I made this today, using white potato (husband doesn’t like sweet potatoes) and served it with side of fresh fruit. I placed the shredded potatoes as first layer. When I cut the quiche, they were golden brown, looked like a crust 😊. It was delicious even better than the frittata. Thank you for this easy, wonderful recipe.

I doubled the recipe and used a mix of sour cream & Greek yogurt instead of cottage cheese. I also used corn starch in the original attempt but oat flower is vastly superior 😊 Keep up the great work!!

I am diabetic (type 2) and I just made this. It’s delicious! I made a few changes that worked for me: I didn’t have sweet potatoes but I did have some leftover frozen hasbrowns in my fridge, so I used that instead rather than have it go to waste (thank goodness the recipe is crustless). I also used a mixture of red, orange, and yellow bell peppers, as well as white mushrooms (since I didn’t have green onions. Along with the nutmeg, I only added 1/4 teaspoon of salt, and increased the black pepper to 1/2 teaspoon. I also added 1/4 teaspoon of garlic powder and 1/4 onion powder. Again, this combination worked for me and I absolutely loved it! Thank you for the recipe!
Hash browns wouldn't be so healthy for type two diabetic, better to use sweet potato. Try to not have root vegetables and if and when you do have them according to what they should be served. Sorry for unsolicited advice, but worked with diabetics before in my previous job
@@Miasmal_Flux it was the shredded kind that you have to cook on a griddle. They contain 15 grams of carbohydrates per 2/3 cup serving. 0 grams of total fat and cholesterol, and 55 grams of sodium. Divided into 4 servings, that is hardly unreasonable. I am aware that hashbrowns aren’t the best choice, but again, I’ve had them in my freezer for a while now (and I’m recently diagnosed) so I don’t want to waste food/money. Plus, it is possible to have things in moderation. I have been able to keep my blood sugar below 125 on most days, and under 100 many times. I think I’m doing pretty darn well, but I do appreciate you looking out. People can make their own informed decisions based on their needs, circumstances, etc.

Thank you so much, love the way you have replaced heavy cream with cottage cheese and the pinch of nutmeg and the mustard (I used whole grain) adds just that little bit of zing to it. Oh yes and I used regular potato, cut into fine chips, rather than sweet potato. Added mushrooms and broccoli too. Delicious 😋😋😋😋😋

Good to know. Cottage cheese is nearly impossible to find in my country and dairy products in general are on the pricier side. Tofu is much more affordable and available.

Then somewhere I learned you can make it yourself by putting oats in a blender or a Ninja and grinding it fine.
Have just discovered your channel from trying your microwave gluten free oat flour bread which turned out great even with a few tweaks liked adding half buckwheat flour and silken tofu instead of greek yoghurt. Might try this in the microwave too as I don't have an oven yet! Any suggestions about how I can make it work?

The actual baking time depends on the thickness of your quiche, so if using some larger baking pan you can stay with this 35-40 minutes.

You can skip eggs, but you'll have to change the recipe a quite bit, add more applesauce, more oats, but that wouldn't be a quiche anymore.
