I made this recipe many many time over and it’s so good !! But tonight I was craving donuts so I used your dough recipe to make oven bake donut holes and it was delicious it’s dryer than a deep fry donut but much healthier. Shaped the dough in small balls oil sprayed them and rolled them in the “sugary coating “ swerve brown sugar, 1 tablespoons of raw cane sugar, pumpkin spice spice.
This is perfect! What a great timing, I have been craving cinnamon buns - not my usual thing to crave but my tesco doesn’t seem to stock the vegan cinnamon buns for a while now and this is a protein version, so it would be even better! It’s on the menu for the coming week! 😊
I have to try these tomorrow ❤ Just a remark: I found out by accident that your bagels need a lot more baking powder than I read in the recipe, but now that I see your "teaspoon" I understand why 😂 In Germany we don't have specific measurement spoons and all recipes tell the amount for standard eating tea and tablespoons. So I'd guess your teaspoon is twice the size of mine which explains why the bagels were a lot better when I accidentally put in the double amount 😅

So I’m using both vital wheat gluten and whole wheat flour… I haven’t tried replacing with pea flour. It’s on my todo list. Pea flour has a strong flavor a and smell. I fear it might be overpowering. I will try and report back. I also want to try replacing VWG for protein powder too.
@NatalieMatthewsFitVeganChef wow thank you!! I use whole foods 365 pea protein powder to make waffles amd it has a very neutral taste. I have never tried anything other than that. It makes great waffles. I just use that, baking powder and the yofiit chickpea milk. I haven't been able to figure out muffins with it yet though. Only waffles and ice cream.

I am very very new to plant based eating ….i want to make the seitan rolls. I try not to do too much soy , and the seitan is really nice and I just dont know what to do with it …the nuggets are great I just weigh what I need and throw them in a salad or whatever but the rolls do you slice them once you use them? I understand the shape being easier for storage …..also sauces, I do love my trader joes but am not a huge BBQ sauce fan. Just made a batch of the pumpkin cinnamon rolls, I need to add more filling next time. Also, my dough didn't rise as much in the proving process. I may overworked my dough when blending. Do you have any tips for folx who don't have a kitchen aid mixer and have to use a hand-held mixer? Also any tips for making sure the dough proves properly? Thanks - I have your recipe book and love your recipes!
To knead the dough, start by doing it manually until it reaches a texture where it no longer sticks to your hand. For the Rise: Place the dough in a greased bowl and cover it with plastic wrap or a hot damp towel (like I did) to create a warm and humid environment for the yeast to activate. Prepare a clean kitchen towel by placing it under hot water and then squeezing out the excess water. This will make the towel warm and moist. You can also place the dough in a warm area to allow it to rise and double in size or a warm oven to create a consistent temperature for the dough to rise. For the filling, if you are making pumpkin spice variation, consider adding a thin layer of pumpkin puree before sprinkling the pumpkin spice and coconut sugar.
I am so looking forward to making the first two batches - the pumpkin spice thing doesn't really come across in Australia, but I am also thinking of trying an apple version... if you could sub pumpkin puree I am thinking I should be able to sub Apple pureeand mixed spice?
Yes you can! Like an Apple fritter 🤤 yumm Pumpkin spice is a mix of spices (cinnamon, nutmeg, cloves, and ginger). I make it myself whenever I can’t find it.
I really like the texture with both, the vital wheat is a bit though when I did it without. It still comes out good without 🫶🏽I just preferred it with the baking powder.
This is not a recipe that can be swapped for gluten free… it’s not gonna come out the same. I’m working on developing a gf version. Tried this today. Followed your converted version (no scale). Dough was dry and crumbly. Didn’t rise much (my yeast was still active - I tested first) and impossible to roll out. Had to toss it out. :(
I’m oh no! sorry It didn’t turn out. Thank you so much for the feedback. I took the us conversion out as I developed the recipe using a food scale (grams / ounces) I highly recommend food scale for baking recipes It makes it so accurate. They’re really cheap on Amazon.

Vital wheat gluten is the protein source, but unfortunately then it’s not for ppl who need to eat dairy free, legume free, and gluten free. Glad others can eat it though.
