Respectfully disagree...you'd drown out the taste of that nice prime cut of beef with an industrial broth. You'll get more than enough flavor from the meat. The only thing I'd do differently is slow cook this outside on the fire for 3-4 hours just like a gulyás. Using stock or broth is misunderstanding this dish.

This looks like an excellent recipe. However, I really wonder if the potatoes will fully cook in a 15 minute simmer. Seems like they should be added when the pot is covered for the first time.

I have cooked this today. It tasted really good, but one tea spoon of salt isn't really enough. I mean it depends on how the personal taste is, I prefer a bit more salt. In the last 15 minutes I have put some dried chilies for a little bit more flavor and spiciness. 5 of 5 stars for your recipe!

Beer. A dark stout like Guiness would be great. Or other dark ales. Just don't use pale lager like Budweiser, Heineken unless its all you got. Or if it's against your religion use a cup of warm water and mix in 1 or 2 tablespoons of Marmite/Vegemite to taste. Should be salty and rich with that umami taste, not watery with a hint of Marmite since you're going to be adding 4 cups of water. If you're adding 4 cups of broth instead then dial down the the Marmite mix slightly or else the sauce will be too salty or just don't add the salt the recipe calls for.

I have a hard time believing that the potatoes would be done enough in just 15 minutes, unless they were using canned or frozen.

peel them and cube them. they're cooked perfectly in 20min. i don't know what kind of potato was used here.

Why do people add water for liquid instead of adding broth or stock - so much more flavor.
Broth and stock have a ton of sodium in them. Too much is bad for your health. There’s already plenty in the dish.
Broth and tomato juice plus water . Lay off the salt elsewhere.
For one it's cheaper, and then it also helps if you're trying too reduce salt levels.

Just check for doneness after 15 minutes. If they are not cooked enough, just keep going until they are.
