    The most impressive thing to me about the French is their appreciation for quality. Food, clothes, etc doesn't need to be fancy nor expensive, but it does need to be well made and aesthetically pleasing. Some of the best meals of my life were simple ham and potato gratins or homemade vichyssoise when I was in France. I found I didn't need to overeat like I do in America because I was so satisfied by what I had.

      Well not all French are the same. i live in France and have been appalled at how many good French cafes have closed in the last 15 years. They have been replaced by...PIZZA parlours and fast food. Supermarkets, too, have a fraction of the whole food they used to stock. And it has been replaced by processed ready-meals. Workers no longer eat in a cafe for lunch. They grab a supermarket sandwich (sweetened bread etc) and eat in their van or car. And surprise surprise...obesity is massively on the rise.

      ​@@lechatel could it be that the pace of life has picked up enough for people to pick convenience over healthy? I'm in the states and when I was working, even the scratch meals I put together just added to the burden of time crunch. Retired, I now have a bit more time but the complications of living suck away a lot of it. I think the meals prepared here look really delicious, but thinking about the cutting, chopping, peeling and eventual cleanup makes me tired!

      Let me add... 😊 this has nothing to do with food 🙊❤ I've just moved from Paris to Arizona. It was 47° 'wind chill' 😂 so my take away is the water 💧 cucumber, ginger, lime... and sparkling Mexican mineral water. I will survive! a little less homesick 😌🙏

      @@lechatelyes it’s on the rise and it’s becoming worse but still, the majority of people do not buy pre-made sandwiches or even eat sandwiches for lunch.

    I love the videos with your Mama. She's the epitome of French elegance, class, beauty. I'll definitely be trying the Nicoise salad and the potato dinner as well. Love her cucumber/ginger/lime water idea and how in typical French style the meals are prepared from scratch and even the simplest meals look like works of art. I remember travelling in France years ago and watching an elderly man eat a hard boiled egg. He made that most simple meal a study in elegance and enjoyment. Merci Beaucoup to your Mama.

    My Grammy always had cereal or oats or toast with half a banana. To me a banana is breakfast because I always got the other half lunch was always a soup, a salad, a veggie sandwich like a watercress or dandelion sandwich, and she always used wine vinegar, then dinner always had a salad with whatever she made a roast or a pasta. Always fresh bread fruit and veggies💜💜💜 My Grammy was Italian but this makes me miss her so much🌻🌻🌻🌻

    My mother was from Carignan France and she was the best cook! Iam half French. Growing up i ate some pretty strange foods such as escargot, frog legs, rabbit and many other things that my American friends never would consider eating. My mom is gone now and I miss her.

    My mom is also a gorgeous woman. Her diet is quite different, but still super healthy. Lots of legumes (lentils, beans, chickpeas), vegetable soups, salads, rice, eggs, olive oil of course and lots of water.

      Yes - like your mom, lentils and other beans are a large part of my diet! The salad looked lovely - but I'd likely spread over ~ 3 meals! And I don't do much peeling ....
      I'm nearly 74 and have eaten this way for decades.

    Moderation: I grew up with european influences. My mom was born in the states. The rest of family were from Russia, England, Wales. Etc. NO PROCESSED food were in our house! Cooking from scratch. Lovely. Your mom looks stunning. Merci

    I am a 60 year old Australian mum and grandmother. I like cooking healthy, delicious meals for my family. This video was such a lovely way to inspire some new recipes. I like that nothing was off the table (sugar, potatoes, flour) for maximum flavour and enjoyment. So many people doing keto which becomes boring very fast. Your mum is beautiful ❤ and a natural on camera. I could watch her cook all day xx

    Im Scottish and i regularly make Salad Niscoise in the summer when thebtomatoes actually taste of something. Its a full meal in one bowl. Perfect. I love rose water on strawberries i might try orange blossom water. I cant get enough of the smell when youre druving past an orange grove.

    I'm laughing at myself because, for me, the potatoes are the point of salad Niçoise. Of course the combination of all the vegetables, fish, and eggs make a delicious meal, but when the boiled and sliced new potatoes mix with the olive oil, tomato juice, tuna juice, etc. they become transcendently delicious. One thing I like to add is capers. Delicious tiny bombs of salty, bitter, goodness.

    Your mother is stunning! She's about my age and she's absolutely elegant without trying to be. Her recipes look wonderful and I love that she makes food instead of just grabbing something packaged. It's so good for you and so healthy. She will be gorgeous at 80 and with this diet she will look young and slim.

    I thought your mom made that first salad with anchovies for the whole family 😅 She was eating the whole thing by herself!😮😊I loooove her!!!🤗🤗 Now I know how to eat salad and be satisfied! I just put a few salad leaves and cucumbers and carrots, with some salad dressing. No wonder it is not filling or satisfying😳🙄🙄😆 I love you guys loads!!!🤗🤗💕🙏

      And the bread and peach and the chocolate…. @70 I can no longer eat like that sadly. I can eat maybe a 1/4 of the salad. My new lactose intolerance and lack of gall bladder now and all the new meds they have me on cause many issues with eating almost everything like more than a slice of Avacado, butter, oils, so I switched to GHEE, Greek Yogurt, and Avacado Oil spray….😢😢 I am learning a whole new way to eat than I did in my 60’s. I have always been eating heart healthy, lower carb, Mediterranean /pescatarian diet. I think its all the olive oil and walking, they sure eat plenty of bread I wish. Maybe more dark chocolate? My new fave is JOJOs dark choc protein peanut butter bars from Costco. I go vegan now if store bought to avoid lactose. Live on 1/2 banana, applesauce, frozen mac nut milk, pickles. Eggs, salads. Tuna. I think freshly baked bread from outside USA is key, no GMOs. Bale your own. Looking into Chickpea and follow the Pasta Grammar to see how others live outside us. I am in Maui so do have some access to local grow farmers markets thankfully. Mahalo for this video, eye opening and your mom is beautiful! So slim. Like my mom was. Not like many of us in US now. Too much corn and things in the cos and milk I suspect but could be wrong. I am just happy to have lived a nice long happy life so far. Though giving up the red wine and chocolate and bread have me Hangry sometimes.😂😂❤❤😊😊 loved her last two recipes also but too many carbs for me sadly. I am only allowed single digit carbs at a meal for keto and weight maintenance. I am mostly chair bound so much smaller meals of course. Depends also on how long I can stand to prepare meals in kitchen. I try to do grocery unload, veg clean, prep and store in easy bento boxes for meal prep later in week nights for us. Her salad would last me and hubby a week! We could make Egg Salad and Tuna sandwiches, Tacos, Fajitas and many small lunches and easy meals with her lunch! ❤❤ Mahalo😊

    That one day for us in Provence was not enough 🙁 We want another day. Can you take us around Provence? Maybe on a walk and nature, or shops. Show us the houses (from the road, not to go inside) We have no clue what Provence looks like, but we all looooove France….J’aime la France 😊 (I googled that) We like to see your mom eat again too. Dang I need to learn how to make French style salads 😐

      What we call French bread in the USA is nothing remotely like a baguette except in the shape. Just plain old regular white bread recipe used for every loaf.

    No big steaks or chicken for dinner, just potatoes, tomatoes and herbs and always a fruit after. Medical Medium says ''don't eat ONE banana. Eat five.'' Fruit is so important.

    Update: I’ve just made a version of nicoise for lunch. I wanted to improve my Omega 3 intake so I swapped the tuna for salmon. I didn’t have anchovies so I substituted small sardines. Plus I didn’t have green beans so I washed the sauce off baked beans and used them. 🤣 I thought I’d got it covered, but remembered the herbs de Provence and olives after I’d eaten it. 😂 Such a filling lunch, but really delicious. Definitely no room for bread. 😋

    Love your Mom! I’m an American but went to the Sorbonne for university & worked in Paris after graduation. It’s where I learned to eat properly & enjoy great food. A Salade Niçoise is always my go to. Please sharpen Mamman’s knives!!!

    I just want to point out that although we here in the USA can eat the "same" recipes, our government has allowed many unhealthy hidden ingredients in our food that cause cancer etc., which other countries like France have banned. The "Nature Flavor" category is quite extensive and scary if you actually look into it.
    I look forward to moving to another country. Thank you for sharing!

      I am an American living in Spain...even the fast food here is "healthier" due to the EU' s ban on MANY food industry chemicals.

      Bread from the bakery. The French eat bread freshly made every day, often delivered. Next day it's dry, and used for croutons or stuffings.

    You know there is actually a town in Sicily where the language was changed by Provençal soldiers who came and stayed on. It is called San Fratellan. It is a gorgeous fusion of Sicilian and Provençal French. Also I love flavored water, plain water is boring I always put fruit like lemon or ginger, or pineapple in it.

    Great video!
    One thing that I hope people take away from this is that recipes can be altered. Your mother demonstrated this in substituting items in place of items that she didn’t have. So many times we think that recipes are written in stone, but sometimes they can be changed, because of taste or items that we may or may not have.

      You are right. Since I am prediabetic I will eat everything except the potatoes which are very high in carbs, and the carbs in her breakfast. I love the saladas. I do not need the lose weigh but to control the carbs. The best advise that I hear was not eat anything that has a label.

    I love this so much! Although I have to say: I know a lot of French people (I’m married to one of them), and I’ve never seen a French day of food with so many veggies and so little meat! To other viewers: note that the French aren’t always this saintly in their meal choices. There’s a ton of fries and pork everywhere over there! My husband and I are always amused when we have family and friends visit us in the states: they assume Americans eat hamburgers and fast food constantly, and they really don’t understand our fruit and veggie-heavy diet. 😂

    It’s interesting to hear directly from a French person about salad Niçoise. I’m from TX and lived in quite a few US states. I think we commonly think of it as a salad with tuna, egg, and potatoes. Not mixed all together but it typically has to have those 3 components minimum for a Niçoise salad. I now know that should be anchovy. Interesting!

    How wonderful and I love the bond that you and your mom have with one another. I am thinking very seriously about purchasing a house in southern france. I just love it so much. The lifestyle is so much healthier and it's just so beautiful just like you and your mom! Hey tell your mom to go to the market and show a video of that!! I'd love to see her go to the market and interact with the French people if they would or just talk to her self while she's shopping

    By the way, Lucie: for a healthy snack I recommend making date balls with a few drops of orange blossom water since you like that! I add ground almonds and dessicated coconut. It is a Moroccan recipe and soooo good when you are in need of a sweet kick.
