Adjust the wet if you use carrots, banana, pumpkin, zucchini, etc. But regular cupcake papers stick to oil-free muffins. Instead, try parchment muffin papers.

Delicious! I made these with Spelt flour and followed the rest of the ingredients. I made them into MINI muffins and it made 24 - which was great. I didn't want a huge muffin so this worked well. I will make again but I think I'm going to try substituting date paste for the brown sugar. Should be fine. Thank you for sharing!

Hi, I just saw your recipe and these muffins look delicious. I have 2 questions for you. Did you use sweetened or unsweetened applesauce? And can I use almond milk in this recipe?
I used mashed banana but unsweetened applesauce would be ideal to avoid added sugars. If you don't have applesauce on hand, just use your blender to puree fresh apples. I've done this many times. I think any plant milk would be fine (I prefer unsweetened in recipes). Good luck!

another thing that satisfies the sweet tooth besides fruit.. i use sprouted bread with maple syrup and cinnamon. it's so good
