Best Ever Vegan Quiche Recipe (Spinach, Artichoke & Pumpkin) - Egg & Dairy Free!!!

  • This easy recipe shows you how to make the best potato crusted vegan quiche in the world! Or at least I think so :-) It has an egg texture and delicious creamy mouth feel.
    It's simple to customize and add whatever fillings you like eg. steamed broccoli, mushrooms, fried onions etc
    Personally I love the combination of spinach, artichokes and pumpkin in this eggless quiche recipe. The flavors combine so well and taste amazing!

    Ingredients:
    Potato Crust
    2 clean organic potatoes sliced into 1mm slices
    Vegan Quiche Filling
    1 tbs nutritional yeast
    1/3 cup chick pea flour (Besan flour)
    1/4 cup cashews
    1/2 cup oats
    1 cup dairy free milk (soy, almond, oat, rice etc)
    3 tbs lemon juice
    2 - 4 garlic cloves
    1 tsp celtic sea salt + 1/2 tsp black Himalayan salt (if you don't have this, then just use another 1/2 tsp of celtic sea salt)
    1 tsp Dijon mustard
    ....................................
    Then pulse through:
    280 drained artichokes (Marinated in salt brine)
    2 cups of baby spinach leaves
    2 cups steamed pumpkin (or filling of your choice - eg. mushrooms, onions, broccoli, sweet potato etc)
    Sprinkle with nutmeg and freshly ground black pepper

    Grrrrrrlllll, I made this yesterday with mushrooms, spinach and artichokes. Oh my goodness gracious. I can't stop eating it, it was supposed to last me a week for meal prep but I can't stop eating it😭😭😭. Making another one tonight. Btw I accidentally left it in the oven for 30minutes. Doesn't matter still tastes great

    I tried this with 1/3 of a cup soaked (overnight) sunflower seeds. I used broccoli, zucchini, and spinach. It also kept it's shape once it cooled. I've never been a fan of any kind of quiche, but I really like this one. The possibilities are endless. Thank you!

      oh nice, did you use seeds because of a nut allergy? I can't use the cashews so I was trying to imagine a sub for them...

      Constant Wonder I finally made this fantastic quiche and I actually added chickpeas instead of the cashews (nut allergy in my house) and it turned out beautifully. The vegetables I used were spinach and some lightly fried up onions and broccoli. I blended the spinach with the rest but left the onions and broccoli bits whole. The green color was very lovely! I ate it over the course of two days and even as a quick snack if I was in a rush. It tasted good cold out of the fridge as well!

    I made this for a friend's birthday potluck using a mix of button/ cremini mushrooms that I sauteed with roasted garlic. I topped it with a ground walnut and nutritional yeast mixture to make a crust. It came out absolutely amazing thanks so much for the inspiration!

    I honestly made this quiche so many times already and with different veggie fillings and I can never tell which one was the best. The one that is in the oven at the moment has carrots, green peas, corn, pumpkin, onions, garlic. I put some cumin in as well :D Thank you for the inspiration, Anja!

    Very delicious! I had to substitute almond paste (from almond milk leftovers) for the crust, and I used 1 TBS flax seed soaked in 3 TBS water instead of the nutritional yeast. I'm so grateful for this recipe! I have so many allergies that I seldom get to eat something that tastes this good!

    Made 3 of these while on holiday with my cousin cos we loved them so much! 1.Broccoli, spinach and tomatoes. 2.Roast peppers, roast potatoes and tomatoes. 2.Aubergine, green beans and broccoli. First 2 were the best. Would defy anyone to know it wasn't the usual eggy quiche. Thank you. Love your recipes, so accessible.

      Hi I tried this recipe for the first time today. I doubled up on the recipe as I made a much larger one. The flavours were lovely especially with the pumpkin and grated nutmeg on top. My only problem with this recipe is the texture it’s not very firm. I would have to say almost doughy. I tried cooking for extra 35 minutes which helped a bit, but still not perfect. Is this the texture it’s meant to be?

    Absolutely delicious! The perfect vegan meal to bring to Easter brunch. I used caramelized onions and mushrooms instead of butternut squash and the flavor combination with the spinach and artichoke was fantastic! The potato crust was genius! Even the more "anti-vegan" relatives were commenting on how beautiful the quiche looked and smelled. This is the first of many "Cooking with Plants" recipes I intend to try!
    Side note: Thank you for providing metric and imperial measurements in your recipes. I am American and live up to the stereotype of being inept at unit conversions. Greetings from Chicago! :)

    I'm incredibly inspired by your recipes. Thanks so much for what you do and for sharing your knowledge with us. I began my Vegan journey about 2 months ago after struggling for years with chronic inflammation in my body, leaky gut, chronic pain, and and being 50lbs overweight despite eating no grains or sugars...but still eating dairy and meat. 2 months in and my body has drastically changed. I have TONS more energy firstly and I don't have the urge to eat constantly like I did before. I eat three plentiful whole foods plant based meals until I'm full and I feel great. I'm so excited for the next year as I hope to lose the 50lbs I gained in my early 30's and am excited to see what my 39th year feels like with this new lifestyle. Thanks to all the Vegan youtubers out there, I'm never at a loss for what to cook up and I'm having a blast in the kitchen.

    Anja, your site is a treasure trove! My husband and I are both 70 and are in reasonably good health but each had higher cholesterol readings than either of our doctors wanted to see so we are turning to a plant-based diet. I particularly appreciate your videos which demystify the preparation of vegan recipes in such a clear, straightforward way and your 30 day series is an inspiration to me. (We had the Potato Crusted Quiche for dinner with friends last night--delicious!) Because I come from a long history of food addiction (I've never been obese but for my height, I've weighed as much as 25 lbs. more than what was recommended), I also track everything I eat. Have you any suggestions on how to calculate the nutritional information for your recipes, or better yet, do you have any plans to include that in the future? With thanks and warm regards, Sarah

      +Sarah Satterlee You can use www.cronometer.com to track nutrition info. I don't track any more... I just eat a variety of whole plant based foods and get an annual blood test done to check that all is on track :-) x

    I made this today with kale instead of spinach and no artichokes. I added caramelized onion, sauteed mushrooms and broccoli instead of pumpkin, and it came out very good! I reduced the salt to just 1 tsp also. Very good dish!!! I think I will invest in a mandolin slicer since I liked this dish so much, and the idea of potatoes being the crust!!!

    I made this and its soooooooooooooooooooooooo good. I did not have the chickpea flour so I used a good quality vegan egg replacer and it turned out wonderful. Boy oh boy the 2nd day I served this it was much yummier. This is a keeper for sure !!!Thank you !!!

    Did this in my cooking last night and my students loved it! Showed them your video, and although they can't understand English they said the video was easy to follow. I used baked cauliflower instead of pumpkin. Delicious!

    I would add raw, whole or roughly chopped spinach and raw pumpkin cubes as well, as the both will easily be cooked in 25 mins. But thanks for the vegan take on a quiche, will definitely try it.

    Wow your cooking looks delicious . I'm sad I have only just discovered your UA-cam channel. Its March 2021 now and I'm looking for vegan dishes . Im a woman writing on my husbands account . My husband was diagnosed with cancer not too long ago and I want to radically change his diet . Im looking for whole food plant based meals to prepare for him . Its been so difficult because a lot of vegan dishes look complicated in addition to incorporating a ton of ingredients I have never heard of let alone know to buy .     Oh Anja its not cooked yet but even the mixture is delicious! I used apple cider vinegar cos I didn't have lemons & topped it with brocolli, sweet corn and bell peppers(capsicums), basil & smoked paprika. It wont cook fast enough!!!😊 Good Friday fare!

    You are killing me! No wait you are helping save my life,(very dumb joke!) I once did a shredded potato crust from a vegetarian cook book but this looks heaps easier. The spinach artichoke is the part that sounds so off the charts yummy. I love how you do your taste tests and how much you love what you cook.     Loved the potato crust but my filling turned out very pasty. I used the artichokes and spinach. Did I blend them too much? I'll yet it again but next time add turmeric. Red pepper, onion powder and an additional tbsp of nutritional yeast to the blender.

    This is an amazing idea. I have not eaten quiche since starting plant based diet. This is way healthier than any quiche out there. I love the use of potatoes for the base. Would it be possible to make pies using potato instead of pastry I wonder. Thanks

    This quiche looked like it turned out very soft, like an eggy texture. Is that how it turned out! I've made several things using besan and the only thing that turned out with the eggy texture was the scrambled eggs I made. With everything else, I really had to cut into it with a fork, if I didn't have a knife handy, and a lot of times, I couldn't cut the food completely apart, and had to use my fingers to pull the food apart, when cutting into the food with a fork didn't cut the food apart.

I think my mistake was to use too much vegetables (wanted to use up what I had), so there was overall too much water in it to get the consistence perfect. And maybe a bit too much lemon, I'll try with less next time :) Did you use fresh lemon juice or bottled?

      +Leonie Reichart Mine turns out perfect every time I make it (I make it a lot). Yes, don't overload with vegetables as this makes the consistency unstable. I use fresh lemon juice.

    I must have missed something. The potato crust cooks at 400 for 10 mins. (200 celsius). Then you cook the whole thing according to you at 200 for 30 mins. I assumed fahrenheit even though that seemed low. An hour later I think it's done.

    I add the spices and other things I don't really need ground (nut yeast, flour, mustard etc) after i blend my cashews with whatever liquid is needed. That way I don't loose the spices splattered all in the blender...makes sense?

      +Jacstarify Sweet potato will not hold and go as firm as potato. As for oats, you can use some cooked quinoa instead.

      If you have some miso paste maybe put some of that instead of the nutritional yeast. If not, just leave it out. It does add a bit of a cheesy flavor, but there is so little of it in this recipe that it really won't make that much of difference. Also, please keep in mind that the measurements are metric :-) Enjoy!!!

      Sweet potatoes would be too soft and wouldn't hold as a base. You could also use vegan puff pastry for a quick solution :-)

      Sweet potato is much softer and would be tasty but would not hold together well as a base. Would taste awesome though!!!
