  • Quick and Easy Carrot Cake “Blender” Muffins (Vegan, WFPB, GF, Oil-Free, Refined Sugar Free)
    These Quick and Easy Carrot Cake “Blender” Muffins are so hearty and so delicious that it’s almost a shame that I’m forced to list all of the things they aren’t (for SEO purposes) before I can tell you how amazing they actually are. They are vegan and whole-food plant-based, which means they don’t contain any dairy or egg, but they also happen to be gluten-free, refined sugar free, oil free, soy free, and they can be made nut free by simply not putting the nuts on top.
    Now that I’ve gotten everything they are not out of the way, I can tell you that these are pretty much the easiest muffins you’ll ever make. Whole ingredients are put into a blender in two stages, before being combined, and then divided into 6 lined muffin cups. This recipe makes the perfect amount of muffins to make for an individual to eat throughout the work week, or for a family to enjoy on a weekend morning.
    Did I mention that they taste like CARROT CAKE?

    They look yummy! I recently started baking with oat flour to try to get my picky toddler to eat something healthy. I was surprised how similar it tastes to white flour.

    This is exactly what I have been looking for. I'm in my first trimester of pregnancy and am tired of making my cinnamon maple banappleberry oatmeal every morning so finding something healthy to make ahead of time, so I am not standing over a stove every morning is going to make life just a bit nicer for me. I love that you include chickpea flour, as it's a nice extra bit of protein.

    Made these today - yummy spring break treat that I will make more often. I replaced some of the oat flour with wheat and some of the banana with oil (haha, reverse healthy modifications). And I used some minced apple in place of the raisins. Excellent texture and love the coconut in there

    This turned out pretty good. I thought I had chickpea flour, but after I got most of the things together I realized I chucked it because it tastes terrible and figured I'd never use it again. So I used 3 tbs egg replacer. The texture was pretty good. Although I probably could have scaled back on the baking soda a little since the replacer has some I believe. Also could use a touch more sweetness for me personally. Might try adding another tbs of maple syrup or brown sugar next time. Thanks monson!

      Chickpea flour is AWFUL in its raw state. It's truly horrific. If you tasted it in something before it was cooked, yeah, it's the worst. You should give it another go, especially for baking. Did you use the amount of egg replacer to replace 1 egg? And yeah, I made these on the unsweet side. For most folk (my partner included), they'll want to make them a bit sweeter.

      @@MonsonMadeThis it is!!! I was surprised because I like chickpeas but the flour is foul! Lol. I followed a recipe for peanut butter chickpea cookies and after they were baked they were sooooo bad! I used 3 eggs worth of egg replacer, should I have used just 1? It turned out good but had a little bit of baking soda taste and not as sweet as I would have liked but with a little Saskatoon berry jam is was lovely. I also made a second batch using lemon extract and poppy seeds which was nice but could have used some lemon zest I think. Very artifical lemon taste lol.

      @@MonsonMadeThis it made another batch and used lemon juice instead of apple cider vinegar, I also used the zest of a whole lemon and a couple packets of true lemon crystals. I also decreased the egg replacer to just 1 tbs and added a couple more tbs of maple syrup. Turned out great!

    Soooo I just made these and at first when they were fresh they were pretty good. However, the next day I was not a fan. The chickpea flour gave them a horrible aftertaste! I would recommend using a flaxseed egg or chia seed egg replacement instead of chickpea flour, but that’s my personal opinion and preference.

    Only 200 calories? Lacking oil helps a lot, but a 200 calorie snack is like eating 16 Dorito chips. NOW that that's out of the way, I can't wait to try these as a desert. I love carrot cake! Other versions of this would be awesome. The orange would be especially fun -- I used frozen o.j. concentrate to sweeten a salad dressing recently which turned out tasty. How about coffee flavored? Trade out the almond milk? A million years ago I added instant coffee to bar cookies and loved it.

      Actually, I just refigured on Cronometer, and they're closer to 170... The original "under 200" was the chocolate version. So, eat up!!! I just tried a lemon version and they came out great. Orange is also really really good, too. The chocolate ones have a bit of coffee in them! I'll definitely share more the more that I test! Thanks!

    Can I substitute aquafaba for the chickpea eggs? If so what would the correct amount be? And would I have to whip in up first and then fold them into batter at end?

    Perfect. My Dad's favorite dessert is carrot cake. Hopefully, I will get to see him in person again some day soon and make these for him. However, this looks simple enough, with "normal" kitchen ingredients, so he could make it himself. To really entice him, would a drizzle of thick cashew cream add anything to the carrot cake taste? Mind you I am working with someone from a super SAD diet and much highly processed foods.

      I think the best way to transition to a vegan or plant-based way of eating is too find ways to make and eat your favorite foods, but just the vegan or plant-based version. If he loves carrot cake, then make him a vegan carrot cake! Give these a go and let me know what y'all think!

    Carrot cake was the first vegan cake I made that actually turned our BETTER than the normal one my mum used to make and it has become my fam's favourite! Having said that, it was far from healthy considering that I added quite some oil and brown sugar in there :D I think I'll have to experiment with your recipe to make my own version a bit more whole-food based! Do you think in place of raisins I could add more grated carrot? Also, how about substituting the banana with apple puree? That's what I usually do with my carrot cake as I am not a fan of banana aftertaste in any non-banana :D

      I think more carrot would be fine, as long as it's squeezed out, or the liquid is compensated for. I think apple sauce would work well, too. I just don't know the exact amount to use...

    I've come back to this recipe b/c I like using steel cut oats in place of rolled for added nutrition. How do you think this would be with pumpkin puree in place of banana?

    Does the banana taste come thru strongly, or is it pretty subtle? I'm not a big banana fan, but would love to try these. You seems to be a real kitchen magician, Mr. Monson!

      So, the ripeness of the banana seems to affect the banana flavor. When I've used more yellow bananas, it's pretty much not there at all. When I've used very ripe bananas, it has a subtle banana bread aftertaste. If you're not a banana fan, I would use the most yellow banana I could find. Thanks!!!

      So I bought a 'nana and didn't make these until it was super ripe, duh. I made them with carrots, coconut and chopped dates (cannot stand) cooked raisins. The banana does shine thru a bit. I see according to Mr Google I could sub applesauce. So that's my plan for next time. They are super good and esp with Fall/Winter approaching I want them more!

      Thanks. I love it. I talk about it a bit more in my recent kitchen gadget video... As long as it's not a large quantity or as long as I'm not trying to blend hot ingredients, it's the only blender I use. My Vitamix gets no love.

      Thanks! In terms of the oats, you could just use 1 1/2 cups of whatever all-purpose flour works for you. In place of the banana, you could use 1/2 cup unsweetened apple sauce. And the recipe doesn't have any dates in it, so you're good to go there!

      I've found that the riper the banana, the more banana flavor in the muffins. So, depending on how much you want the banana flavor to come through, should determine when you use the bananas. Let me know how it turns out!

      Not yet. However, the chocolate version of these muffins is so good! I actually tested the recipe again today... As soon as that comes out, I could definitely see using that batter to make a cake. Stay tuned!

    If the chickpea flour is made from sprouted chickpeas it’s a lot less bitter, actually it has just a hint of bitterness.

      Why not use the liquid from chickpeas? Or flax seeds with water. Also there is another vegan egg replacements. I dont innerstand why he is using chickpea flour when there are so many other good choices.

      I've tried sweetening things with dates, and I'm not really a fan. I can never get them down small enough, and I just don't think it saves any calories at all.... You could always just leave out the sweetener if you don't like maple or coconut sugars. The banana and carrot do a decent job of sweetening things up.

      Try experimenting with Dr. Greger's date syrup recipe. You'd want to make it less watery for using for baking with :))
      l'm guessing you want dates to keep the recipe whole food? lf yes, dates or banana are the best sweetener. You could also try with extra banana maybe?

      @@cattitude7809 I would try making a batch using 1 very ripe banana, and just omit the sweetner. I accidentally forgot the sweetener when making a batch, and they came out great. Not sure what an extra banana would to to the texture or structural integrity of the muffins.

      You can use a flax egg instead. 1 Tablespoon ground flax seeds and 3 Tablespoons water, let sit for about 5 minutes or a little longer and use like an egg.

      I used my Breville Smart oven on the convection bake setting.
