As a Puerto Rican I have never thought of putting plantains in pancakes but now I'm super intrigued! Everything looked SO delicious. I'm definitely a fan of the broth bowl you made; I'll be trying that out as well. I usually do a rice noodle ramen type of thing which is very similar, but I never thought of doing it for breakfast which is just silly. I might use a peanut satay sauce and some sriracha instead since that's what's in my fridge at the moment. Cheers!

I made the baked eggs this AM but used asparagus bc I didn’t have spinach and it was absolutely delicious! Not only that but it was fun to make and I love that it’s a one pot meal. Minimal cleanup!
Everything looks delicious. Fun fact overripe plantains can be eaten just like a ripe banana. You can also mash it with add a little flour and pinch of salt and vanilla and fry it, which we call fritter. Very delicious you should try it. I've never done it in a pancake, I'm going to give it a try 😊

In Ghana there is a dish called Tatale which is essentially plantain pancakes. They are typically made savoury and can be eaten with beans!

Baked until egg white is no longer clear. 180c temp. I like my yolks runny so remove after about 7/8 mins

I used to have the same issues with the blender. I got a smaller one that has an immersion blender attachment as well. I use it almost every day!
