiting us soon and I am trying come up with menus that they will enjoy. You are a life-saver!
Thank you :-) I'm glad you enjoy my recipes... and I hope your in-laws like them too!!!
Definitely going to try this one! Looks soo good! And i'm glad you put the recipe again underneath the video.
Thanks!
Inge van den Broek You can also print it off my website at www.cookingwithplants.com
Just perfect! Nutmeg goes well with pumpkin. As it is only days away from our Winter in NSW I'm so glad I found your recipe. I will let you know how mine goes. Thank you 👏.
Loved this! Added a vegan hollandaise sauce and some peas. Ate it for 4 days, sometimes dinner, sometimes lunch. Thank you!
I love the older videos simple recipes and you look relaxed.
I would add raw, whole or roughly chopped spinach and raw pumpkin cubes as well, as the both will easily be cooked in 25 mins. But thanks for the vegan take on a quiche, will definitely try it.
Ive made this with the pumpkin and I LOVED it! Really tasty and I served it to a non vegan husband who loved it too. Thanks!
+Farmword So glad you both like it :-)
This looks HEAVENLY! Can't wait to try it this weekend. Thank you SO much, Anja!! Love & Respect.... Deborah
You are so welcome!
Okay, Im gonna have to make this too! I love your recipes. Today I made the orange cheese - nut free, oil free, dairy free. I love it! I also made the black bean brownies. Wow! So good and I also made the mashed potatoes, which I love, and I love to put that cheese on top of those potatoes. I wish that we were neighbors. Thank you so much!
Cool, that's great that you are trying the recipes and loving them as much as I do :-) It would be awesome if we were neighbors... we could take turns cooking for each other.
How do you prepare the orange cheese? Thanks.
Calene Chew??? Do you mean the pumpkin pieces?
I made this tonight the filling itself is so yummy good I can't wait until it bakes thoroughly through
So glad you like the recipe as much as I do :-)
Wow your cooking looks delicious . I'm sad I have only just discovered your UA-cam channel. Its March 2021 now and I'm looking for vegan dishes . Im a woman writing on my husbands account . My husband was diagnosed with cancer not too long ago and I want to radically change his diet . Im looking for whole food plant based meals to prepare for him . Its been so difficult because a lot of vegan dishes look complicated in addition to incorporating a ton of ingredients I have never heard of let alone know to buy . Your meals look simple and stress free to prepare as well as delicious looking . Thank you so much , all i need to do is buy a blender for all your yummy sauces to make . Many many thanks to you .
You are an actual genius 🙊💖
Hhnnggg 😻
Really want to make this one! WOW!
Love potato crust idea!
I made this for my family tonight who all enjoyed it :) Thanks for sharing this recipe :)
Awesome! So glad you all liked it :-)
Looks good .. I might try the potatoes next time. I usually use a 'rice-a-roni' base which really has a lot of flavor the way I make it.
Oh Anja its not cooked yet but even the mixture is delicious! I used apple cider vinegar cos I didn't have lemons & topped it with brocolli, sweet corn and bell peppers(capsicums), basil & smoked paprika. It wont cook fast enough!!!😊 Good Friday fare!
This looks fantastic .... it's going on my must try list :) I think I will add Mushrooms and Leeks instead of the pumpkin ... Thank you so much for your awesome recipes .... I made the smoke paprika Cheese the other day and the Vegan Cheese today absolutely wonderful ... My dear Dad who is nearly 90 asked me today if he can have some more of the paprika cheese :)
Oh, how sweet... glad you and your dad like it :-)
Oh yes! You just made a potato crust! Yummmmmy!!
Looks delicious. Will be making this. Thank you.
Hope you enjoy
Potato crust? Genius! Would have liked a close-up of the sliced piece.
This is so yum looking! Great idea on your part and thanks for sharing.
Thank you... it tastes just like egg quiche but without the plant based ingredients :v
CookingWithPlants It looks so tasty and filling. It would make a great meal anytime of the day. :-)
Gotta try it! :-)
***** Let me know how you go if make it :-)
CookingWithPlants you bet, i sure will. :-)
This looks divine! We love veganizing comfort food, so we will be adding some vegan ham and maybe some vegan bacon. Thank you for the recipe. I am planning to make it for the holidays! So excited to try this!
Wondering if you could do a dessert version of this one. I was thinking with a date/walnut crust...filling of dates and nuts blended, add fruit on top, make a coconut cream topping.
You are killing me! No wait you are helping save my life,(very dumb joke!) I once did a shredded potato crust from a vegetarian cook book but this looks heaps easier. The spinach artichoke is the part that sounds so off the charts yummy. I love how you do your taste tests and how much you love what you cook. I also want to compliment you on your blouse, it is so pretty and looks awesome on you. =)
+m.s. mary Thank you for your lovely feedback. Glad you like the recipes as much as I do :-) x
what a great idea with the potato base, I will definetly give that one a try
I cooked this I the morning. I had it for breakfast lunch dinner, and then finished off the rest as a late-night snack. Literally had this water and nothing else
That looks absolutely gorgeous. What a beautiful recipe. Thank you so much !
Thank you so much :-)
@@cookingwithplants .. The second time you put it in the oven, you said 200 degrees .. is that Celcius? or Fahrenheit?
I really need to write this up onto a recipe card because I keep coming back to it :) it's an awesome recipe
Dana Marie I'll include it in my cookbook that I'm working on :-)
awesome! :D
Omg...I tried this today it was uuuber good thank you so much you're a genius!
Helin Bekir Glad you liked it Helin :-)
Loved the potato crust but my filling turned out very pasty. I used the artichokes and spinach. Did I blend them too much? I'll yet it again but next time add turmeric. Red pepper, onion powder and an additional tbsp of nutritional yeast to the blender.
Genius! I have made this twice with an already made vegan crust. Soooooo good. Making it again 2nite bute I'll try your crust next time. Kudos!
So glad you like it as much as I do :-)
Love your top!
This is an amazing idea. I have not eaten quiche since starting plant based diet. This is way healthier than any quiche out there. I love the use of potatoes for the base. Would it be possible to make pies using potato instead of pastry I wonder. Thanks
Thanks for sharing the recipe, potatoes make going vegan so easy. I'm looking forward to trying this!
This quiche looked like it turned out very soft, like an eggy texture. Is that how it turned out! I've made several things using besan and the only thing that turned out with the eggy texture was the scrambled eggs I made. With everything else, I really had to cut into it with a fork, if I didn't have a knife handy, and a lot of times, I couldn't cut the food completely apart, and had to use my fingers to pull the food apart, when cutting into the food with a fork didn't cut the food apart.
It has the texture of quiche and as it cools a bit it firms nicely.
Very healthy and tasty same time. Thank you.
Looks absolutely delicious. I will definitely give it a try. Love that wood trivet/cutting board.
That looks beautiful!
I'm still discovering your videos. I have to try this. I've been imagining a dish with a potato crust...and here it is. This looks awesome. I can't have oats so, I'm going to try buckwheat. Should work. Thanks for posting.
I can't wait to try this! My grandkids miss an easy recipe I used for chicken pot pie by using bisquick and chicken Campbell soup. Can you prepare a pot pie recipe? My grandchildren and I would appreciate it! Thank you so much! I love your videos and looking forward to trying your many recipes!
+Vivian Bernal I will add it to my to do list but not sure if and when I will get to it. x
Thank you!
This sounds so tasty, but I wasn't quite happy with my result. I think my mistake was to use too much vegetables (wanted to use up what I had), so there was overall too much water in it to get the consistence perfect. And maybe a bit too much lemon, I'll try with less next time :) Did you use fresh lemon juice or bottled?
+Leonie Reichart Mine turns out perfect every time I make it (I make it a lot). Yes, don't overload with vegetables as this makes the consistency unstable. I use fresh lemon juice.
So beautiful. Looks absolutely delicious
Thank you :-)
Thanks so much for your diligent work, I love all your recipes,I will try them all!
+Benene Lane Thank you :-) x
You have great recipes! Thank you for sharing them here! I can't wait to try this!
***** Glad you like them :-) Enjoy!!!
Wish I could lay potato slices down that fast
do you make a lentil loaf? I haven't seen one amongst your recipes, thanks x
Wow!! This looks like a real quiche with eggs and cream! Well done =).
I have to try this and serve it to my nonvegan friends to impress them =D.
Thank you... it so delicious!!! Hope your non-vegan friends will love it ;-)
I must have missed something. The potato crust cooks at 400 for 10 mins. (200 celsius). Then you cook the whole thing according to you at 200 for 30 mins. I assumed fahrenheit even though that seemed low. An hour later I think it's done.
Tea tonight for sure 👌
Enjoy!
This is one of my favourite things to make and to eat! Thank you!
Ooohhh this looks fantastically yummy!!! Your so relaxing as well, I hope I don't fall asleep following along to this vid, it will be like getting a massage an cooking at the same time!!! Thank you so much!! 😊
Dani Warren Glad you like it
Really yummy, thank you, Love that you are so passionate about cooking, and really enjoy what you make.
darla rosen thanks
darla rosen So do I :-)
Taste-wise, can you suggest a substitute for the artichoke hearts ???
Oh looks yummy, will try of course,Thks dear
+Rosy Ittoo Enjoy!
+CookingWithPlants by
This looks soooo good! Can't wait to try it! Thanks for the recipe....
It's one of my go to recipes :-) I love it.
This really looks fantastic!
I'm salivating how do you think of things like this it's unbelievably amazing!
I add the spices and other things I don't really need ground (nut yeast, flour, mustard etc) after i blend my cashews with whatever liquid is needed. That way I don't loose the spices splattered all in the blender...makes sense?
Hi Anja, going to try this recipe this weekend! I was wondering if I should boil the potatoes before cutting them up or should they be raw? Thanks!
+Valeriya Zelenyak No, use them raw.
Super duper recipe. Thank you! 🙏
WOW! can't wait to make this
smilechynwa Enjoy
Hi, just saw this today and am gonna try crust using sweet potatoes. Any suggestions for us coeliacs that can't tolerate oats? Thanks!
+Jacstarify Sweet potato will not hold and go as firm as potato. As for oats, you can use some cooked quinoa instead.
OK that's a shame but thanks for the info!
Could you include the oven temperature and baking time in the written recipe in the description?
Looks delicious!
This will be tea for tonight. Thank you for all the fantastic recipes....quick question. Can I substitute nutritional yeast or omit it completely ? Thanks again)))
If you have some miso paste maybe put some of that instead of the nutritional yeast. If not, just leave it out. It does add a bit of a cheesy flavor, but there is so little of it in this recipe that it really won't make that much of difference. Also, please keep in mind that the measurements are metric :-) Enjoy!!!
Thanks so much. Left it out and was still tasty:)
This looks great and will definitely try! One quick question... can you substitute potatoes with sweet potatoes? Thanks a lot!
Sweet potatoes would be too soft and wouldn't hold as a base. You could also use vegan puff pastry for a quick solution :-)
Thank you :)
ours is in the oven at the moment. Will tag you in IG
amazing recipe!!
This looks amazing! I can't wait to try it :) hopefully my little guy likes it and I can give you a shout out in a future video!
It's very tasty :-) Let me know how you go xx
Omgoodness this looks wonderful!
It tastes amazing
CookingWithPlants yes on my list for next week!! I've become quite addicted to your channel. You make being vegan so much fun and delicious 😋
I love your videos! Where do you get the ideas? Do you do a lot of trial and error? You're a genius 🤗
Thanks. The ideas just pop into my head :-)
Oh my goodness....I think you're so cute! I've got my Vegan Quiche in the oven as I write. I could have eaten it raw it's so delicious. Thank you, Anja!
how do u come up with these recipes ...... ? and measurements ..... it's really a quite interesting !!!
Look so yummy ! About the potato: did you think I may try to make the base whit some sweet potato ?
Sweet potato is much softer and would be tasty but would not hold together well as a base. Would taste awesome though!!!
You are the potato whisperer!
Looks great!
