I am all about using convenience foods. Some days, I'm chopping things and cooking from scratch, but I also have a nice list of meals that are relatively low-spoon. Some do require TIME (like tossing marinated chicken drumsticks into a slow cooker for a few hours, or making my salmon and rice electric lunchbox lunches), but a few of my go-to meals are basically just throwing packages of things together and heating. Doesn't take much time to mix up a 90-second quinoa and brown rice pouch, frozen steam-in-bag spinach, and a can of black beans. Eat as-is or pair with chicken sausage or meatballs for extra protein. I've also doctored up boxed butternut squash soup with kale and chicken sausage.
I'm definitely a fan of having low-spoon options around for when I don't want to work or think.
