Yes, you are right. Great question! I used monk fruit sweetener for the cake and stevia for the frosting. I love using monk fruit sweetener for recipes that would normally require cane sugar. The texture and taste is very similar. So, I used monk fruit sweetener for the cake. Stevia is easily dissolved (granules are not as large as monk fruit) and so I used it for the hand mixed frosting.
@@powerup7933 I made it this morning for breakfast and it was delicious. My batter was more liquid and did not look like yours. Maybe my eggs were bigger. Nevertheless, cooked it for 2 minutes and it turned out perfect! My frosting was NF plain Greek yogurt mixed with a scoop of zero carb vanilla protein powder and a splash of lemon flavoring. I poured that over the cake and it was heavenly!!!

I’ve not tried freezing it, but if I were to experiment with the possibly I would freeze it in an ice cubre tray so it’s easy to extract and faster to melt because of the size.
