I follow a whole food, plant based, low fat, oil free diet - I do use salt but it's always optional in my recipes and I typically make suggestions for sugar alternatives in my recipes if I include it. I've listened to a bunch of the doctors (Esselstyn, Greger, McDougall, Campbell, etc.) and I jive with McDougall the most. Salt & sugar are not health foods by any means but I'm not completely against including them sparingly.

I've never tried with quinoa but you could try it? I have to imagine the consistency might not be as good (probably denser) but I'd be curious to know your result so let me know!

I have made a version of this without sugar, vanilla and apples yet adding tahini. I have also made it with strawberries (love this version better).

Would it be possible to substitute the lemon juice for apple cider vinegar or is it used more for the lemon flavor and tartness?
That should work fine! The lemon juice is such a small amount, it's really just to activate the baking soda

375 and 25-32 mins depending on your oven for muffins-50 mins for the loaf.
