- The PERFECT Red Velvet Cupcake recipe. This recipe has been carefully engineered for soft, moist, fluffy, yet sturdy cupcakes that won’t fall apart when you take them out of their liners.

Ingredients
3/4 cup whole milk 177ml
2 teaspoons white vinegar
3/4 teaspoon red gel food coloring (I use Americolor "red red" or "super red"
1 ¼ cups all-purpose flour (155g) I don't recommend substituting cake flour or any other flour
¾ cup granulated sugar 150g
¼ cup light brown sugar firmly packed (50g)
2 Tablespoons natural cocoa powder 12g
¾ teaspoon baking soda
½ teaspoon salt
4 Tablespoons unsalted butter melted
¼ cup canola oil may substitute vegetable oil or another neutral oil (60ml)
1 large egg room temperature preferred
1 ½ teaspoons vanilla extract
1 batch Ermine frosting (sugarspunrun.com/ermine-frost... scroll down to the notes section for some other frosting recommendations)

Instructions
00:00 Introduction
00:47 Preheat the oven to 350F (175C) and line a 12 count cupcake tin with paper liners. Set aside.
00:52 Combine milk, vinegar, and food coloring in a large measuring cup, stir together and set aside.
02:07 In a large bowl, whisk together flour, sugars, cocoa powder, baking soda, and salt until well-combined.
02:37 Add melted butter and oil and stir well, until ingredients are well-combined (the mixture will be thick).
03:31 Add egg and vanilla extract and stir until combined.
04:00 Gradually add the milk mixture and stir until all ingredients are combined and batter is smooth.
05:09 Fill each cupcake liner ⅔ of the way full with batter, (do not overfill or cupcakes will collapse, if you have leftover batter discard it or bake separately). Transfer to 350F (175C) preheated oven and bake for 17 minutes or until a toothpick inserted in the center comes out clean or with moist crumbs (not wet batter). Allow to cool for 10 minutes in cupcake pan then transfer to cooling rack to cool completely before frosting.

My first foray into red velvet and I'm so glad I chose your recipe! Overfilled my pan cos I was too lazy to use another one. Ended up with super high domes. Solution: sliced off the tops and made macaron-like thingies by sandwiching cream cheese frosting in between 2 tops. Kids loved them! Thank you so much for sharing this recipe! Just made your red velvet cupcakes for the first time as well as your lemon crinkle cookies (which I have made before) to take to a friend's cookout. Both were a big hit, as I knew they would be, because I had made your red velvet cake for Thanksgiving--in a word--WOW! Instead of cream cheese frosting for the cupcakes, due to refrigeration challenges, I made the ermine frosting. It was a new frosting to everyone, but they commented on how light and nice it was, and not too sweet. I rarely post comments but wanted to say thank you for your recipes (also love your chocolate crinkle cookies--great! Every Friday I make your pizza dough and have referred others to your website). As noted in some comments, your videos are very helpful. Thanks again!

best cupcake ever! i was hesitated to try cuz I didn't want to mess with food coloring, finally decided to go for it, so moist and flavorful, thank you so much Sam, you make baking fun and easy, people you gotta try this one out.
btw I used your cream cheese frosting with this one, i half them and reduce about 50g powder sugar, and add about 2 tsb corn starch, works great

Sam, I trust you so much which is why I used this recipe and followed it to the letter. Only exception was that I used my stand mixer. Just wanted to say I got 16 cupcakes out of this and I did not under or overfill. Yes, it perfectly makes 12 but I would have missed out on 4 additional cupcakes had I not grabbed my extra tin and threw a fee liners in there. Might be a nice to mention in the recipe rather than suggesting discarding. But I do understand not wanting folks to be tempted to overfill with the excess.

Tried baking these and the cupcakes are amazingly fluffy and not overly sweet. Failed on the ermine frosting part though, but I'll try making it again soon. I think the butter was too warm so it didn't whip up nicely. Anyway, thank you for this wonderful recipe! ❤

You could make this into pink velvet. You would need to remove the cocoa powder and use flour instead. Then you will need to just use pink food coloring. It won't taste quite as good but it should still work. :)
Have these in the oven baking right now. My batter turned out very loose and brown instead of red. Oh well let’s see what they taste like

What they never warn you about red velvet cake is that afterward when you, well, eliminate, it will be tinged with red, which will scare the, well, what we're talking about out of you. Remember, it's just the cake!
Not sure if you’ll see this on time but I don’t have whole milk, just 2% but I do have buttermilk- should I use the 2%? Love all your recipes ❤❤❤
Sorry for the delay! I would just use the 2% milk in a situation like this. Having less fat could potentially reduce the moisture in the final product, but it should still be good. :)

I've always wondered about preheating oven for baking. When exactly do you start to preheat it. And for how long. Like some times if you're trying a new recipe it takes a while to get everything done then would you still start preheating it right before you begin?
It’s really dependent on your oven and the temp you are heating it to. Some take a few minutes some take a really long time. I typically just turn mine on when and i start and if it hasn’t fully preheated it’s normally pretty close. 😊

I tried this recipe for three times now and always turned out great. My family loves it!❤ My only problem is i dont get the flat tops like yours does😢 mine always peaks.😢 what am i doing wrong? Also i bake at 170° bcoz my oven can't be set at 175°. So i bake 170° at 20-22mins.

Tough question to answer because of everyone's differing levels of sweet tolerance. It's definitely sweet as cupcakes are supposed to be but it's not over-bearing.
