- How to make the super soft Wholemeal Hokkaido Japanese Milk Bread with Tangzhong method (water roux) without stand mixer or any machine! Knead by hand.
This bread last soft for up to 1 week! Store it wrapped in plastic wrap, then place it in a paper bag and store the paper bag in a plastic bag.
-I used an Active Dry Yeast that doesn't need to be activated (as you can see in the video). If you use the American Active Dry Yeast, you need to activate it.

Do you use wholemeal bread flour or just wholemeal flour (lower protein)?

Just made this bread today it really works I just used coco milk instead for the tongzhong and the dough, but very happy overall any tips on making this with fresh yeast instead?
So glad you liked it, thanks for your feedback! If you want to use fresh yeast, use 18g of fresh yeast instead of 6g of active/instant dry yeast. Remember that fresh yeast needs to be dissolved in a lukewarm liquid. Happy baking!
