This is literally the best red velvet cake I ever had. I am a pastry chef and baker and I can actually attest to this recipe and say it's really good. Moist and not a dry cake at all.
Fantastic! Thanks so much... I've tried to find the answer to one question for months now- as a new baker, when I use convection on my oven (at home), am I actually baking at 25 degrees less than 350? It seems every baker uses convection so I assume that means on convection what the recipe calls for. Please, help a new baker out... Thanks again
Unfortunately I don’t have a convection oven so I’m not really sure what the adjustment is to cook with it. A quick google search says yes set your oven to 25 degrees lower but I can’t say for sure that is accurate. My temperature listed is for a conventional oven. 😊

the phenomenon that you experienced by getting sick from red velvet cake and then never being able to look or eat it ever again is called the Garcia effect
Red velvet cake is not red velvet cake without Ermine frosting. This is the recipe that we always made by request in our family for Birthdays. It was definately a special occasion recipe. When I was a child I would save all the icing for last and I eat that by itself. We ate it cold from the fridge so it was kind of like the texture of the ice cream in an ice cream sandwich. Such good memories. :). I think we would make a batch and a half of frosting so it was extra thick.
Looks amazing! Thx sooop much! I've been wanting a Red velvet cake recipe for some time now. Love the frosting too! Thank you, thank you, thank you! XOXO Patty
I first started baking your recipe from pumpkin cookies (after disappointed from many pumpkin recipes out there!) and it was the best ever. Pumpkin muffin and red velvet cake were next I tried and they were incredible. Love that all your recipes are easy to follow with simple method yet with great result. Definitely looking forward to your cook book if you will ever have one. Thank you so much for sharing the recipes!
THIS is the Red Velvet Cake that I was raised on using the Ermine Frosting❣️😋 My grandmother or mother would make it for Christmas and it is my favorite cake ever‼️‼️ You're post has given me the idea to make one this Christmas to pick up the tradition and carry it forward❣️ Thank you for sharing your awesome talent‼️‼️😊
Thank you so much. I made this cake today and the ermine frosting. First off, the cake recipe is awesome. It was easy and the result is so delicious. I need to get the gel food coloring you used. The one I used the cake did not turn out as red, but really don't mind since it was tender and so good. The frosting was a first for me. I was a little more willing to try because the initial steps remind me of making country breakfast gravy and I have some practice making that. The key (and the same with the roux portion of the frosting) is patience and DON'T leave it or stop whisking. Like you mention don't rush it by increase the tempt. It turned out really good too and I am thinking I like it more than buttercream. Any suggestions what flavors of cake it goes well with?
I don't have my recipe in front of me, I just remember it says the vinegar is last and it's important to add it last, the world will crash and burn if you add before, oh no!! LOL This sounds delicious, Sam! My daughters favorite cake! I'm not seeing a link to the frosting though? Just a small 3 after...³ like that...
Hello, I am thankful to have found this...I made your red velvet cake for Thanksgiving with the ermine frosting. In a word...WOW! After trying 2 other recipes some time ago, one of which was "ok" and the other a failure, I was thrilled to find yours the perfect one! I've subscribed and look forward to baking your other cakes. THANK YOU!!!
Hello again, I made this cake again Sunday for my sister's birthday. She requested a red velvet bday cake.. She flew in for a few days for the first time in years!! She and the others we had for her dinner LOVED it!! BEST red velvet cake EVER!! I cannot thank you enough!!!
Its funny how things stick w/u from childhood. My birthday is right after Xmas n every yr I would get a Red Velvet Cake n 56 yrs later still have Red Velvet Cake on my birthday. I love m can't wait to try ur recipe on my next birthday 🎂
Hi Sam. As you mention it is the best red velvet cake and I say in the planet. I love that you can make it with just a spatula. I baked 1 1/2 times quantity into a 40cm x 30cm sheet pan and it was perfect. Thank you amazing Lady. 😋
I made this cake with cream cheese frosting for a colleague’s birthday - my office gobbled it up! I’ve never been the biggest fan of red velvet cake but the texture of this one was just amazing! Soft and moist without being mushy. The only thing I did differently was replace the extra egg yolk with one tbsp of extra oil because I never know what to do with one egg white. After years of looking I can finally stop looking for a decent red velvet cake recipe - thank you!
Omg I was literally thinking about adding brown sugar to my red velvet cake and the butter + oil I’m in the process of creating my own red velvet cake and to see someone else add brown sugar as I would is crazy and rare 😂 thank you for having like minds like me!
Hi Sam, I have made five of your cakes; one was the red velvet stuffed cheesecake. My family is celebrating a birthday, my so in law is asking for this cake. I cannot find the recipe on your web slight, any chance I can get this.
I don't actually have a red velvet cake with a cheesecake, but you could use this red velvet cake and the cheesecake from my carrot cake cheesecake. :)
That happened to me with Campbell's Bean with Bacon soup. I used to loved that soup as a child but on Christmas Eve the year I was 12, I ate it then was sick that night. Didn't touch the stuff for at least another 20 years, lol! Now though, the only Campbell's soup I can stand is their tomato soup but I do make homemade Bean with Bacon soup and like it.
Same I made a few red velvets there's times they red n some times the colour does come thru...but looks like a chocolate cake but the texture would be great but not the colour...wat will the reason b for the colour...I'm going to try ur recipe....thanks your cakes are always yummy 😊
Everything went according to plan, BUT why did mine sink in the middle slightly? I used a 9 x 13 baking dish which the batter filled to perfection. It wasn't easy getting that gel food coloring to dissolve. I still saw tiny bits of it in the batter. I figure the bits really won't show in such a dark cake...hopefully.
@@SugarSpunRun No, I didn't want to leave it in the oven any longer because I was afraid it might turn out dry. Anyway, everyone LOVED the cake. I managed to score a small slice and they were right. It was spectacular, a keeper. People were throwing me kisses. Not a single crumb was left in my 9 x 13 dish. One of the ladies asked me to make the exact same cake for next week's meeting. Personally, I prefer to try some of your other cakes. As a matter of fact, I'm going in search of one right after this comment. BTW, the gel coloring DID dissolve but there were little specks of undissolved cocoa throughout the cake (nobody cared). The only thing I can think went wrong was that I didn't beat the batter enough. I was concerned about beating it too much making the cake tough. There's even a possibility it was cacao instead of cocoa (I don't know if there's a difference). It was given to me in a ziplock bag by a friend. Maybe next time, I'll add it to the buttermilk instead. Well, thanks a bunch for the great work on this recipe.
I am eager to try this recipe because it looks so easy. I used to make red velvet back when I was in college. Several recipes alway came out tough even if i tried not to overbeat the batter. I see now that the recipes lacked the fat content that yours has. I did do the ermine frosting which was so delicious and creamy smooth that the less than perfect cake was tolerable. Lol! I don’t think I’ll have any problems with your velvet cake. Thanks for doing all the research so that we can be assured of great outcomes.
Hi Sam! Can i use a two 6” pans with this recipe? and does the time of baking is need an adjustment if i use the 6” pans? Thank you and I can’t wait to try this recipe for my mom’s Birthday and also the stuffed cookies!
You can use your 6 inch pans, but this recipe will make enough for three 6 inch pans so make sure you don't overfill the pans. I'm not sure on the bake time but it will definitely be reduced. Be sure to keep an eye on it. :)
No, they aren't the same thing. I have a post explaining the differences between the two if you'd like to check that out! sugarspunrun.com/baking-powder-vs-baking-soda/
I don’t know how you taste all those cakes and look as beautiful as you do!! This cake is in the oven right now and I’m so excited to bring it to my sister tomorrow she loves red velvet and this is my first try at this cake and with all these great reviews I’m looking forward to eating! But I’m dyslexic or just me and put in the egg white instead of the yoke then just put in three eggs Hope it doesn’t make a bid difference and you know I’m going to eat it regardless lol I’ve tried your carrot cake cupcakes and they were sooooo delicious! Have a blessed day ❤️
It wouldn't be a "red" velvet cake if you change the color but some different ones may work. Just be careful because you do have the cocoa powder in there and it may result in an unwanted color
@@SugarSpunRun ok thanks for replying back to me I will have to buy a red colouring because I want the cake to keep it goodness lol & taste great too I will try this cake next week
Does the cake have to be stored in the fridge if making the day before due to the cream cheese? And can I add sour cream to the cake batter or does that not work with the buttermilk?
There is no cream cheese in this cake, but with the frosting, whether you use ermine or cream cheese frosting, I would recommend refrigeration. I wouldn't recommend adding sour cream with the buttermilk. You will end up messing with your ratios and I'm not sure it would turn out quite the same.
@@SugarSpunRun Thank you so much! I normally make cakes the day before and am always concerned with whether to put it in the fridge or not and whether to ice it the same day or not
I actually have a couple of mixers I like to use. If I don't need one with lots and lots of power I use my kitchenaid hand held mixer. If I need to whip egg whites or something like that I have one made by Hamilton Beach, and of course for a stand mixer I have kitchenaid stand mixers. :)
Unfortunately I think there would be a good bit of adjustments needed here and I haven’t tried it so I’m not sure exactly what would need to be done. I’m sorry. 😔
I'm so sorry it didn't turn out for you 😔 This cake definitely doesn't turn out like a brownie, so it sounds like something wasn't right. Did you make any substitutions or accidentally forget an ingredient? Sometimes this can also happen from bad baking soda or overbaking. I hope you give this recipe another try--I think you'll really like it!
Made this for Valentine's day. We called it Flame Red Cake when we were growing up. It was my Dad's favorite and always what he wanted for his birthday. Your recipe is different from my Mom's but I tried yours this time and it turned out wonderfully. Hope you have a wonderful Valentine's day.
The cake everyone has been waiting for? Not if you'e on a keto diet. I'd love to sample some of that cake but I just can't do it because I'm trying to lose weight because I've had some recent heart problems (afib leading to having to have an ablation) and my doctor has strongly advised me to lose weight because being overweight is hard on your heart. So I'm trying keto and I've lost 12 lbs. in four weeks. I've got eight pounds to go and when I get there I'll go off of keto for awhile and one of the first things I'm going to do is go to Publix and buy a slice of that kind of cake. :O)
hi thanks for all your tasty receipes,,kindly advice should we use 1 3/4 cup of granulated sugar as on video or 1 1/4 cup as per below written receipe,,thanx
I'm so sorry this happened! The most likely culprit of a sunken cake here would be under-mixing or under-baking. I hope it turns out better next time. 🙂

Week 2 and the ladies are still raving about your red velvet cake.
How do I double this recipe
Thank you so much for this recipe 😘Your right it is the BEST my family loves it!!!!
You’re welcome! I’m glad everyone enjoys it! 😊
That looks so good. Now I am craving for it 😋
Me too! I have been hesitant to make red velvet cake, but she pushed me to go ahead and make it. Can't wait!
I hope you love it! :)
Looks delicious and cannot wait to try this out!! Can you make a recipe of donuts with apple cider vinegar?! Yuuum 😋
I hope you love the cake! I have not experimented with a donut using apple cider vinegar, but I will have to see what I can do. :)
This is the recipe my family has always used minus the brown sugar. Need to try! Great video.
I hope it turns out great for you! ☺️
@@SugarSpunRun Thank you! This really helps 😊
Can I use baking powder instead of baking soda??
No, they aren't the same thing. I have a post explaining the differences between the two if you'd like to check that out! sugarspunrun.com/baking-powder-vs-baking-soda/
I’m so glad u shared your recipe with us. I’m gonna give it a try. 🤞🏽😉
I hope you love it! :)
In the video, you used All-Purpose flour, will using Self-Rising Flour make any noticeable difference?
Yes! Do not use self-rising flour here.
Great, thank you...I've just started baking and am having a blast. You're recipes are awesome and easy to follow. God Bless
Hi, I noticed in the recipe you said 1 3/4 cups granulated sugar but the written recipe under is 1 1/4 cups. May i ask which is it. Thanksss
Sorry for any confusion! The written recipe is correct. :)
@@SugarSpunRun no need to apologize. It happens. Thank you for your response. ☺️ awesome recipes.
Good day! Can i use dutch processed cocoa powder?
I don’t recommend it here
I don’t know how you taste all those cakes and look as beautiful as you do!! This cake is in the oven right now and I’m so excited to bring it to my sister tomorrow she loves red velvet and this is my first try at this cake and with all these great reviews I’m looking forward to eating! But I’m dyslexic or just me and put in the egg white instead of the yoke then just put in three eggs Hope it doesn’t make a bid difference and you know I’m going to eat it regardless lol
I’ve tried your carrot cake cupcakes and they were sooooo delicious! Have a blessed day ❤️
Thank you so much for the kind comment. 😊 I hope your cake still turned out for you and was delicious. 😊😊
@@SugarSpunRun it was delicious we all loved it lol thanks! Can’t wait to try more of your recipes 🎂🍰🧁🍫
That’s great to hear! I’m glad everyone enjoyed it. 😊
Este pastel parece muy rico .Pero es un poco difícil hacerlo .Para eso prefiero comprarlo en una panadería
I made the recipe but I added cayenne pepper and apple sauce it was fantastic.
Hi
just thinking 🤔 could I use any colouring of my choice???
I normally make cakes the day before and am always concerned with whether to put it in the fridge or not and whether to ice it the same day or not
Suscrita y mi like y comentario 😊💫💫💫 gracias quiero hacer este pastel , se ve tan suave y húmedo omg delicioso 😋
Thank you so much! I'm so glad you enjoyed the cake! ☺️

Hi! Quick question: What hand mixer do you use? Thanks, I really enjoy your recipes!
I actually have a couple of mixers I like to use. If I don't need one with lots and lots of power I use my kitchenaid hand held mixer. If I need to whip egg whites or something like that I have one made by Hamilton Beach, and of course for a stand mixer I have kitchenaid stand mixers. :)
@@SugarSpunRun Thank you so much for the reply!
I love your recipes!!
Thank you so much! :)
Hi! Just wanted to ask, why you didn't use a baking powder? sending love from Philippines ❤️
Baking soda reacts with the acidic ingredients (buttermilk, cocoa powder, vinegar) to give this cake the perfect rise without baking powder 🙂
Looks great! Can you suggest some adjustments to the recipe if I were making cookies instead of cake?
I am assuming you mean cupcakes here? I actually just published red velvet cupcakes on my blog. sugarspunrun.com/red-velvet-cupcakes/
@@SugarSpunRun No, I have a request for Red Velvet Cookies. I've made them using box cake mix but I prefer to bake from scratch.
Unfortunately I think there would be a good bit of adjustments needed here and I haven’t tried it so I’m not sure exactly what would need to be done. I’m sorry. 😔
Hello. I am little confused. If 2 and 1/4 cup is 280gm then how is 1 and 1/4 cup is 250 gram?
Sugar is a lot finer and more dense than flour so you can fit more sugar into a container than you can flour. :)
Very disappointed… Do not recommend this method, came out like fudge brownie’s not cake like at all, tasted like brownies not cake
I hope my recipe brought back some sweet memories for you Susan ❤️ Happy Valentine's Day!
O no! I hope you recover quickly! I wish you good luck and much success with your endeavor. :)
Hi...i cant find buttermilk ...can i use milk...? Please reply...tank you...
I would recommend making my buttermilk substitute if you don’t have any available. 😊sugarspunrun.com/easy-buttermilk-substitute/
Can you make a three layer cake from these measurements or should I double everything?
If you make it a 3 layer cake your layers will just be thinner. Alternatively you can just increase the recipe by 50%. 😊
@@SugarSpunRun thank you!
@@SugarSpunRun by 50% do you mean just double everything?
Hi, I tried the red Velvet recipe and it was yummy.... However, the cake had a depression in the center, what could be the cause 😔
Hi! This is most commonly caused by either not mixing the cake well enough or not cooking it for a long enough.
YESSSSSSS IM SO GLAD YOU FINALLY DEVELOPED THIS RECIPE IT LOOKS SO DELICIOUS
It took lots and lots and LOTS of tries. I hope you love it! :)
This looks heavenly!!! Sam you are my beautiful baking Angel😉
You can use beets for the coloring
hi thanks for all your tasty receipes,,kindly advice should we use 1 3/4 cup of granulated sugar as on video or 1 1/4 cup as per below written receipe,,thanx
I'm so sorry about that--the recipe is correct, so 1 1/4 cup. I'll make a note in the video about that. Thanks so much for pointing it out!
How to make it eggless pls suggest
Unfortunately I don't have a good suggestion for how to do it. :(
imade this cake just now, followed every step to a T but it sunk 😔 ibake a lot & my cakes dont sink
I'm so sorry this happened! The most likely culprit of a sunken cake here would be under-mixing or under-baking. I hope it turns out better next time. 🙂
This sounds delicious
Thank you! :)
