Cornmeal is what you’re supposed to use when you make salmon croquettes or salmon patties. Not flour. This is the first time I have ever seen flour being used in salmon croquettes

I sat down in went back into a time when my grandmother would stand in the kitchen singing and making them. The combination of corn meal and flour gives it a flaky and crunchy texture but as u stated there are no laws. I know on my end you completely saved the day. ♥️

My grandma used mashed potatoes, eggs, onions, and bell peppers like you did plus black pepper, paprika, dill, tarragon, and cardamon. Oh she also mixed in tartar sauce! I just can't remember if she used lard or butter to fry it in. Growing up on a farm with our own veggie garden was awesome! I think I am going to do a mix of your way and grandma's way because grandma didn't use garlic powder or flour and Old Bay seasoning would be amazing in it! She didn't even use bread crumbs or flour, but sometimes would use crushed saltines. The older generations of southern women are really the best cooks! I will die on that hill!

Your salmon croquettes look delicious! I make mine a little different, instead of putting flour in the salmon I use bread broken up into pieces (white or wheat bread) about 1 slice per can. I never tried putting old bay seasoning in it but I will definitely try it. I also put 1 or 2 tablespoons of squeeze lemon juice in it. Before frying them I roll them with cornmeal and put them into a hot skillet of oil and cook them until they’re golden brown. They are so delicious. 😋

Girl, I'm from swla and I gotta say u know what u doin.. Louisiana got some high standards for cookin and u rite on. I like to go in my garden and grab some red bell, green bell , green onion, sweet onion, garlic, and a small amount of celery, then season it up with black pepper, tad of paprika, and some slap ya momma, eggs and flour and ofcourse a taste of cayenne and fry them to a good crispy crisp. Mmmm mmm dang I'm bout to go make me some now

Tfs. I make mine a little different. First, it’s easier to remove the bones all at once with a fork. Keep your juice, throw it in the bowl along with your fish for additional moisture. I use equal portions of flour and corn meal. Never used bell pepper, I will try that

Tfs. I make mine a little different. First, it’s easier to remove the bones all at once with a fork. Keep your juice, throw it in the bowl along with your fish for additional moisture. I use equal portions of flour and corn meal. Never used bell pepper, I will try that

I have always used corn meal but I am going to use flour and see if I can make them better.

Yet and still I saute my onion and bell pepper before I incorporate it into my salmon before frying the patties, making sure the mixture has cooled, so I don't cook the egg and the patties will not have any veggie crunch.😮 That's my recipe, yours is wonderful too. I use red and green peppers in mine, along with onion. I also saute my veggies first before adding them to the salmon mixture. And I use seasoned bread crumbs, not flour. Your recipe is great, too. Thanks for sharing.

I use 2 wooden spatulas to flip everything. That way U don’t splatter grease. This is exactly how I make my salmon patties. 🎉

Granny did everything you did but used half cornmeal and half flour. She said growing up used just cornmeal. Was cheaper. But they were wonderful
