- Russian salmon log, the Kulebyaka (Кулебяка/Coulibiac) - Cooking with Boris
A coulibiac (from Russian: кулебя́ка, kulebyáka) is a type of Russian pirog usually filled with salmon or sturgeon, rice or buckwheat, hard-boiled eggs, mushrooms, onions, and dill. The pie is baked in a pastry shell, usually of brioche or puff pastry.

INGREDIENTS
Dough:
400g flour
5g dry yeast
half teaspoon salt
2 teaspoon sugar
some cooking oil
250ml milk
1 egg
Blins:
200ml milk
90g flour
1 egg
half teaspoon salt
1 teaspoon sugar
some cooking oil
The filling:
2 boiled eggs (1 use one)
100g rice
500g salmon
green onion and dill
6-9 mushrooms
1 medium onion
50g butter
salt, pepper

Out of all the goddanm recipes that could have drawn my interest it was this one. It took me like 4 hours to make it just for me to forget to flour my counter and for the dough to rip while rolling it at the last step before cooking.

It’s actually very warm inside most houses in Siberia, now I’m wearing only my boxers looking out of the window with about minus 30 Celsius outside :-) On the other hand we do have a lot of jokes about fridge being a warmest place available :-)

If it’s a genuine question - in most houses it’s plus 25 Celsius in the winter, depends on wether there are controls, how the central heating units are working, the type of house and so on. It gets cooler for a short time in spring and autumn when nights are still rather cold and central heating is off already

Ok I clicked because it looked interesting and I like salmon, the beginning weirded me out a little but I continued watching because I was intrigued. And now I’m laughing my ass off because it’s so funny and happy. Then I subscribed.
I was searching for Medovik (Russian honey cake) recipe that is actually Russian, because by that time I'd only seen recipe videos from Japanese and Koreans (and they're a lot!), and I wanted to check the real thing. The 1st video of the searching video list was the Medovik Boris video. Been a subscriber ever since!

I was positive that this was a new recipe I didn't know since I grew up with mostly western adopted holiday customs/dishes after a certain point. But I was getting a very weird deja vu most of the video... right up until the moment where you mentioned the salmon can be replaced with minced meat and I got suddenly hit by the core memory of shoveling these things into my mouth when I was 7, while stuffed inside a frilly holiday dress at one of my relative's dinner parties.
The flavor of the meat, boiled egg, buttery blin and crunchy outside is so vivid and unmistakeable, not like any other food I've had in years. Can't wait to recreate this experience, thank you comrade both for unlocking a memory and for this awesome recipe! 💪
