The excess heat from the surface will keep cooking the steak and your mid rare steak will become medium/medium well and so on.

You, generally speaking, should season the steak immediately after cooking - versus before - and let it rest a couple of minutes after cooking without cutting it. That resting time is precious time for the inside to be cooking in its juices and provide some extra flavor.

For a better sear...try cooking frozen steak straight from freezer! I cook 1" thick ribeye about 10 minutes, flip, and add meat thermometer.....
