    HAPPY NEW YEAR TO ALL! Made these for brunch yesterday and they were a BIG HIT!!! To make them extra special, I also made Jill's white frosting (Vegan Hostess Cupcakes) and added maple extract to stream over the buns! YUM! My 90 yr-old mom (who eats the worst SAD you can image) could not stop talking about these buns!! She kept commenting on the texture!! Thank you, Jill!!! Another WIN!!!!❤

    Another way to cut the rolls is to use unwaxed, unflavored dental floss. Take a long-ish piece and wrap it under the log, then cross the two ends over top to cut through. Another great recipe I can't wait to try!🙂

    I have missed having cinnamon rolls! Now I can have some and they will be healthy. My son may like these for the pecans. He isn't plant based, but he likes to try some of my food. If he likes it, I need to hide enough of it so that I can still have some.Thank you for sharing this recipe! :)

    I roll cinnamon dough out on parchment that I tape to the counter. Much easier to roll and I use the paper to help roll. I lift as I go. I also roll the long way not short.

    And cinnamon is supposed to help regulate one's blood sugar too. Dont' know if it truly has that much effect, but that's what I've read. Great looking recipe! Looks like you put a lot of experimentation into it.👍

    OMG Jill ! This is fabulous ! But I have a few questions:
    - Could we put a little bit of apples in the buns ?
    - Could we use cashews instead of peanut butter ?
    - Could we use date paste instead of syrup ? Homemade ?
    - Could we use any fruits in the buns ?

      Some small apple chunks might be nice. You can use cashew butter instead of peanut butter. I have tried using date paste but I didn’t really like the result.

    Changes: Convection oven. All purpose flour. Almond butter.
    I used 2.5 cups all purpose flour, scaled down the water to 210 g, and almond butter instead of peanut butter. And only half the nuts.
    The topping turned out incredibly watery - I see now that it's because my brand of almond butter is much more liquidy than her peanut butter. It’s still good, but I will seek to fix this.
    I have a convection oven and did 325 for 25 min, covering with foil with 8 min left. The middle one was underdone right in the very center. 5 more minutes probably would have fixed it, but I don’t know how the rest of it would handle it (probably well). Everything else was cooked perfectly.
    They’re a little sour. Granted I haven’t tried them cool yet, and that could change things! My partner and I agreed that a citrus flavor would go well with it, and they liked my idea of an orange-date frosting. Tho I might prefer to go with orange zest in the topping, perhaps. That said, I’m the wfpb eater and I liked them as is, and will absolutely make them again. My partner, on the other hand, wanted to add sugar to offset the sour. (Update, when cool, I feel like it lost most of the sourness.)
    I was a little skeptical as I was making them. This is the first time I’ve tried date syrup and it didn’t taste quite like I expected. But they hit the spot so well in the end!!

    If you ever expand to selling your foods online, I hope you include this one! Very interesting process too. Do you make your own date paste and date syrup? Are there different ingredients or just different textures? Thanks for all you share.

      I don’t make my own of either. Date paste is merely dates blended with a bit of water. Date syrup is made in a similar way but the pulp is filtered out and then cooked down until thick.

    This is the first non-gluten free recipe I was sad to not have an alternative. I appreciate you do have gluten free recipes. It is SO hard to find all three gluten free, SOS free, and vegan! 😂

      Look into Einkorn flour. It’s said people sensitive to gluten can usually eat it.

    I understand that WHOLE dates may have a low Glycemic Index (GI), but is there any proof that PROCESSED dates like this syrup also have a low GI? Thx.

    If you roll out the dough on parchment paper, it will release and the parchment paper can help to roll up the log tighter. Old pastry trick.
