    Pullman pan size:
    8.5in x 4.75in x 4.5in
    21.5cm x 12cm x 11.5cm
    Bake in preheated oven at 350F/180C for 15 minutes.
    Cover with foil & bake another 20 minutes.
    Tangzhong (roux) ingredients for 1 loaf:
    3 tbsp/43g water
    3 tbsp/43g whole milk
    2 tbsp/14g bread flour
    Dough ingredients for 1 loaf:
    Prepared tangzhong
    2 1/4 cups & 2T/298g whole wheat flour
    3 tbsp/14g dry milk
    1/4 cup/50g sugar
    1 tsp/5g salt
    1 1/4 tsp/4g instant yeast
    1/2 cup/113g whole milk - add 10g more milk if needed
    1 large egg
    1/4 cup/57g unsalted butter
    Egg wash:
    1 egg
    1 tbsp milk

    made this yesterday… best whole meal bread that i’ve made (btw not saying much!), a few takeaways so far…
    1: overall texture.. moist, holds pretty thin slices
    2: sweet! next time i’ll try 35-40g sugar.
    3: family members that don’t normally like brown bread like this.
    4: there will be a next time!

      밀가루풀을 만들어 넣은 빵이 탕종빵입니다. 탕종빵 식재료에 가루우유를 넣으면 더 부드러운 탕종빵이 됩니다. 통밀가루만 넣어도 탕종법으로 만들면 부드럽고 맛있는 건강에 좋은 빵이 됩니다.

      Katie님 빵 만들땐 시간도 많이 걸리고 참을성 있어야 하고 마음도 너그럽게 가져야 빵이 잘 만들어지는가 같아요. 마음을 급하게 먹으면 빵이 잘 안만들어져 바쁜날은 빵을 못 만들고 빵이 원하는 만큼 시간을 줘야 하더라구요. 😀 요즘 sourdough 빵 준비하는데 이건 기다리는 시간이 더 많아요. 😀

    Hi, I followed your recipe and the bread turned out abit dense but soft. Should I replace some of the wheat flour with some white bread flour perhaps?

    없다면 그냥 우유를 넣어도 되는지요? 가루우유도 없으면 안넣어도 되는지요?

      Whole milk/full fat milk 를 검색하니 전유 (전지우유) 로 나와요. 저지방 우유가 아닌 지방 그대로 함유한 보통우유입니다. 가루 우유를 넣어야 더 부드럽고 향이 좋은 빵이됩니다. 만약 가루 우유가 없을 경우 full fat 우유를 끓여서 반으로 줄여서 넣으시면 됩니다. 1/2컵/113ml 필요할 경우 1컵/226ml 을 끓여서 1/2컵113ml 로 줄여서 넣고 가루우유는 생략하시면 됩니다.

      No you don’t have to separate the dough in 2-3 parts. I do it for the video making. When I don’t make videos I don’t separate them.

      You ca use it after cool to room temperature or refrigerate it and use it in 1-2 days.

      Hi,
      Yes you can use water and olive oil instead of milk and butter. I would use 2 tbsp of olive oil instead of butter. The texture maybe a little different but using tangzhong method is a great way to make soft sandwich bread.

      I've made your bread today and it came out so soft and taste so yummy! This is the best whole wheat bread I ever baked! My dough was more sticky though, maybe because I used honey instead of sugar. I made the original Tangzhong bread so many times but I wanted to try a healthier version this time, so glad I found your recipe! I will definitely make it again and send you a picture of my bread next time 🥰Thank you!!

      You can reduce a some water if you are adding honey instead of sugar. Yes it’s so soft and great homemade whole wheat sandwich bread but it’s not crumbly.

      I use King Arthur whole wheat flour has 13.2% protein which makes great 100% whole wheat sandwich bread using tangzhong method.
      You can replace 1/2 of the whole wheat flour with bread flour.

      I added 14g bread flour to make tangzhong in this recipe. I haven’t tried making tangzhong using 14g whole wheat flour. You may be able to order online whole wheat flour with higher gluten.
      I hope you can find whole wheat flour with high gluten.
