      Many dishes have cheese or butter, pasta may have eggs as well. But in all honesty, foods from all regions of the world have vegan dishes due to food scarcity of past times.

    I remember when I first landed in Spain, in Galicia, in the late 70s, I was hit by this wonderful aroma that I'd never smelled before. We didn't "do" garlic and olive oil, in the UK, back then.
    Nowadays, having lived, studied and holidayed in Spain numerous times, those things are a part of my everyday life. I can't imagine cooking without them! 😋🥘

    I just made this dish today and it's terrific. This is the first time I've cooked with Saffron, an entire head of garlic or used a full Bell Pepper. I had my doubts, but gosh it's GOOD !

    I've been watching your recipes for some time because they are dishes I grew up with. My grandparents came to the United States from Spain many years ago.
    I will add meat to the recipes because my grandmother and mother always cooked with meat.
    Anyway, thus recipe is as delicious as many of your other recipes are. I especially love soup.

    I love the way the sauce cooks down into a gooey mess of umami perfection, with all the broth gone and the veggies pretty much all congealed into one another. Added sausage and substituted broccoli for zucchini.

    We just moved, are in the middle of renovations(gone awry) and trying to manage a household with teenagers and school kids in the middle of a lockdown! In other words, we are STRESSED to the max😂🤣This meal looks to be EXACTLY what this mama needs to get back to some comfort and put an easy and delicious meal on the table tonight(along with a glass of red, of course:). Usually, Id be cooking Mexican on Cinco de Mayo, but not today, fam😚😋Thanks for this!

    I showed this recipe to my wife and she made it tonight. This is a delicious recipe and she agreed it is going into the regular lineup. We're vegan, so we leave out the cheese or toss some nutritional yeast on it for a cheesy flavor. Thanks for these recipes. Most of them can adapt to a vegan diet and they all seem as delicious as this one.

    I can smell that garlic all the way here in Florida!!!!! Usually I make garlic bread with pasta, but I think I'll be able to get away with a plain baguette for this recipe!!! Our supper group is starting to meet again soon, and this will be on my table!!!! Thanks Albert.

    I've made this twice now and it really does go down a treat I use mushrooms rather than the courgette and don't use any safron but I tell you what 10/10 for taste and you're right it is restaurant quality dish, I'm trying to go meat free so your videos are helping me create some really good dishes for me and my girlfriend to enjoy, please keep up the quality posts!! If I ever come biking through Spain can I pop by for a meal please hahah!! Keep it up.

    Great channel with amazing recipes! This really is the perfect weeknight dish, so quick and easy to make, but absolutely delicious and healthy. Being half Italian and half Spanish this was the food I grew up with, even on rainy cold days, making these dishes takes me back home to the Mediterranean. Thank you for sharing these lovely recipes.     Tried this tonight and it was delicious! My boyfriend loved it too and he usually doesn’t get excited about what I make. Easy to veganize by leaving out the cheese. Mine ended up pretty liquidy but flavors were still on point. Thank you! Can’t wait to try more of your recipes.

    I’ve been making something extremely similar for over 30 years l call, “Zaba-Zucchini”.
    It’s cooked exactly the same, way a one pot wonder!
    Everything’s exactly the same except that there’s 3 different ingredients changes and
    2 ingredients are omitted.
    - Basil instead of Parsley
    - Eggplant instead of Orange Peppers
    - Asiago Cheese instead of Manchego Cheese
    - Onions and Saffron are omitted altogether.
    The name “Zuba-Zucchini” happened because... My youngest son could not pronounce the word “Zucchini” at the age of two. It came out as “Zaba”. Every time he said, “Zaba”, his three older brothers screamed out, “ZUCCHINI”! Hence, we have Zaba-Zucchini! I’m definitely going to to give your recipe a try, it looks absolutely delicious!

    gorgeous colors, luscious olive oil/pasta starch mouthfeel, saffron and sauteed/simmered-in garlic important. finishing w/sauce left important too. Feared would be too al dente, but it wasn't - but must be stirred a few times and covered while you've still got enough liquid. will make again w/variations to my taste - dial back oil some, add whole zuc (cut thicker), add zuc and pepper (orange or red - yellow a little sweet) later (w/garlic, or even broth) - and a tablespoon of tiny non-pareil capers when broth goes in.

    Hi, I'm late to your videos. I tried this recipe tonight. It was amazing! As we're not fans of courgettes I used broccoli instead, more for colour than flavour. I'll be honest, I thought the pasta would be a bit overcooked, but it was perfect because the liquid reduced in the ten minutes. I'm so full now! Thank you! 👌😋😋

    I love all your recipes. Affordable, healthy and above all so delicious. I think someone mentioned a few videos back if you could do a type of what I eat in a day, since the Spanish diet is meant to be one of the healthiest in the world. Thanks.

      Affordable but he uses a lot of saffron in recipes and that is way beyond my budget. I don't know what saffron tastes like but I read that you can use turmeric as a substitute but turmeric is very strong.

      @@dianerichards6015 saffron isn’t really necessary. It adds a really nice flavor, but if you can’t afford it you won’t be missing a whole lot by not adding it 🙂 I would not do turmeric as a substitute in my opinion. The flavor is completely different!

      @@dianerichards6015 The turmeric adds a similar color, so you could put in a little, but it's not a flavor substitute for saffron.

    Thank you for that amazing recipe! Made it tonight, it was a big hit . Looks, smells and tastes wonderful. Very filling, probably helped by the fact that the pasta cooks in the liquid. I was surprised that the garlic was far from overpowering...the dish is pretty mellow. Next time I prepare this (and it will be soon!), I might add some crushed red pepper to jazz it up.
