Try using a much smaller hook, and also thinner line and I wonder if the perch would take the worm faster. I hope you take into consideration what I suggested you. It would be very helpful. I would also like to know how fish react to other bait (sweetcorn, pellets, white corn, paste) Thank you.
Personally I think the problem wasn't as much the hook or line as it is the jig head. Perch don't like resistance and they feel the jig head right away and spit it out. I think using a sinker would make them keep the bait in a bit longer.

patience friend .....canals are quite hard.....light lines ,small hooks ,plumb your depth ,maybe fish slightly over depth .....curse at boats etc lol !

What were the other fish schooling with the perch? I think your jighead should have had a bright color on it and use less bait on your hook. It looked as if the bait was intimidating at times to the perch. Would have liked to see the pile of perch when you were finished.

From my experience with cheese you have to kinda have it at the bottom because of what happens is shrimp will sit on top of the cheese and cod will take it because of the shrimp on top and worms are the best for red fin

Nice size perch, all large on average, but there is something wrong with your presentation in my opinion, and you can see that in the reaction of not all, but some of the fish. If you went to smaller size jig heads and hooks, combined with lighter line [ two to four pound test] green colored mono for less visibility you might get more strikes. Also perhaps a more natural retrieve that represents "fear". Perch and walleye are two of the very best eating freshwater fish.
