For those considering buying their cookbook, I got it for Christmas and it quickly graduated to one of three cookbooks that are right on my kitchen counter for quick accessibility. I’ve not made anything from it that wasn’t absolutely amazing, and the explanations and information on different Korean ingredients and things have been so helpful to me as I am learning about my newest favorite cooking obsession-Korean food!! Well thought out, simple but flavor packed recipes….get it, you will not regret it!! ❤
One: warm up the jar of peanut butter to make it easier to scoop out & mix (people keep their peanut butter in the fridge in some places). Two: If you can't be bothered grinding peanuts, just use 'crunchy' peanut butter. Three: Use 'quick pickled' cucumber (a few hours/days in white vinegar and a bit of salt, store in fridge until needed) for a mouth cleanser - goes well with a lot of things, if you don't eat it all by itself first.
II keep my peanut butter in the fridge so it doesn't separate. I only use peanut with one or two ingredients, peanuts/salt. I'm not a fan of whipped lard, sugar, salt and peanuts, it tastes terrible. But eat what you want.
ok, being a peanut butter fanatic I HAD to try this - first I tried as you did it, and it was really good, but being the tweaker I am, I decided to try it again using CRUNCHY pbutter (a lil more - maybe a generous 1/2 tb) and a 1/2 pound of ground turkey......O.M.G. it was amazing on the rice noodles AND I did it AGAIN with just the ground turkey so I can use that on rice. Today I took 2 tbsp of the turkey mixture and added a lil sesame oil, vinegar & a 1/2 tsp of pbutter & shook it up to make SALAD DRESSING for my salad today - THIS IS ONE ALL PURPOSE FLEXIBLE RECIPE! Thanks Aaron! 😋😋😋
Made this for lunch today. Was pretty good. Added shrimp and cabbage. I recently learnt the trick for adding pasta water to the sauce. That worked pretty well. Thanks for a great recipe!!!!
I read your comment here about adding veggies and I went ahead and braised an entire half of a thinly sliced cabbage while I cooked the sauce. I didn't even add any noodles, just the perfectly cooked cabbage & sauce, and it was scrumptious!

That combo is pretty alien to me but I'll give it a shot! I'm not a big fan of peanut butter in general but I *have* made peanut butter and sweet pickle sandwiches and am a big fan of them. Came up with the combo by accident out of necessity. Other than that I am also a HUGE fan of Thai peanut curry dishes (although that seems very hard for me to find for some reason) and peanut sauce but I'm very picky about it. Also a fan of pad tai. So this sounds relevant to my interests.

I happened on Aaron and Claire looking for a UA-cam cooking channel I had previously watched. I so looove Aaron. He is hilarious and takes the intense out of cooking 'gourmet.' He is informative without being affected and completely funny. And Claire does a great job describing the tastes and textures. I believe this is going to be my new favorite cooking channel on UA-cam.
Hi Aaron and Claire from Southern California. I just made his for my Vegan Daughter. I added tofu to amp up the protein for her. She loved it! I have a tip that I accidentally discovered regarding ginger. I purchased a large bag at Cost Co and froze the ginger. When I need ginger I just grate it frozen and it’s so easy! I buy the organic and do not peel the skins…flavor is very good and I always have some on hand for your awesome recipes! Thanks again.
Made this tonight and it’s the best spicy peanut noodle sauce I’ve tried. Stir fried a bunch of carrots and peppers before sauteeing the noodles in the sauce. Thank you!

Absolutely delicious noodles Aaron….I’m in the ‘I’m allergic to cucumber club’ so rather than itch my way thru my meal I used coriander (cilantro) instead. A 10/10 from me & greetings from South Australia

I made it today with ginger, white onion, crunchy pb, chicken stock gochujang paste and soba noodles. And soy sauce, vinegar and parsley and cucumber ribbons to garnish. It was mild, just as we were told and tasted good. The easiest way to make peanut spicy noodles I can imagine.
So I did make these using your recipe. It was so good. I've never had peanut noodles with cucumber. But I really loved the crunch and freshness. This recipe is a keeper. I also used udon noodles because that's what I had. Worked beautifully

Thank you for the recipe. I love peanut butter noodles, but no one else in my family does, so I’m always stuck with too many leftovers when I make them. This is perfectly sized for 2-3 meals, which is important because I get tired of eating the same meals, even delicious ones.

Just made this with a few small modifications since I didn’t have a couple things in the format directed. So darn good. Saving this for another time. I tried making the NYT cooking peanut butter noodles and did not like at all. These are amazing!
I tried this today but I could not find oyster sauce so I tried hoisin sauce thinking it looks similar even though they’re different. The grocery store nearby did not have oyster sauce. It was really delicious I am going to have it tomorrow and the day after as well. Thank you Aaron. The cucumber is such a wonderful cooling crunchy texture to pair with the creamy spicy noodles.
I made this last night. I always taste a sauce after I've mixed it to see if I think it needs any adjustments. I tasted the sauce and thought, that's not nice! I wasn't going to waste it so went ahead with the rest of the dish. Once it was mixed with the garlic and ginger, plus the green onions, oh my goodness, it was absolutely SUPERB! I felt myself doing a Claire mmmm mmmm MMMMMMMM MMMMMMMMMMMMMM!!!!!!! I used pappardelle pasta noodles and it was spectacular. It definitely made a difference adding some pasta water to the dish. I was going to use regular hokkein noodles, but I wanted that pasta water. Thankfully I have enough left over to take to work for my dinner tomorrow night!
My p-nut sauce uses chunky, demerara brown sugar, coconut milk, a pinch of salt and hot ground peppers. Much simpler. Just as tasty. Also makes a great dipping sance.
If you haven't already, try shirataki noodles, nowhere near as good as real noodles, but not bad. I specifically like the shirataki tofu noodles, I think there's a little more carbs, but a bit closer to real noodles texture.
At first, I wasn't feeling like this would not work at all. Then my hangry bird reminded me that I am always saying that I am willing to try anything once. So, just made this for lunch 20 minutes ago. Definitely surprised by how good it was, especially for being a 15 minute meal. +1 for Aaron.

I recommend using spaghetti noodles. Thick noodles works much better than thin noodles.

Where I live, they sell spicy peanut butter. Crunchy or smooth. It's not without it's charm, useful for stuff like this.

This was really good. I added toasted sesames since we only had sesame oil, but it was awesome. And a lot more filling than you’d think.
