This is a fabulous recipe. I made it for supper this evening. I did add some lemon grass to give it a bit more of a Thai flavour. Thank you, Marion. I will definitely be trying more of your recipes. I spent two months in Thailand back in the late 70's and just loved their food.
My dad is a cantonese chef for 35 years and he is retired now...he use to make the rice noodles for us when he is pretty busy and want to make a quick meal. For us, it’s just like chinese version of kraft dinner. But Marion has that dramatic way to present recipe, almost a food porn channel. Now that i left home, i will call my dad and pretend that his grandson is claiming his famous stir fry noodles...it will be ready in the next 30 min for pickup. So good to have a son : )

Vanessa, I highly recommend keeping a chunk of fresh ginger in your freezer. Freezes beautifully and easy to add to recipes by using a microplane grater. 😃

I made this dish a week ago and it was delicious. I had dried wood ear and shiitake and ordered fresh ginger on Amazon. White pepper really is special. Will make this again.
Made this today and it was delicious! Came out like a dry sauce which was really nice (aka not sopping wet in sauce aha) loved the ginger kick to it too and the pepper chicken xx
I made this today, didn't have mushrooms so we subbed in some cauliflower, carrots and broccoli. It was delicious, it now apart of our quarantine lunch menu lol.

That's funny...in my homeland Suriname, we call the rats-ear mushroom, dagoe yesi, which is translated 'dog's ear'. We usually find them dried, and they're soooo good in Chinese stir fries as well. Haven't seen them in my local grocery store. Might have to import a coupla pounds 😁

I made this! It was very tasty and easy to make. Thanks for the recipe! Once I put the mushrooms in, the whole thing got too wet to really fry, next time I’ll try frying the mushrooms separately first and then adding them in.
Lovely. As always, my preferred variation is to use something called “koo chye” rather than spring onions as the final addition. Even better if there is the white version of koo chye. The flavour is awesome.
Here in Tokyo we gently pull the Shiittake stems from the tops and then cut the hard end off the stems and finally peel the outside skin away from the stems. Discard the skin as it is tough. Now shred the inner part of the stems into threads and use in your dish. Mottainai: means do not waste.
I have never seen young ginger! I wonder if my international market is open. So many places are closed. But I have the chicken and noodles and most everything else

Great recipe that I cooked tonite, not sure about the fish sauce though, it's not so much the taste but the smell that remains in the house for ages ! The fresh mushrooms i used yielded a lot of moisture, I'll have to cook them separately next time, besides that we enjoyed this a lot, thanks jolie Marion.
Hi Marion. You are looking radiant. Thank you for this recipe. Question. Oyster sauce and Oyster flavored sauce, are they the same thing? I have been to about 4 stores in my local asian district and can only find Oyster flavored sauce.

I made it and it turned out perfect! I used regular soy sauce and portobello mushrooms.
