4 Levels of Ramen: Amateur to Food Scientist | Epicurious
Вставка
- Опубліковано 4 тра 2024
- We challenged chefs of three different skill levels - an amateur, a home cook, and a professional - to make a bowl of ramen. After each of them had presented their creation, we asked a food scientist to review their work. Which noodles are you diving into first?

I find it really disappointing that the chefs never taste each other's cooking in these videos
I know, right? The pro chef already knows their own cooking, so of course they’re going to enjoy it. It would be such a doable thing for the other two to taste the fancy stuff and learn what goes into the fancy food.
They're probably filmed on totally different days so the chefs aren't in the same building at the same time, but I agree that would be better!
@@Ninjalectual yes they could just come in the day they film one recipe, but i also always wonder if someone else tastes their food? Like the staff lol? Cause i always wanna know what someone elses opinion is

When you were talking about Yuji’s assembly you said he added Konbu as a topping, which is incorrect, what he put on top was Nori which is a different type of seaweed, Konbu is dried kelp.
Why does it matter
@@judspizzy Kombu is dried kelp, used traditionally in making dashi or broth. It's tough, fishy and is used pretty much used exclusively for cooking. Nori, on the other hand, is roasted seaweed. It's light, crunchy, still fishy but with hints of salt and the roasting process. They're not only different plants, but taste different and serve different purposes. A minor slip up, sure. But context matters in this case, especially.
This has done wonders for my appreciation of good restaurants. I like to cook, but not that much, oh , HELL no. Real chefs earn every penny they make.

Lorenzo: *does all the professional work for the broth*
Also Lorenzo: Aight now we gonna add the premade noods
Dry noodles are one of those foods that work very well. Freshly made noodles are slightly better but for most people that are not professional (or love making noodles), the difference in a pasta dish is in the sauce and toppings, not the noodles.
send noods.
Making homemade ramen noodles, unless you want to develop it as a skill, is more trouble than it’s worth. It requires more advanced technique than other varieties of homemade pasta, and is very easy to get wrong. If you don’t have a lot of practice, your homemade noodles will probably be worse than what you could get at an Asian supermarket.
Idk how it is in America, but in Europe shop noodles are just as good as home made. If you are profesional chef then you have skills to make better noodles at home, otherwise I don't think so.
Honestly, I wonder why he didn´t even get fresh noodles or anything like that. I mean, you can buy them in packs where I live....

Most of the time when you eat soup dishes in Japan or even in some Japanese restaurants in other countries, they usually give you a Renge spoon since some people like to start with the soup before eating the noodles. I like eating the noodles first though since it gets soggy the longer I let it soak in the soup.

I don’t like the editing on this episode. We kept jumping around from chef to chef too quickly so it was difficult to follow what each person was doing. That’s especially important when we have several different components. Also, Rose did not discuss the relative merits of the cookware. Sauce pot versus Instant Pot (how long was the pressure cooking?) and big stock pot (8 hours).
Yes
Scrolled down to see if anyone else noticed how jumpy the editing was for this, love this show but not a great change from how it was
I thought this too, and the level 3 chef didn’t mention how much time everything took due to editing, even though that would at least take 2 days to cook

My Recipe:
Open up a Pack of Beef Ramen and take out the Beef Bouillon and pour it into a small bowl along with half-a-spoonful of Beef Tare (Basically Broth Starter). Put a little hot water in that and stir until dissolved. Then, pour it into a small pot then add the noodles. Add more water until it looks right (this part's pretty subjective), and then turn on the heat. While it's heating up, add some Hoisin Sauce, Soy Sauce, Maggi Seasoning Sauce, Oyster Sauce, Chili Oil, and Sesame Oil if I'm feeling fancy. Then, chop in some Green Onions and cook an egg to throw inside (I just fry it). Once the water starts to boil, stir it up and then separate the noodles. Once the noodles are perfectly soft, kill the heat and pour the whole thing into a large bowl. Top with Bean Sprouts and the egg from earlier, and then wait a little for it to cool.
Lorenzo legit makes me happy, I can't help it.
How about a video called "4 Levels of Leftovers" where three people are given the exact same kind of leftovers and have to use all of them, and then you can see what each and every one makes? I think that could be an exciting "special" for this series. :)
Anyway, I'm craving ramen now... guess I'll go make some later!
