This was so delicious, and easy to prepare. I made some substitutions based on what was in my kitchen but still, so glossy so savoury just fantastic.
I've cooked those several times, and they're an absolute favourite. Ginger, anise, peanut butter and soy sauce create something really special.

I maked this. It was so good! I did not have much chicken so added an egg as a substitute. Worked out really well. Thanks Marion.
Foolproof recipe, even without the proper ingredients. I made this and skipped the peanut butter and crushed peanut. I also just used ground black pepper and cayenne instead of Szechuan pepper and chilli powder. Pork mince instead of chicken. And I added baby spinach at the end. SO GOOD and so easy! Thanks, Marion!

I'm in the US and I've never heard of chicken mince before. From the pictures it looks like it's chopped up chicken so I'm gonna go with that. If anybody else can clarify, I would appreciate it. Actually I'll probably cut it into small strips, short small strips. I've made similar things to this before so I can tell from your ingredients and it's going to be good.

We love this dish and I’ve made it several times! A word of warning, though, don’t add two tablespoons of chili powder when it calls for teaspoons! Your lips will thank you!

Me too!! Today for the first time I finally made peanut udon noodles and OMG I should have made more! They are simply delicious!
This turned out pretty fantastic. I've done this twice so far, first time was with regular peppercorns, but a few weeks ago I bought a small bag of Sichuan pepper. It's amazing! Only I couldn't find udon noodles so it's spaghetti, but the sauce itself is magical. One minor nitpick, in the written recipe you mention white vinegar, in the vid you don't.

For those of you that have a peanut allergy, use tahini OR sunflower seed butter (unsweetened) instead of peanut butter! I find that a mix of both does the trick
Thanks for the recipe. I can't get Fresh Udon were I live. My family can attest that fully cooked Linguini works just great. A drizzle of Sesame Oil on the plate, intensifies the flavor.

I wanna eat udon noodles so bad but have never been able to find them
This is such a good go to recipe when you need something super delicious super quickly. It's so simple to make, but wow is it flavorful and satisfying. The peanutty sauce has some decadence and the texture of the chewy noodles is almost addictive.
A little miso paste might be interesting in there. You'll have to cut back on the amount of soy sauce if you do that, though, because it's really salty.
This was a hit with my family:))) I replaced the star anise with a couple tablespoons of chinese 5 spice, SO GOOD!
Yeah, 5 spice has Sichuan pepper and star anise, so it's a good match.

My clever hubby cooked this tonight, and it was fabulous!! Many thanks, Marion! In our household, my hubby is the way better "Asian" cook, whilst I cook great German and Italian. But this recipe was a little different to his usual repertoire and I think it will become a regular for us.

Suggest using chunky pb or (I know this complicates a beautifully simple recipe) chopped peanuts. Also a splash of Tabasco for the vinegary heat but that's just me. I love your recipes in original form, too! Cheers!

This one of my fave weeknight meal recipes of all time! I add a bit more peanut butter and garnish with yellow + orange bell pepper + cilantro + green onion + sesame seeds. Tastes sooooo good!

Howdy from St. Louis! I made this one again today but this time I needed to use up some refrigerated udon noodles and they took longer to come apart and I'm afraid that they got a little overcooked. Still great, though! I won't buy those noodles again! Normally the ones I use are shelf stable and not refrigerated. Oh, I also used diced pre-cooked chicken instead of ground chicken and it tastes amazing! Thanks again for a great one! I wrote on the recipe printout "Real good taste", so I knew I'd love it!
I followed this recipe pretty accurately and it wasn’t my favorite. I love peanut noodles but this wasn’t it. Add way more chili powder and maybe a different type of noodle? Udon has a weird texture when made like this, and I enjoy udon! You need more salt- whether thru soy sauce or actual salt.

Marion, if you see this comment, it would be helpful to know the specific kind of chili powder this recipe calls for. Is it thai chili powder?
oil floats on water. As an Italian states, you don't need oil in water. just salt if pasta. I am modifying this to make it much better
A little cornstarch slurry would go a long way for that finishing texture. Little too watery at the end. Splash of the noodle water as well would help. Still a very good recipe.

Szechuan Peppercorns are really quite difficult to get in Australia, have to buy them from a specialty Asian store, sadly not available in general supermarkets. Blasphemy, spagbol is awesome, particularly if made with lamb mince. This recipe does look yum 🐨 thanks for the recipe
You're so right, it's a shame it's not available in the supermarket yet. I was curious and looked up "Szechuan Seasoning" and it was a mix that contained no said Szechuan peppercorns! What were they thinking! All the more reason to go where the locals shop - I've been very fortunate, meeting helpful - and sometimes bossy - shoppers and store owners who know their own food inside out, and are there because it's less expensive, authentic and high quality. Be it Indian, Italian, Greek, Spanish etc., I've loved shopping in "their" delis / shops and asking questions; usually they beam with pride when you ask them and take a genuine interest, a lovely way to spend a Saturday morning browsing too!
PS: I can just imagine Mama Noi telling us what to get, "Buy this one, not that one - too expensive! No good!".

Can I make this without chicken stock? I already made it once and it was so good but I ran out of stock and I don't wanna go buy more lol
Not sure why but this was so salty neither my bf or me could eat it, went straight in the trash. I followed the recipe and even used peanut butter with no added salt, but it was spit out because of how salty it was 😭
If I want to make it veggie could I just use sliced mushrooms instead of the chicken?

Just tried this out, and found out the hard way that Vietnamese udon is very different from Japanese udon.
What do you mean?
@@devoutmoon Vietnamese udon is clear and much more gelatinous. Japanese is the udon we all know and love.
Could you just put the pre-packaged Udon noodles into the broth/meat mixture to heat through and separate instead of boiling them separately? I feel like this would help the noodles absorb the liquid and be more flavorful.

I love your recipes! What would you recommend to add for veggies? I’m struggling sometimes with that.. not too experienced yet in this cuisine style :)
I've made this a few times with different veggies, whatever I have on hand really!
Red Bell peppers and carrots add sweetness
Soy Sprouts or some thinly sliced cabbage (I prefer taiwanese/chinese cabbage) for crunchiness
leafy greens or broccoli for those extra yummy vitamins!
Whatever you prefer. I usually toss them in before I add the meat :)

I actually did not know how to cook properly before, but I kept following your recipes and instruction and tips and its been a game changer!!!!!
