This is...so good. I've only made mapo tofu one other time, but it's always a dish that I keep thinking about. Thanks for sharing this version that seems super accessible and less intimidating than some of the more intense recipes.
Since you are not doing this traditionally anyway how about changing the tofu for something like paneer since I cant get any good quality firm tofu where I live? Any thoughts chef?
Where are you in India? I get Tofu from the Super Groceries like Big Bazaar/Star Bazaar, the brand of Tofu is called Chetran's, see if you can find it. If not, I don't think Paneer will be half bad, IMO it'll taste even better (I have a bit of experience because I tinkered with Paneer-Tofu swaps in various dishes)

Unless you're down South in Bangalore. Bangalore has a good variety in the super markets. For Both tofu and cheese. Up here in Delhi, it's a bit more niche.

I have been eating almost a daily meal for Mapo tofu takeouts for about a weeks. Before our city increase the lockdown level and that restaurant had to close. But I love on of their menu, which was mapo eggplant. It's the same mapo tofu recipe but replace the tofu with diced eggplant. Very good :d.
Prolly not happening. Terrines themselves take time (cooking, processor, shaping, fridge, sauces). If you just chop up the veggies and plate them all together, they'd end up the same in your mouth anyways lol- chewed mixed veggies. Just get a chop suey or something. BUT, it might be worth a try just for the lolz.

I love seeing you really display your experience and craft in the former, and of course it's nice to be able to actually make some of this stuff at home with the latter.

You know things are going well, when a Chef makes a mess, and they say "Oh god, I made a mess!". If a kitchen is too clean after use, it doesn't feel right, cuts, drops, oils, small leftovers from cuttings and more. It is practically impossible not to make a mess, now how easy it is to clean afterwards that is the real question =P

Just made this today. I don't know what's going on in this but it's fire. Also first time I bought and cooked tofu but it went really well thanks to you :) also it is actually quite quick to make I usually need more time for even the simplest dishes just cooking down the onions takes a lot of time cause I like them cooked really well almost caramelized. Anyways thanks for letting me know this dish.
This actually looks so good, might try this at some point :) At the moment i can manage to cook beans on toast pretty well, and this dish also utilizes a microwave so I'm sure it cant be too much harder xD

That iwatani portable gas range looks nice. I have an electric range at home and have had a hard time finding a suitable flat bottom wok that works well. I wonder if a portable range like that is the answer so I can get a real round bottom wok. My only concern is, are those butane portable ranges suitable for indoor use?? I'm seeing them sold as camping equipment.

Hey ChekPK, I have a general question/comment. In this video I can see you using sesame oil, I believe a rice wine, and more. But, whenever I go to the store and go to the Chinese and Japanese food Isles, I get overwhelmed by the sheer number of condiments. Like, there is hoisin sauce, oyster sauce, mirin, Miso (maybe not in this isle), and more. Would you ever think of making an intro course on all of these sauces and what they do?
That looks amazing! What brand of dry Udon noodles did you use? The last time I bought dry Udon the noodles turned out more like really thin soba instead of Udon

you can try pressing the silken tofu to remove moisture. Google how to press tofu and you should be good.

Chicken broth can be prepared before you start cooking. Just an opinion if we use food wars rules from the anime
Szechuan chili paste also available in the market, you just need to stir it with water and then boil all the tofu and meat with it.

Hmmm I found some decent dried Udon from Uwajimaya (local shop) but any will do!
I think I'd personally use Medium Firm Tofu instead of Firm Tofu for Mapo Tofu, you want it to taste soft and supple and not have too much bite to it.
