I am from Chicago,I and my wife and family,are polish,with a little Ukrainian,Russian,and German!In Chicago,the only place you can find more different polish food,is in Poland!Just had some polish Sorel soup,from a deli on the southwest side,on 79 street!Out of this world,my wife makes a mean sauerkraut,cabbage,smoked rib type soup,or casserole,melt your heart!We are both 75,years old,been married 57, years,we ,were 17,18 years old!Ate a lot of Kiska, pierogi,borscht,blood soup,well,the polish people,have a lot of great different foods,not just dumplings,and sausage,though there is nothing wrong with that!A shot of Spiritous and I am on my way!
I made this recipe. It’s very very good. I’m from Oklahoma so I had to make cornbread to go with it. Real homemade cornbread not jiffy muffin mix stuff.
***** THIS IS BEST SOUP EVER! I’ve made it many times. The only thing I’ve altered is fewer potato (because I I only like mashed potato)... and I now always add a few of moms chewy dumplings (which I make double batch of & store in freezer for when I could used). (Also when I add the dumplings which are dropped into flour first for soft coating, gives the soup a less water base as thickens to give slight of a creamy texture. This soup huge hit with the family & even friends! Thanks Chef John for becoming a regular part of my familys everyday home cooked meals!
I just made this soup but I used smoked pork ribs and added a red paprika chili 🌶️ for an extra kick and it came out delicious!!! It was approved by polish in laws here in Przemysl. Now I don’t have to wait to go to Poland every year to have my favorite polish soup. Thank you for sharing the recipe!
As a Pole, I often cook this soup, but in a slightly different way. I cook the sauerkraut separately, squeezing the juice and rinsing it in water, but the juice should be kept in order to possibly regulate the acidity of the soup. If we add sour cabbage beforehand, the rest of the ingredients will not soften properly, but will melt in your mouth. The rest is similar, at the end the mowed cabbage is cooked and then simmered over low heat. And the pork ribs a little raw, a little smoked. For the winter, the soup is delicious, served with bread, but not bread-like shit or some toast, but with real bread. Add marjoram at the end of cooking, it helps digestion as the soup is quite heavy. The acidity can also be replaced with 100 ml of dry white, better aroma of wine It is also called GÓRALSKA KWAŚNICA soup

I tried this after watching this video. It is extremely good! The only change I made was adding a little jalapeno because I live in TX and that's sort of how we roll down here.
The best part about soups like this, you can tweak them and let something out if you dont like or add something that you like, if you are carefull enough, the taste is not gonna change in a noticable way. GREAT RECIPE , LOVE

Really delicious - quick and easy to make. Used less salt, could probably just season it to taste at the end. Used regular paprika too since the sweet variety isn't so easy to find around here. Will be making this again!
Very close to recipe I learned while in Poland. Only difference is I sweat the cabbage a little more then add potatoes and stock for 15 min before adding sauerkraut. And add one tablespoon of cornstarch to thicken slightly. Hands-down one of my favorite soups if not most favorite!

I make a really similar soup without the bacon and sourkraut. I use polska kielbasa and water with bouillon instead of sausage and stock. My son's favorite soup❤
I tried a recipe almost the same as this one a few weeks ago. It didn’t use potato’s,sauerkraut, and the seasonings in this recipe. They used Danos original for seasoning. At first I didn’t like it but it’s one of those things after it sets awhile to “marinate” I ended up liking it.

Just made this . Added garlic an since the sour kraut is in I skipped the dill and paprika(Think that was a good call) but this soup is an absolute banger ! Must try !
I'm not sure about the dill, does it taste good with that much dill? Also, I'd cut back on so much salt with the bacon & sausage I think and what about adding a tbsp or so of garlic? I'd love to make this, but that dill has me thrown i guess. Btw, I'm 60 & 50/50 German and Danish 😊

Is it bad to add the sauerkraut earlier?
Adding the sauerkraut early stops the potatoes from softening. Which is why I was told to hold off adding until potatoes and cabbage is soft.

Ukrainian "versions" refer to it as "kapusniak" as well, kapusta generally refers to cabbage, don't be so silly!!
Had this at a Polish Festival given by a little convent of Polish nuns a few years back. So delicious. They called it “Hunters Stew.”

This is very similar to my matka's Polska cooking maybe some garlic is missing, simple poor people's food but also delicious and harty.
