I really think what is delicious and sophisticated food now in expensive restaurants is the result of poor people trying to make edible and somehow tasty food that was almost rotten or difficult to cook, while kings and nobility just had to boil or fry a good piece of meat which would be delicious without much wisdom. Who knows

Evoo in spain since before Christian era. Testaccio area in rome has mound 70 feet high madeup of broken jars of evoo imported from spain, since over 2000 years ago.
You can make the same dish in the oven without using any olive oil and save yourself hundreds of empty calories that are definitely not healthy. Or you can sautee in a non-stick pan without any olive oil at all, using water or broth to prevent sticking, try it and enjoy the grease-free taste. This channel is fantastic but there's way too much olive oil being used and everyone is getting fatter in the Western world because of this exaggerated use of oils.
If I could substitute onion for the tons of garlic in the Spanish cuisine, I would be a true afficionada! Can’t stand garlic, it interferes with my digestion.
