The Fudgiest, Greatest Chocolate Cake

- One of my all time favorites, this is my moist, fudgy, and completely from-scratch chocolate cake recipe. It comes together in one bowl and pairs well with any frosting!

Ingredients
1 ⅔ cup all-purpose flour (208g)
1 cup brown sugar firmly packed (200g)
1 cup sugar (200g)
¾ cup natural cocoa powder (75g)
1 ½ teaspoon baking soda
¾ teaspoon salt
½ cup unsalted butter melted (113g)
½ cup neutral cooking oil avocado, canola, or vegetable (118ml)
2 large eggs + 1 egg yolk, lightly beaten room temperature
2 teaspoons vanilla extract
1 cup buttermilk¹ (236ml)
½ cup hot coffee² (or 1 teaspoon instant coffee dissolved into ½ cup hot water) (118ml)

Instructions
00:00 Introduction
00:14 Preheat oven to 350F (175C) and prepare two deep 8" round cake pans⁴ by lining the bottoms with parchment paper and lightly greasing and flouring the sides. Set aside.
00:18 In the bowl of a stand mixer fitted with a paddle attachment, whisk together flour, sugars, cocoa powder, baking soda, and salt.
02:24 Add melted butter and oil, stir well.
03:29 Add eggs, egg yolk, and vanilla extract and stir until well combined. Pause occasionally to scrape sides and bottom of bowl.
04:43 Gradually add buttermilk and stir well.¹
05:50 Add hot coffee, stirring until ingredients are well-combined (be sure to scrape sides and bottom of bowl again).²
07:05 Evenly divide batter between prepared pans. Bake on 350F (175C) for 35-40 minutes (toothpick inserted in center should come out with moist crumbs).
08:15 Allow to cool for 15 minutes before inverting onto cooling rack to cool completely before frosting.
08:30 Spread a thick layer of frosting over the top of one cake round. Top with second cake round and evenly frost cake. Slice and serve.

¹If you don't have buttermilk on hand, please see my post on making an easy buttermilk substitute!
²You can substitute with hot water if you don't have coffee, but do make sure it is hot! See the post for more information on why I use coffee and why it is important that the liquid be hot.

⁴You can use 9" pans instead, but the cakes will need to bake for less time. I'd start checking the cakes at 27/30 minutes. Please keep in mind that if your pans are dark-colored the cake may also need less time to bake.

@@jennifertan7079 I’ve been subscribed to this channel for well over a year, I watch every video and I guarantee you that it’s not too much sugar. There are lots of people on UA-cam who make videos of themselves cooking a recipe for the first time while pretending that they have made it before. This isn’t one of those channels. Sam is very clear about the fact that she researches and tests everything first with the help of her two lovely assistants, Endora and Tabitha, who don’t like be on camera for some reason.

One thing that I think is important to add for any people who may be thinking about going off script and using regular milk instead of buttermilk (or a homemade acetic milk) is that you will need to use baking powder instead of baking soda. How much, I don’t know because I don’t bake cakes. I do know that baking soda needs acid to interact with and it won’t have enough of it with regular milk. Baking powder comes to the party with its own powdered acid (cream of tartar, I think) that’s activated by the liquid in the recipe for leavening. So, if you use baking soda and regular milk, you will get brownies at best or an unusually large chocolate flavored hockey puck at worst. My recommendation, just buy a 12 ounce container of buttermilk for about a buck. Excellent video, Sam.
I wonder if the lack of baking soda id the reason for Hershey's instead of Dutched? I have NO hershey's I have powdered buttermilk though...Amazon

I made this Monday night and it was so delicious! 😋This was my second attempt at making a cake and I decided to follow your because it was straight forward and easy to follow. I decided to not use my Kitchen aid stand mixer and work everything together in a large bowl with a whisk and spatula. While making it I accidentally poured in 1 cup of hot coffee instead of the 1/2 cup per the recipe. I thought I messed up but decided to bake it anyway. The cake still turned out amazing! When I make my "death by chocolate" cake, I usually dust my pans with cocoa powder as opposed to flour. Just my preference.

I just made this cake. Followed the recipe exactly for the cake. Did not have round cake pans. Baked it in a Bundt pan 350°F 40 minutes exactly. so moist and delicious. Cut the peanut butter frosting recipe in half since I was frosting, just the top of the Bundt cake. Drizzled with the ganache. 😋

This cake looks amazing! Sam, I notice you tend to opt for natural cocoa powder vs dutch processed. I always have Guittard dutch cocoa powder around for a recipe or two of mine, but should definitely just pick up a container of natural cocoa powder too. Any reason you choose the natural over dutch (color, balance with the sugars you use, acidity, stronger flavor overall, etc)? Thanks again!
I've always used the hot coffee to bloom the cocoa. I do it first and it's cooled enough after the addition of the eggs. Ever tried it? Love your videos and your kiddo!
I do it this ways for some recipes like muffins and it works great! Just found it doesn’t make a big difference in most of my cakes.

What I don't like about using a chocolate bar instead of powdered cocoa for the frosting is how there's such a short window of time between being too hot to use and too cold so it's stiffening up again. That or heating it up too quickly where it makes the chocolate grainy.

How much buttermilk?
Sam, you should weigh your batter when pouring it your baking pans, that way you can get even amounts in each pan.

I'm assuming you mean unsalted butter and salt? This is done to control the salt in the recipe. You have a general idea of the salt content of salted butter but not always exact. :)

911 baking emergency Sugar Spun! Please help! No matter what I do, the edges of my brownies ALWAYS turn out over baked & dried out. It's so unappealing that I cut it out and toss them. The rest of the brownies are great. I've tried 8x8 metal, glass & aluminum pans. Watched many UA-cam videos (especially yours) but can't get it right 😫

You can totally just use a knife or not level at all! I can’t hold the knife straight to save my life tho so this was mercifully gifted to me 😂

Hi im just hopin u would help me out, i asked sooooo many people but im sure u know how it is, people nowadays dont like helping others , people nowadays don't understand that not the whole world have baking knowledge so wen a person ask its because he dont have knowledge over that matter, not every1 know that u need only certain amount of batter in pan if using less then you wil get thin cake and if using more its going to overflow and centre remains uncooked, i never knew that, so it just happened that i felt for cupcakes/ muffins the 1 day an i wanted 24 cupcakes or more in total an therefore i had to ask u questions like can i use less batter to get the xtra so u said double the recipe because u knew that wen using less batter cakes dont rise but the thing is everyone dont know that, i only got to know now tooooo recently but before i never knew, all these laws , im sure there's more people that dont know , so coming to my question springform pans whats all the different sizes u get in springform pans

No, you can't do either of those things because you will end up with a mess. You will also be wasting ingredients.
I don't recommend it, unfortunately the right leavening agent is very important here and the cake won't turn out properly without it.
I thought you would have added a 70g or so of melted chocolate. It would have increased your fat/flour ratio and hence the fudginess of your cake!!! That's why you need Luke there with you!!!
Just try it as it; it’s sooooo flavorful and fudge-y because of the coffee, yet is so light! It’s a crowd favorite!

Melted chocolate actually dries it out, cocoa is the best choice here :)

Made this recipe and it’s delicious. Not dry at all. Also made with melted chocolate and I prefer this method. I took her advice for the natural cocoa as well.
