@@convincedquaker not really leaving it up as a reminder that you can and will f up is better than just sweeping it under the proverbial rug and denying it's existence with a follow up video would come across as disingenuous and serve to tarnish guga's name further than what he actually did which is leave the error filled video up as a reminder to himself his editing team to do research on the channel's or videos he is reacting to than repeat the mistake.
Uncle Roger on the other hand, never apologized to Mike Chen (Strictly Dumplings). Shame on him.

After watching Uncle Roger for a long time, it's weird seeing Jamie being praised for cooking food well lol.
I mean he knows how to cook, just keep him away from any asian dish...
Uncle Roger is a comedian who uses others and stereotypes as a crutch because he's his stand-up, and actually jokes are garbage. Basically, what's wrong with creativity today.
Jamies attempts at non-English food are generally pretty bad. They range from not authentic to awful (chili jam?!?). But more traditional UK stuff he's pretty good at tbf. Anything where a country might be offended? not so good.
It's pretty hard to mess up a steak.

This is why I love Guga. No ego. He's humble and willing to not only accept when he/his group messed up, but also completely own it with a meaningful apology and the perfect redemption video. We all make mistakes. The important thing is we own them and learn from them.

@@TYANTOWERS I agree, he shouldn't take the other video down (not that he would anyways), but he should change the title, description and probably should pin a comment apologizing and explaining what happened. It's nice that he corrected himself here but I don't think that fixes his mistake as there's zero context on the original video, no admission that it was a mistake. Don't get me wrong, I love to see Jamie Oliver get ripped on 😅 but I don't like to see misinformation and it would only take a minute for someone to add context to the other video. It's actually surprising that they went through all the trouble to make this video and edit it without evening correcting the title and description on the other one, but maybe there's a reason for that.

My grandmother used to do that smacking thing with a bunch of herbs when she made roast. She'd take it out every 30 minutes and baste using the herbs as a brush. Always delicious. I usually just put herbs on top and baste but I can honestly say I have seen it done successfully

The brushing with the herb technique works really well actually. For a more thin steak that doesn't have much time to baste, it gives just an extra subtlety that balances well with how thick the meat is. In a French kitchen they'll tie the herbs to a wooden spoon and use it how we would use our silicone basters.

NOTHING wrong with admitting you're wrong my friend, all the more respect for you for it!, Mind you I am a fan of the flat iron I have a freezer full of it lol, sadly these days, also not as cheap as it used to be. Not sure where Oliver was getting his prices but a few months ago it was around £7 a KG, Now, nearer £10 a KG But still a fantastic multi purpose steak, Nice beefy flavour and nice texture for frying, and is excellent for slow cooking and in stews.

Pretty much my only experience of jamie comes from reaction videos, so happy to see him getting at least something right 🤣 that was actually some pretty good steak advice he had there!
Jamie seems to be a good cook, and he did/does a good job trying to convert people to a more healthy lifestlyle. His major "sin" is going too far with classic recipes, changing them to a point where they're not classic anymore and still call it the original, and that does trigger a lot of people and was massively amplified by the virality of Uncle Roger's satirical (over-)reactions. In the end, he makes good food and has good recipes you can follow. Just don't go to him for the "classics" :)

My favorite video from Jamie Oliver is cooking scrambled eggs in three ways with the same ingredients just different techniques and even said that you don't need cream or milk to make creamy eggs when all you need is butter to make perfectly cooked scrambled eggs and salt.
Jamie's cooking style is aimed towards someone who doesn't want perfect, but rather - doable for a working person.
Plus, he emphasises health, and at least for every euro-centric dish, he also respects tradition.
The guy has been on TV for too long to be messup-free but I use a lot of his recipes and they usually turn out fantastic.

Using the herbs as brush is quite common and works wonders when used throughout the cooking process instead of just once. A lot of chefs use a brush of many herbs so they can brush butter with herbs while grilling instead of in a skillet.
The flat iron or blade steak comes from the chuck area, more specifically the shoulder blade. Not from the hind quarter or rump area like Jamie showed

Total respect! I’m in the UK and Jamie massively got me into cooking when I was young and ignited a love for cooking for me - I have a lot of admiration for him - he made cooking fun and accessible for a whole generation. His campaigning is also honourable. I saw your other video, I instantly knew it wasn’t Jamie so knew that it was a mistake but also didn’t get too annoyed as I’m sure you’re not as familiar with him as people in the UK - it’s an honest mistake to make. This video was such a decent and respectful thing to do, it shows integrity and also respect for Jamie who has done so much for the world of food. Great work!

I forgot who inspired me to cook, and that chefs could be cool and marketable. Jamie paved the way for prime time television chefs and his work with troubled and underprivileged kids was the benchmark.

@@benjaminvdvyt Jamie started a lot of people on youtube, including Alex French Guy Cooking. He was basically the first chef to put stuff out on youtube and make cooking accessible. Even though Pete's videos have flaws, there are some of Pete's videos that are good, and got him going.
I mean, criticizing Jamie for some of his flaws is fair game, but expect him to be accountable for trying to help smaller content creators is kinda lame.

I've tried the Jamie Oliver thyme whip before. He also chops a single garlic clove in half and rubs that over the top of the steak as it cooks in the pan. It's amazing how well it works, it's really really subtle, but there's definitely a change in flavour!

I usually baste the herbs in the butter too (along with a clove of garlic), but the brushing method works too. The hot oil and butter in the pan heats the herbs as you swish them around, and the butter that the thyme picks up gets flavored and deposited onto the steak. To be honest, it's not as intense as basting. But maybe a stronger herb like rosemary could be "toned down" that way?
EDIT: You should take a look at Alton Brown's skirt steak on coals video sometime.

Disrespectful and sorry but it's not funny: also olive oil is the only healthy oil to use in cooking: extra virgin olive oil and some other fat like lard or butter if you want to bring heat and burning point down: the other fats and oils are no good: just read up on how they are produced Uncle disrespect and not so informed Roger!!!

I used to love watching The Naked Chef. As a young guy, I didn't know enough to have much of an opinion on his culinary skills, but loved the format of him preparing a meal for some sort of social gathering. I always wished I was one of his hip friends he invited over for a dinner party.

I think the technique Jamie was trying to do with the thyme is use it like a basting brush but he really didn’t have enough fat for that. I’ve use this technique and works well. Just don’t slap the thyme on the meat, dip the thyme in whatever fat you have in the pan and brush and repeat a few times.

Finally a proper apology video that also includes good content, good on you Guga. Similar to Jaime with the flat iron I used to prefer the chuck eye steak due to it being cheaper and comparable until everyone got on board and the price skyrocketed
@Guga The idea of putting the steak out at room temperature before cooking is not to get the INTERNAL temp to rise, but let the surface get a bit warmer. This allows for a harder golden brown sear on the outside, and keeps the inside a nice medium rare. As with your steaks on the grill, this leaves a clear line of where the meat touches the cast iron pan (my preferred method) forming the bark, and a tender, juicy inside. Good man for admitting you got the other video wrong 👍👍

Amazing video and immaculate honesty, Guga! I will say, however, his butter and thyme technique could use a lot of work, especially since using thyme the way Jamie did could potentially make an oily mess if not careful

I myself didn’t know that it wasn’t Jamie Oliver, I only clicked on the video out of confused curiosity and then looked at the other video comments and saw that, this had indeed unfolded. Guga and the staff are all awesome people and I appreciate their dedication and honesty. Rock on fellas
~5:00 the difference in meat and air temperature will effect how fast the steak temperature changes just the same as the pan vs meat temp effects how fast the steak cooks. (on the outside) if you had 2 fridges at 2 different temperatures and took them out to do this experiment youd find the steak from the colder fridge warming up faster but never overtaking the steak from the warmer fridge.
