Also, I wrote down some measurements in grams / milliliter (for anyone who needs them - including future me lol): - ca 150 ml plant milk - ca 320 g flour - 1 package vanilla sugar (I didn't have extract) - 175 g sugar - 100 g butter - ca 200 g blueberries
Truly the best blueberry muffins! I’ve been vegan for over 3 years and have tried countless recipes. These are my favorite by far. The only swap I make is a 1 for 1 replacement cardamom for the coriander because I don’t have ground coriander! I’ve made these multiple times and they come out amazing every time! Thank you for this 10/10 recipe!

These are FABULOUS! The lemon zest/juice and the CORIANDER....Game changer!!! I am making them right now for the 2nd time but using blackberries. Hoping they turn out just as good as the blueberry ones did. Thank you for sharing this recipe.
@@8yearsago153 I ended up just using the blueberries THAT day...but I just made a batch with a mixture of blackberries and blueberries. The blackberries were huge so I cut them in slices to make them equal in size to the blueberries. They turned out fantastic!
I just ate my first vegan muffin that I made , yum. I could really taste the lemon and coriander, it is a really nice touch. Put some vegan butter on and a couple of tea and breakfast for the next few days. So happy I made them !!
I made these last night. While they were ok, I found the batter to be very heavy, more dough-like. They took longer to bake as well. Using frozen blueberries is a bit of a challenge as they inevitably come from the bag with a lot of moisture/ice bits that without rinsing and refreezing before use ended up making more or less purple muffins.
Just put my first batch in the oven, very small kitchen but watched your video to make I was doing everything correctly. The batter is really good. I want to see how they cook for the first batch and I will determine size for the next batch. Cannot wait to taste them when they are done. Will post again later. I looked at a lot of vegan blueberry muffins, and my far this is less complicated and quite easy to follow.

I have! I’ve tried applesauce, bananas, flax egg, vegetable oil. Flax egg is a fine replacement for Aquafaba here. Bananas give you the banana taste if you’re ok with that. Overall though, unless you use the vegan butter, you don’t get the buttery flavor or softness. You can def try healthifying this though!

I used to have that problem with digestion, but found some help from other UA-camrs betaine hydrochloride, papaya chews, aloe Vera juice etc there is help keep trying

I'm a big fan! Have successfully tried quite a few of your vegan recipes. But for some reason I'm unable to get these muffin recipes right! I've tried it thrice! And now I'm obsessed and want to perfect it coz a) your recipes that I've eaten are soo good! b) I can only imagine how wonderful they taste with the lemon and coriander! Because the batter is so tasty! So I don't have a stand mixer, I use an electric whisker, mostly to whisk the wet ingredients because once I add the buttermilk, the liquid starts separating.. My muffins so far always come out gooey, releases lots of oil, collapses when out of oven, and bubbles for a bit. Am I over mixing? Is my soda too much? I've tried elimination too like I've used both earth balance and Miyoko, mokfruit sugar and regular sugar. Really appreciate your input!
In the blog the recipe calls for 1T bp and 2 tsp bs...just wondering if these are typos coz i tried this recipe last week and the bp/bs taste were so strong..thanks

Yes buttermilk is a game changer.
I always used buttermilk as opposed to whole milk.

Lovely! Have you tried other sources of the moisture source? Mashed avocado, apple sauce, flax/chia meal/egg, banana, etc.

Of course you can make those swaps, but watch out because coconut milk has much more fat than almond milk.

Yes. The liquid straight from the tin, as is, is good quality aquafaba.
