I like the way you make the prep, bake and slice the cakes and even the way that you line the tins with parchment is awesome. What I love most is that you are a neat and clean baker and a SILENT one. Your hands are always neat and clean. Nails are clean too, devoid of nail paint and no jewellery on your hands. And I love and appreciate that because I believe that when working with food hygiene is a prerequisite and good clean workstation. So I love your videos for following that protocol. Oh wow, i'm on it tomorrow. These look so scrumptious i just have to have some asap. That is such a clever idea separating the mixtures and wrapping then in cling film ready to pipe. I have never seen this, and cuts down on a lot of mess too. I'm not the tidiest baker like you are Fiona, my kitchen looks like a war zone when i'm baking. You can do the same thing with your buttercream frostings to get a few different colors/flavors as well. The 1st time I saw that method used was in a frosting video. I too love the look and less mess it creates. Good luck if/when you try it. Happy baking...
Just made these today, the eggless version, and they came out well, though lacking sharp definition, and I expect that's because they're eggless. I might try a combination of aquafaba and NoEgg™ next time to see if it provides better structure. I used a European butter (Lurpak), which is low in moisture, and the cookies were delicious. 'Were' because they got devoured shortly afterwards. Thank you for going through the trouble to make eggless versions of your recipes. Every one I've tried so far has been a hit.

They turned out beautiful Fiona, I've never made them in marble version, I'm sure they're even more delicious than the vanilla ones! I love the eggless version too, they are absolutely identical to the egg ones! You always make amazing recipes

If it's ordinary marble cookies without the piping will be a lot easier, but since this a piping work, we will need a lot of pressure to push both dough out at the same time, else the swirl won't form nicely, this is what I feel challenging ☺️💞💖

Perhaps they have over mixed the dough after adding the flour.that might cause it to flatten after baked. I even used plain flour cause that's what I have in my kitchen.

Remember to refrigerate for 30 minutes(or freeze for 10) before you put it in the oven. Most pastry that has butter in it you have to do that in order to make sure the butter doesn't melt before the pastry starts baking. If anyone has had these cookies "melt" or "deflate" it's because of that.
