[I mean not so tall, my English is bad sorry.] Depending on the apples you are using you can get a different taste. The white stuff is also optional. Sprinkle some powdered sugar on it, its tastes even better. You can use the remaining apple juice to spread on the dough it will get even more taste. Do not compress your apples in szarlotka you want them to be nice and fluffy. That's a pie, not a brick. Hide it from your children's cause they are gonna eat it all when you're not looking. I know from experience. I ate the whole pie by myself. Worth it.

If you want the crust to be a little crisper, use Vodka from the freezer, in place of the ice water. The alochol will burn off and leave you an nice and crispy crust. Also, use a Pastry Cutter for that first part instead of the bench scraper. That'll make it a tad faster when done by hand and not warm is up too much. Cream of Tartar for the egg whites, they will hold the stiffest of peaks. Then for apple juice, simmer it does to a little bit thicker syrup but not quire syrup, gravy consistency. Then add a little into some heavy whipping cream, no vanilla, and a dusting of mace & all spice, whip it up good for apple spiced whipped cream. Consume all as normal. The last part is a deviation from the polish recipe but will be very tasty combined with the rest.
This was the best way to end working 10 days straight cooking breakfast, lunch, a little brunch, and preparing take home Christmas dinners as well as a la carte sides. Thanks Chef!!l
My mum used to make apple pie with shredded apples. She put the spices on the shredded apple before letting them drip. That way you also get spices in the apple juice ;)
Hey ChefPK, if you cut slits in the corners of your parchment paper it’ll fit flush in your pan . You can make the parchment overlap a little so nothing will leak through . I hope this helps next time you need to line a something with parchment paper

Honestly, that sounds pretty good, though you'd probably have to dry them a ton before using them just because of how much water is in it that it would be basically impossible to fry it
couldn't you use a pastry cutter/blender (I've heard it called both) to cut the cold butter in? I think it would work better than the bench scrapper since it has more than one edge..also they are pretty easy to come by, heck depending on where you buy one you can get them for under 6 bucks..around 10 at the high end for just a simple one. Sure they can get up to 20 or so but I don't think you really need one THAT expensive. I will say though the filling looks more like a meat after it's cooked cause it has the color of roast beef lol.
Hey, can you check out Yakitate japan? It's an anime similar to shokugeki but only about bread and each battle they have a category of bread they're making. Would be cool if you made some recipes from the show and give some light to a very underrated anime.
You almost did the pronunciation. 'Sz' should be read like English 'sh' (just little harder). I think the easiest way to say it would be: shar-lot-ka, you just need to pronounce everything clearly, including harder 'r'. My mom is making szarlotka in a bigger rectangular form, pastry on the bottom, it can be crumbled, or layed down, no bringing it up on sides. We do shred apples for it, but you can also cut them into small pieces or make the filling earlier, that will be in a form of jam/marmalade that you can just spread on the pastry. We don't really squeeze the juce from the apples, but not long time ago we added jelly powder to the apples and it mixed amazingly. To shred the dough, it definitely have to be frozen, and you need to work quickly, cause it literally melts in your hands as you do it. As for the egg wash, with how tall the form is, it might be needed, but if you were making it in shorter, but larger form, it's fine to go without it. It was really fun to watch you making it, good job!
