It worked! For my second batch I split this recipe into 2 - 8x4 loaf pans. Perfect sandwich bread! Only changes were 1 tbs baking powder, 325 degree oven for 30 min.
Another winner! Thank you! For my next batch I will pay closer attention to the cheese microwave step since I think I over-melted the mozzarella which may have affected the rise. But still tastes great. Like your other commenters I plan to try mini-loaves or burger buns.

@@marianneodell7637 haha! I know this is crazy. But you just need to cook the chicken breast in water (no salt, no seasoning at all). Then dry it on a paper towel and grind it. I use a blender cause I don't have a food processor. Tah-dah! The chicken flour is ready to use in every recipe that needs any kind of flour.
@@barbarafatelier I was going to post a screenshot of freeze dried chicken I found at Costco but realized you can’t do that here. I thought that would work pretty well as it’s already got all the moisture removed?
@@marianneodell7637 sure. If it is cooked and dried chicken breast with no salt or seasoning you only need to grind it. It's important not to be seasoned, it needs to be neutral taste. You can use a blender to grind it but it gets better if use a food processor. I use this chicken flour to bake cakes, breads, to breading meat, croquett meat, everything that needs any kind of flour. And yep UA-cam should allow images here. I miss it.
I’d love to try these today,but I only have a log of fresh mozzarella. Would that work? I guess I’d have to shred it.perhaps if I freeze it for a few minutes first? I’m wondering though-most pre-shedded cheese has some starch added to prevent sticking-might that effect the finished product?
Would this also work if you made larger balls to bake, more like the size of an average burger bun? Maybe even pop some sesame seeds on top. That may be a silly question, but I'll risk asking it anyway 🙂
I bet this would work. 👍 You would just need to adjust the time the buns are in the oven since the dough balls would be thicker/bigger. Also maybe adjust the oven temp down so the bottom of the bun does not burn due to a longer time in the oven.

All you need to do is add up the carb count of all of the ingredients and then divide by 10.

It looks so delicious. I don't have almond flour so I'm going to use chicken flour I made yesterday.
