naaah. France is the pinnacle of food by far. France is small and subdivided into 13 regions. As small then as they are, each region has so much diversity in food recipes and uniqueness that it's usually worth an entire country. It's unbelievable. It's like 13 countries worth of diverse recipes, often very different to one another, all packed in a single small country. Nothing compares, by far. But japan is great, it's very unique compared to other asian countries.

Real masterpiece. They take so much care to enrich the taste of broth and oil, what I believe is the secret ingredient here which makes the difference. Also it is really cool to see how they integrated European techniques like sous vide or soft boiled eggs into traditional Asian dish. So, big respect. Wish I could try it once.
Im absolutely amazed at the care and attention to detail that went into this recipe. Then I saw the price! Less than $10 for this kind of meal?! Its like $16 for a bowl half this quality at my local Austin place! Japan is a fever dream 😮
This is a chain restaurant in South Korea specialized for Japanese noodles and just trumped in a national competition. 'KRW' means 'Korean Won,' Korean currency unit. The restaurant looks more Japanese than those in Japan. :)
It's called Sous Vide. Basically they submerge it in a hot water bath at a fixed temperature for a few hours, which pasteurizes the meat. Using this method you can fully cook meat at a much lower temperature while still being perfectly safe to eat (it's the same pasteurization principle that is used to make your milk and fruit juices safe to drink, eggs safe to eat raw, and so on) and the meat comes out much more tender due to the lower temperature, which is usually the main reason for using this method.
How is it possible that a country like this is perfect in everything...... Not a stain, not an imperfection, not an impurity, just perfect and delicate in its entirety.
