Let's cook chebureki. At cousin Anatoli's place.
Objective is not to burn house down and not wake everyone up with the excess cheeki breeki.
Cooking with Boris is very easy if you follow video and do not try to skip most important part like adding salt and vodka.
Ingredients:
For dough:
1 egg
3 cups flour
1 shot of vodka
1 tablespoon sugar
1 teaspoon salt
1 cup water
sunflower seed oil
For filling
400g/14oz beef or pork minced meat
Some green onion, parsley and dill
Some ground black pepper
2 small onions
1 clove garlic
3 teaspoons salt
Serve with parsley and dill
Eat with side of mayonez

Use proper meat for stuffing (it should be moderately fat). It is important!

Reminds me of the time my mom tried to grill in our roofed porch and burned the ceiling so bad that our neighbors called the fire department cause they thought it was coming from our house. Good times. (Everyone including the grill was okay)

The reciepe is good, just a few issues with the proportions:
- Put less water in the dough, maybe 20 to 30% less, will yield better results
- Put less salt in the stuffing, maybe 2 tsp instead of 3, or even less.
You can make the dough with different flours, experiment with it, just be careful with the water (check bread reciepes with your flour and adjust accordingly vs normal flour) and the cooking (the colour won't be the same at the same cooking state).
You can also try a MOAB (Mother Of All Burek) with two circular dough to make the monstrosity approximately the size of the pan. Less oil used, less dough, more meat. It becomes a meat and onion pie. You can make it in the oven also and serve it at a normal dinner with family and friends who dislike fast greasy food.
I tried making more chiburek and freezing them once cooked (to make my kitchen smell like mcdonalds less often), I'll report on the success of this process once I unfreeze the first ones.

I tried:
- microwave
- oven
- microwave then oven
The results were:
- good but crust was soft
- crust was burned before unfreezing
- crust was harder than with microwave only
It works, it's good. It's not as good as fresh from the fryer but perfectly serviceable.
I had best of luck unfreezing in the microwave then drying/cooking in the oven for 5 minutes at 200°C
I think if you want to have them for lunch at work you can just put the freezed ones in your bag in the morning and eat them cold, no worries, microwave would be a plus, oven (once unfreezed) is the best but we rarely have that at work.
All in all it's a success.
Next step is freezing uncooked ones and deep fry them in case of emergencies (like 4 friends showing up uninvited), i'll report on that if I remember to do it.

I have successfully nailed this recipe with my husband and we're very happy with the results. I've even experimented with batches containing yeast in the dough, some steamed, some baked. They're all very tasty, but deep-fried is sadly the best. I was hoping very much that a slightly healthy alternative would be the favorite, but you very clearly know what you're doing.

I came thinking I didn't knew this recipe but then I realized "we make this in Chile, but with no alcohol". My mom makes this things, fried empanadas, you also have oven empanadas, more common. This is a strange realization after watching the full video

I made this recipe way back when the video first released and they turned out pretty good considering I had no experience with dough and I was missing the fresh dill and green onion. Pretty good isn't good enough to merit frying for me, so I put them out of mind... But then, I hungered. Just as Boris knew I would. So I revisited chebureki today, with several years of dough handling under my belt and fresh herbs to boot. Chebureki is not pretty good, how mistaken I was, it's fantastic. Despite the fine mist of oil that will cover half your kitchen, these are 100% worth the time and effort.
My great grandmother was Russian, but my grandmother abandoned all Russian ways when she came to America, and so I have come to this channel to re-learn how to be Russian. It's been going well and involved much alcohol so far.

The dough recipe Boris uses can be used to make cheese pizza pastries cut them into 8 pieces roll each one into a circle add sauce and put in oven 250 degrees Celsius for 10 minute then add mozzarella and back in oven for 5 minutes then bam you got yourself pizza pastries, an average oven can make like 3-4 of these at one go
It’s small and makes for a perfect breakfast
That’s literally what I did after I had left over dough from the cheeburiks

Fun fact: Chebureki is a Crimean dish that has been a number one dish for people that lives in Turkey, Russia and most of the Ukraine. Its meaning in different langages are the same which means "raw borek" Thanks to my babushka and Boris for teaching me how to make chebureki
I don't know if anyone comes here for this recipe anymore, but if anyone else out there has a gluten intolerance or Celiacs, my friends and I played with this recipe last night to make a gluten free version so I could keep enjoying this amazing dish. Maybe it'll help someone else too. My apologies, these ingredients may be harder to get than what Boris has in his videos.
Modification for Chebureki for a Gluten Free version:
3 cups of gf flour
2 tbsp ground chia seeds (neat egg or whatever equivalent)
3 tbsp tapioca starch
Pinch of salt
1 tbsp of sugar
Whisk together and make a well
3 eggs
1 tbsp sunflower oil
1 cup water
2 shots vodka
Mix well until dough begins to clump, then hand mix. Coat the counter in tapioca starch, NOT flour, and be generous. Same goes for the rolling pin.
When rolling the dough, be mindful it will break easier, so don't roll too thin. Wash the inside of the dough with an egg wash to help strengthen it when folding over the dough to form the chebureki.
Cook over medium-high heat and flip after 1-2 minutes.

I just made Chebureki today! It had Canola oil instead of Sunflower oil, Elk instead of Milk maker and no vodka, but it was still the best thing ive ever cooked for the first time!

Yeah I typically describe cheburek and piroshki to my friends as Russian empanadas

As someone who is Hispanic I am still amazed at how many different variations of empanadas exist and are available to try.
In my country(Indonesia) we have something similar but filled with fried fish and its more cake-ish,but the thing that i think makes it similar is the shape and the fact that its called "panada"

Here in Mexico there's a regional version called "paste".
Same idea, but baked instead of fried. And they're made either sweet or salty, depending on the filling
They're all dumplings. All the names we put on are variatons of mix vegetables and maybe meat, wraped around a flour disc, that can be fried, boiled, steamed or cooked in oven. Its truly a diverse world but in the end is all the same
