4 Levels of Pasta Carbonara: Amateur to Food Scientist | Epicurious
Вставка
- Опубліковано 8 тра 2024
- We challenged chefs of three different skill levels - amateur Joe, home cook Lorenzo, and professional chef Saúl Montiel from Cantina Rooftop - to make us a dish of pasta carbonara. Once each level of chef had presented their saucy creations, we asked expert food scientist Rose to explain the choices each made along the way. Which pasta carbonara would you dig into first?

Joe might be the most competent level 1 we’ve ever seen
Well, he did say he was level 3 at cooking bacon. ;-)
He didn’t use cream and that’s enough for me
I took one look at him and I knew he seemed very competent
No he's not
@@firedboltur incompetent
Level 3 proving he deserves the rank with that sauce. Crazy how much better emulsified it was than the other two.
that's how a real carbonara is made and it's not even hard :P
The other two seemed to forget to use the pasta water to make the sauce, I was literally yelling at my screen when are you gonna add that pasta water.
@@shampoomaster5787 They did add some, just not enough.
You know, I think one of the reasons was that he only used egg yolks. I am going to try yolk-only next time.
That’s how I make mine as well, with the only exception of not finding guancalle here😅 learned to do it the same way after doing a deep dive on how to make traditional carbonara
"I'm cooking with my heart and no skill". Also, "I barely know what pancetta is", and "I think I got lied to by big noodle" Please, more of this guy!! ...level 2 around the corner
That line about big noodle cracked me up, he's great
I loved his "im a level 3 bacon" remark that got me 😂
I got the 1,000th like :D
My favorite chefs used to be Emily level 1, Lorenzo level 2 and Frank/Saul for level 3. Now that Emily has been promoted to level 2, Joe might be my new level 1 guy! Go Joe!
Wouldn’t expect an official studio to comment on this, lol
What is this, Astroboy?

Oh, OK lol
Same 😭❤
justice for stephen
Joe, Lorenzo, and Saul?! This is an all-star lineup ❤
Joe, Lorenzo, and Frank tho 💪
@@andersonkai1094I came to say this
Amen!
@@andersonkai1094 there is more than one All-Star lineup and by now we know it's at least 2
a perfect trio!
Joe is such a vibe as a level 1 chef and is getting to be one of my favs, but I can't deny I don't get giddy seeing Lorenzo and Saul in a episode 🥰
Saúl complimenting Lorenzo’s smile is my new favorite part of the entire channel
Saoul: "Whole egg is fine, do what makes you happy." PREACH, BROTHER! That's how cooking should be.
An American, a Filipino and a Mexican doing Italian food. I'm sure Italian folks will love this one 😂
Vincenzo needs to see this :-)
Saul actualy did the dish justice using the proper ingredients. The other two versions would be much better with addition of more pasta water and a bit of heat to get creamier. Bacon nor pancetta is on par with guanciale but even in Italy guanciale is the most expensive of the meats, so it is understandable people try to substitute it.
@@otakarschon I know, just an innocent joke. Also Italians are known for defending their recipes like it's their family's :)
Sounds like the beginning of a joke lmao
Honestly I think most Italians would be fine with this. None of them added cream 😂.
Just realised since Emily is now a level 2 chef (so proud) we dont get to see her with lorenzo anymore T-T
Lorenzo could always move up too!
Wow it’s been ages since I checked the channel
How did she level up ???
@@emeraudebenina3485she got enough exp
@@emeraudebenina3485 she did a lot of swap ingredients with level 3 chefs and proven herself worthy of being level 2.
@@SuperGraynard level 3 is for pro chef, it's not a upward mobile position
Chef Saul is the perfect ingredient... he goes with everything!
01:52 - "I am a level 3 bacon cook"
02:28 - "I don't have the beautiful smile.."
03:06 - "Why? Because I am child!"
09:19 - "Italians, thank you for this amazing pasta!"
I was relieved to see Saul keep to the tradition of carbonara. I was afraid he was going to take it into some crazy direction, like when Remy made a croque monsieur in the grilled cheese challenge. Very well done by everyone.
That was everything but traditional, hahaha
@@IKronosI Just out of curiosity... which part did you think was not traditional.
@@ptrinch The egg on top would be the easy one.
@@BreakRaven The egg yolk on top is mixed into the pasta when served. Doesn't really change the recipe, just adds some flair.
@@BreakRaven Oh no, Saul just declared war on Italy with that one. Why would he do that? Why does he hate Italy so much?
Level 1 was unexpectedly competent at the Carbonara. I would have thought a Level 1 Chef would rather cook the "Anglo" Version with Cream
I was totally expecting to see the L1 chef do that!
I was expecting them to somehow use a jarred sauce
I was surprised that he didn't do that as well. Glad he didn't though
The only real difference between the three is how authentic it was in terms of the type of ingredient and understanding of the principle
@@joncarroll2040- None of them were authentic. First was actually the closest. Only mistake was bacon.
Other two majorly F’d up. Red pepper flakes? No. Parmigiano? No. Pancetta? No. Guanciale cut into cubes? No. Raw egg on top? No. And the thirds sauce was waaaay too runny.
Breaking the pasta is like breaking somebody's heart...You don't do that. -Saul
I think that being a level one chef is not just be about the skill level of the cooking. I think level one is more about the basics of making the dish with ingredients you may have on hand versus more complicated techniques and ingredients in the later levels
I enjoy these three a lot. Would love to see the different levels team up. Be fun.
This is by far the best episode I've ever scene!!! Im so happy for this episode!! Congrats to all the cooks!!
You guys put such a big smile on my face every time. Thanks for making quality content.
Joe gonna be a level 2 chef someday. Gotta love it when Lorenzo and Saul on an episode
Yum, they all look fantastic. I love the addition of the egg on top of Chef Saul’s carbonara
I haven't seen these 3 together and this is also the first time seeing Joe ❤. All are wonderful!!
I really liked this one, seeing each of them tackle near identical ingredients, really shows how technique counts for so much.
This is a dream team lineup!!!
❤❤❤
Aw hello Emily!
An italian chef said you also need to remove the pepper side of the guanciale. Because when you fry the guanciale the pepper gets burnt and highly affects the flavor in a negative way.
Nah you just cook it over lower heat and start the heat with it already in the pan so the fats melt out and protect the meat. You don't need to worry about burning the pepper that way it just takes a little longer to cook. You can even put some in later in the cook for a mix of crispy and chewy textures with the guanciale. You don't want to add plain pepper or more pepper to the fats and oils or it'll burn only later on if you need more. Removing the pepper side is removing a lot of flavor!
It's cooked at such a low temperature for so long that it's essentially impossible to burn the peppers. That chef is incorrect.
Can't go wrong with all 3 versions, well done everyone
To my friends! People who thought Saul didn’t add pepper to his dish. I’m here to tell you not ONLY did he add it once.. but TWICE. Watch again!
I would listen to these three for a podcast ALL day!
I love all three of them! Each has personality plus and I think we can see ourselves in each one of the cooks. Joe is me when I just want to eat. Lorenzo is a weeknight binge on next level and Saul is the "want to impress my wife" level of cooking.
Yeeeyyyy Joe! Lorenzo! And Saul! Love these episodes!❤
I haven't seen Joe before but he is great. I also absolutely adore Lorenzo and Saul. I am going to try this with Guanciale the next time I make it, for sure.
He’s also in an episode where he and Saul and another person whose name escapes me all have to make Mac n cheese in under 30 minutes
this is the golden trio we never know we needed
Surprised Saul didn't handmake his spaghetti, but using authentic Italian pasta? Definitely a level 3 move!
I've never had carbonara before, but watching these three makes me want to try to make it myself. I'd probably add something green to mine, though.
For carbonara you actually don't want to use fresh pasta, dried pasta gives a better texture for this. Check out the channel of Alex (@FrenchGuyCooking), he made an entire series on dried pasta and visited one of the best carbonara chefs in Rome in the process. It's really interesting if you're interested in the more technical side of cooking
@@lantami1199 Aha, that I did not know! You learn something new every day.
Saul knows he's Mexican, so he'll never be able to make true Italian handmade pasta.
Frank would've made himself Italian and then make his own pasta.
What kind of veg are you thinking? Unless you meant adding green to the pasta!
If you buy dried pasta, I recommend buying rigatoni, since they allow the guanciale to slip inside for the perfect bite!
@@dvklaveren Possibly frozen peas or fresh herbs!
I'm impressed to not see a single pea or ounce of cream. Well done all around!
YES!!! CARBONARA!!! My all-time favorite pasta dish.
Three of my favorites together, yes! 💖
I'm proud of them, they all did a great job and were consistent!
I would have liked to see the three chefs trying each other's pasta and comment on the differences - whether they still liked their own version or whether they now preferred an other version of the dish. That would have been helpful.
Uh oh, why does this feel like an epic showdown between Epicurious and Italians everywhere? May the Italian chefy gods have Merced on these chef’s souls!
I just ate, and now I´m hungry again. That looked delicious!
I thought Saul was going to do something weird with it, but he did it as correct as you possibly could. All three are pretty close, though.
where were this channel in my whole life!?🤩
I'm a level 3 bacon
cook
Bruh the delivery was goated
This trio looked pretty dope
all the best guys in one episode oh my gooooshhh
The dancing egg animation during Rose's segment was so cute!
I loved the side by side comparison of the salt for the chefs lol
I would gladly take any of those three dishes. Must be one of the show were the three are closer.
I was waiting for this video soooo...long.
btw FUERZA SAUL...MANTEN ESE ACENTO MEXICANO!! xD
Level 3 bacon. Joe is officially my favorite level 1 (would be Emily, but she graduated to lv 2)
Vincenzo is absolutely gonna roast this video when he reacts to it eventually
I wonder how he would react to Saul putting a egg yolk in the middle of the spaghetti
I’m pretty sure one of his chef friends in his Rome visiting videos serves carbonara a similar way, but I’d have to double check
All three levels are awesome.
lol these chefs are all so funny & cute! xD i like how when they pour in the salt the level 3 is just pouring it in there like there's no tomorrow LOLOL
Bravo! All three chefs contributed to my new carbonara recipe!
Drooling listening to this...
I love adding a bit of the red chilli flakes as garnish to my carbonara. Lorenzo gets it :)
YESSS just in time - just learned this recipe recently and will be going to rome in a couple months!
Such a greay episode ❤
Hello new guy! 😆 LOVE, LOVE, LOVE, Saul. So entertaining!
Oh yeah! I remember the weird, 1-off comment about throwing pasta on the wall and sticking. That actually made me laugh.
Great video!
Happy to not see widespread panic in the comments about how the eggs are cooked like I’ve seen other places. No scrambled egg carbonara.
Maybe I got lied to by big noodle… dot LOL Joe is my new favorite
Joe did not feel like a level 1 chef :P too well done ^^
This was the funniest episode 😂 I'm also a level 3 bacon chef
One of the few times that Level 3 actually looks level 3 due to technique rather than expensive ingredients. Dang Chef Saul
You can make it the exact same way the pro chef made it, with bacon or pancetta for accessibility. The key is not adding the egg whites, and adding some luke-warm pasta water to the yolks before you mix it in. The other two chefs had egg whites and you can see the "scrambling" effect this has on the dish which is REALLY really unpleasant.
I'll say this as well, I'm pretty impressed that the "amateur" didn't make a cream-based dish. It's just unfortunate he kept *all* the whites in
I love this level 1 Cook
I want to see @vincenzo's plate reaction to Chef Saúl's carbonara.
I saw this and though "Vincenzo is gonna have a field day with this " lol
Best Level 1 Chef Ever
Need more joe
Love carbonara, all 3 dishes looked yummy. Ha Lorenzo slurping the noodles - he always is fun to watch & has so much energy! Just saw him in Haunted Mansion on Disney+
It would be great to see four levels of candied yams… would really love to learn an elevated recipe
Evviva! Sono uno chef livello 4, visto che so farla molto meglio di questi tizi. 🥳
omg carbonara so excited for this ahhh
Big Noodle tried to lie to my boy joe smh
joe is a great addition. 3 favorites.
I love Joe’s energy
I love Saul. I wanna cook with him. He has so much fun in the kitchen.
Wanna try saul's carbonara.. Salivating here...
I absolutely love making carbonara and I'm watchin this to up my game a bit :D
More Joe please!
3:19 i love how professional he is
Refreshing to see level 3 not making their own pasta lol!
Saul is officially Italian after this dish because that sauce is perfect 🤌🏾🤌🏾🤌🏾🤌🏾
I LOVE Joe!! Also love Lorenzo and Saul!! GREAT LINE UP!!
3:25 "I like to do a big pinch of salt" while level 2 is doing a half cup and level 3 went with the full lol
3:30 that Lorenzo pasta drop 😱🤯😍
The throwing of the noodle was hilarious. Maybe he did get lied to by big pasta
Waiting for these guys to make an Australian series on this channel, sign me up!!!!
MI AMIGO SAUL, he is honestly my favorite human on earth second to frank🤣🤣
Joe is a Level 1 skill with Level 4 energy, in here for it 🤌🏾
🤝
This level 1 chef is pretty legit
Saul: "Thank you, Italians, for pasta!" Me, 1/4 Italian: "Igualmente!" 😅 Also, y'all underutilize Rose, I'd love a viewer's Q&A with her, nonetheless, another great episode!
igualmente? as in spanish for "the same" or "same"? im not getting it? it's not italian if that's what you´re going for.
Level 1 did better with the pepper than the other two. Pepper is an essential ingredient.
At least that's how the editing made it look.
This is one of the recipes I'd recommend for someone who is new to cooking. It's pretty simple, fast and the ingredients are cheap. Even if you make a mistake, you can try again another time without worrying about it being a huge investment of prep time or cost.
They all seemed pretty happy with their results. It's pork, cheese and carbs, how can you do wrong?
I'm disappointed level 1 didn't break spaghetti in half
Didn't break spaghetti in half, didn't use cream.
They don't make level 1s like they used to :-)
@@FutureCommentary1no peas too
But he did use American bacon. That’s a big NO for carbonara.
@@jesusgamboa9899 Actually, the most original carbonara was made with that, preciselly
@@thebuggymancer4155 🤣🤣🤣🤣
I think at the end of these, they should all get together and try each others to see the difference
Next I wanna see a level 2 chef upgrade to level 3
