We very much enjoy all your recipes. As you know we maintain a very low carb (Keto) diet. We would love to enjoy the vegan spanakopita spinach pie. How would you suggest to best modify the recipe to eliminate the flour ? Substitute with coconut flour ? Almond flour ? How much would you use of the designated “new flour”? Would additional ingredients be needed ? Psyllium Husk ? Yeast ? How much water would one use in this case ? Thank you so much for all your delicious wonderful recipes.

I wonder if you could use chickpea flour to make a pie crust? Or ground quinoa? I'd look up gluten free pie crust recipes, I'd imagine there are lots of low carb options
You are right about missing ingredients...just wondering what is a suitable substitute for red wine vinegar?! I am hoping to be able to make the pastry so I would like your comments, Dimitra.
You can substitute lemon for the vinegar. Hope this helps :)

Dimitra, Whenever I buy Phyllo pastry I store it in the freezer until I need it but even when I defrost it overnight in the fridge it crumbles and it is unusable :(
Is there anything I could do to prevent this or is there any insight you could give me?
Oh no!! A few things could be going wrong with this. Either the store is selling very old phyllo, it's not a good brand, or the packaging is not good. It should be in an airtight package.
How long after the purchase date are you using it? Also, do you thaw it in its packaging overnight in the refrigerator then allow it to rest for at least 1 hour at room temp? This should not be happening to you. Please give me some more info so that we can get to the bottom of this. Phyllo is too delicious to miss out on.

Dimitra's Dishes Wow, Thanks for such a speedy reply!! I buy the Apollo brand at my local Mediterranean market and usually get around to using it 1-3 months after the purchase date. I do thaw it in the refrigerator for 8-10 hours (is this too long overnight?-I’m a beginner cook!) but I don’t always allow it to rest for the hour at room temp- is this crucial? If so, it might be the huge mistake I’m making! 😬 I appreciate your help very much Dimitra! Thank you for sharing such delicious recipes 🙂

@@DimitrasDishes It's a green leaf eaten usually eaten in soups or stuffed in a chicken/ small turkey in Arabi countries. It's usually sold dried or frozen when it's out of season.

I've noticed a lot of vegetarian/vegan recipes as of late. If that is going to be your new platform, you are going to hurt building your subscriber base.

@@DimitrasDishes I was pleasantly surprised to find vegan versions of authentic greek dishes. I think you can grow subscribers this way! A lot of people want to reduce their meat and dairy consumption but still enjoy tasty, decadent meals. You already have meat/dairy versions of this recipe so the more the merrier
