For the crust:
2¼ cups (280g) flour
3/4 cup (170g) cold butter, cubed
1 teaspoon salt
4-6 tablespoons cold water
For the filing:
14 oz (400g) fresh spinach
1 yellow onion
1 red onion
2 garlic cloves, crushed (optional)
3 eggs
1 cup (240 ml) heavy cream
7 oz (200g) gruyere cheese
3oz (90g) blue cheese such as gorgonzola
1/2 teaspoon salt, 1/4 teaspoon pepper, 1/4 teaspoon nutmeg
Butter + olive oil for frying
Method:
1. In a food processor process flour, salt and cold cubed butter. process until crumbs are formed. Add cold water, process until dough is formed. Do not over mix.
2. Transfer the dough to a work surface, pat into a ball and flatten into a disk. Wrap in plastic and refrigerate for 30 minutes.
3. Meanwhile make the filling: chop onions. In a large pan, melt 2 tablespoons butter and some olive oil. Add chopped onions and sauté for 5 minutes. Add crushed garlic and spinach. Cook until wilted and reduced in size. Drain.

Gently pierce the bottom of the crust with a fork. Transfer to the freezer for 30 minutes.
6. Preheat oven to 350F (175C)
7. Blind baking: line a parchment paper over the dough. Fill with dry beans, rice or pie weights. Bake for 15 min. Remove the weights and the parchment paper. Return to oven for another 5-10 minutes or until crust is slightly golden. Remove from oven.
8. Sprinkle the spinach into the pie crust, sprinkle shredded gruyere cheese and cubed blue cheese. Pour the eggs and cream mixture over the spinach and cheese.
9. Bake until golden brown and set, about 35 minutes. Allow to cool slightly.

When making quiche, it’s a good idea to places the cheese on the crust base BEFORE the other, wet ingredients. The cheese forms a layer of fat over the crust, preventing the crust from becoming mushy. ☺️

Hi! What brand did you use for heavy cream?
@@shambhavisahni4737 Used the general Amul cream which comes in a tetrapack.
@@ayeshaiqbal7535 thank you!
Which spinach you used ?? I need to find the right one in chennai !!
I love it how you explain everything by adding caption to every step. Thanks for sharing.💕
That's the neatest, happiest demonstration I've seen. Thanks a ton.
Thank you for another easy to follow recipe! I made quiche today for the first time using your steps and it turned out wonderful - the whole family absolutely loved it 🥰
I made this wonderful Quiche using Swiss Chard , instead of spinach, grown in my vegetable garden. It was just very easy, VERY delicious, and THERE WAS NONE LEFT! 🙂
THIS I gotta absolutely make!!! Looks like heaven!
Thank you so much!!! I made this and my family LOVED it ...
You inspired me so much that I'm going to be making it again ....

For people who hated the music and decided to let everyone know: your phone has special buttons for managing sound volume. You are welcome.
😂😂😂😂 I liked the music
Its waste to turn off the volume of beautiful music ....😶 !
Music is lovely.
that's what i did, muted the music; But Vera, people have the right to comment on aspects of the video. That's why it's called "social media".

I'm happy to say that I made your quiche recipe yesterday and it was delicious! It looked so great when I took out of the oven, that my husband took a photo. I also added bacon and replaced the cream with buttermilk. Love from Cape Town, SA😍😍😍
Thanks as I don't have cream will try the buttermilk and feta cheese
I’ve used milk 🥛 in a pinch.
Making this delicious breakfast again 😋
Thank you Tracey
Thanks for sharing the recipe. I made this today and the result was fantastic. I’ll definitely make it many more times.
Exceptional recipe. And an exceptional demonstration. I just made this recipe (sans nutmeg), and it's in the oven as I type this comment. This is my favorite combination of ingredients for quiche. I usually dash a bit of Tobasco sauce on my slice and.. heaven. Late comment but this video deserves to be high up on UA-cam's recommendation algorithm for quality recipes and cooking demonstration. I really like the music track, too. Perfect fit and makes the demonstration even more engaging to watch.
Agree…I found the music a perfect accompaniment to the demonstration. Will try making quiche soon cos I love eating them (mainly store-bought) and I know home-made ones would be infinitely better. 😋
Looks delicious! I'm going to try it today. Love the background music. Love from South Africa 😍😄😍
Thank you for the detailed instructions.
That music is typical French! Good!!
I wish I had tried this earlier! It was the best quiche ever! I’m from India and such quiches are hard to find, I couldn’t believe that it could be made at home, with such steps that you explained very well. It was amazing! Can’t wait to make it again! Thank you so much!!

Scrumptious and sure delicious in each bite of Spinach pie. I had it before and always wanted not needed another slice😋😍😏.🙏📖😇
Nice
I am making this now. I am using a store bought pie crust. My quiche should be ready in 35 mins. I used grilled shrimp, grilled onions & green peppers with sauteed spinach.

Exceptional sure-proof recipe! this (today) marks my second time following this recipe, excellent results. First try I did broccoli and onions with cheddar and Gorgonzola cheese, today i will be doing yellow courgettes grown from my garden onions and whatever cheese in the fridge. Thank you for this!
Did you use bleached or unbleached flour? Or does it not matter?
Wow 😮 love it . Thanks
This recipe is awesome, l must try this. l really enjoyed your video. You're very skilled.
This is a really good delicious quiche. I added a little sweetcorn to it as well. Thank you.
I just did the base and refrigerated it. Ain’t got no spinach. So😊will assemble tomorrow and then let you know results. I love quiches so I want to try this one out. Thank you for sharing 🎉🎉was a pleasure to watch the video
I just tried this. It was delicious. Thank you
I was given , years ago one of these pans to cook Quiche in like that one, but I prefer doing a bigger one in a deep dish pyrex pie pan, makes for a thicker more filling Quiche.
I liked a ham or bacon and Broccoli quiche, but the Broccoli needs to be cut up small
💝💟 u make it look soooo easy☺😍🍪🍰🆒
lovelove love the new
Looks awesome.
Merci beaucoup pour les bonnes recettes👌, je te souhaite bon continuation vraiment bravo💐👏👏👏👏👏👏👏👏👏👏👏👏👏👏👏👏👏👏👏👏👏👏👏👏👏👏👏
Nice. Can I have a piece please.
Mmm!!! It came out delicious!!! Thanks a lot for easy to follow instructions and ingredients on description as well ( ⋂‿⋂’)
So tempting, delicious 😋
so good to watch! Thanks.
Lol I now understand why it's so expensive, it takes a lot of effort.
Can Artunç you can buy the pie shell an just do the filling.
Annmarie busu idk, pie crust is easiest and cheapest part. And you also can throw almost any shit you got in your fridge for filling, lol
@@kotdrot42 I disagree. I think the crust is the most difficult part, the cooking and assembling is the easiest. Making it is time consuming especially when you don't have a mixer.
Really?! 😮. It’s easy to make.

C'est une musique française la valeese
Very professional💗 what if we cook the spinach less time like one minute instead of 7? vegetables that we can eat raw dont have to be Cooked for long.. Cus can lose their nutrients ..
I know u will make up 4it in France cos u have fantast organic produce.☺
Love💗everything French xx
hospitality No1 !! nice chocolates..champs.. Tasty food..
Fab places 2 visit.. George v is my personal fav
💗💗love Paris💗💗💋👍💕
Use can cook it less, but 1 minute it's not enough. It must reduce in volume. You can't place 300g of raw spinach in this dish, there is no place. But after few minutes of cooking its reduces in volume.
The Cooking Foodie thank u so much or is it mercy
☺💟🎵🎼love the music👍💟🎼🎶

Thank you...I haven't been baking the crust first and it comes out too doughy
The quiche 🍲 looks superb 👌👏. But then again, his hands are just so mesmerizing 😍
Looks delicious, thanks for the recipe!!
if I was u I wud blanche it in micro squeeze out water n then add to sauté with onions keeping the flavour
I was thinking the same thing. He/she should sautée he spinach first and remove liquid, then add the aromatics.
Or better still not drain the liquids at all and just use less liquids or an additional egg for the batter. I do my batter with chickpeas as I'm a vegan and I never drain the spinach.
Dissapointed, you didn’t put it near a bench in a cave...
Colleen Ward if I was u I wood learn how to type and spell English words ‘n punk u ation.
