  • Magic cookie bars are an old fashioned classic recipe that we have recreated into a healthy sugar-free plant-based dessert. Layers of coconut, nuts, and chocolate chips make them magically delicious. We also pay tribute to Mister Rogers today to celebrate his upcoming birthday on March 20th.

Jill I have two suggestions. Wet the baking tray and the parchment will stick to it . Secondly, trying to grind the dates raw is difficult for the most powerful food processor or blender . I par boil my dates to make a smooth paste whenever I'm making my oat bars to avoid damaging my food processor or blender motor .The parboiling adds moisture to the final product so it holds together and doesn't crumble into a mess . Mr. Rogers would be honored he had such a positive influence on generations of people .

50 going to be 51 next month. I grew up with Mr. Rodger. As an introvert. I enjoyed the slow and intentional moments. Where I could really remain calm to absorb all of his messages of the day! Too much crazy shows now. Everything gotta be fast with drama. Thank you and Mr. Rodger for letting us get back to serenity and reflection.

I tried making these and feel they need more moisture in bottom "crust". They are falling apart. I think this could be achieved by either soaking the dates, using majool dates or adding a bit of coconut oil to the crust. I'm not sure I can fix the batch I made and don't think anyone else will eat them. I used Lilly's chocolate chips just because I didn't want to wait to make them. Its possible I was heavy handed with the oatmeal but I don't really think I was.

I'm really looking forward to trying this :) Which model of the NutriBullet is that? I notice you're using dry ingredients in it, do you know if it's possible to use a NutriBullet Pro 900W for that as well?

I have the Nutribullet Pro but I think mine is 1200 watt. The 900 is plenty powerful though 👍

Jill, since I have a big bag of oat flour that I need to find a use for, what would be the measurement of just using straight oat flour, in lieu of grinding my own from rolled oats? I'm going to try baking these in my solar oven. Thank you!
