Yeah the mashed potato is definitely not how a normal person cooks it on a daily basis, nobody will bring out the mixer knowing they will have to clean it over a mashed potato. Fork mash it is for me :)))
Yeah I don’t get not using a mixer. You’re going to spend less time cleaning it than the time it takes to whip your potatoes by hand(and it does it better)
Brian only made egg fried rice to bait Uncle Roger, I'm sensing it. And that being said, I was never interested in visiting New York or the US in general. But the idea of visiting Le Rivage and getting tasty food made by Frenchy makes me wanna embark on a good old voyage fromt he old world to the new.
Frenchie is amazing! His chemistry with Chef Brian is on point, and it's addictive watching them on screen together. Guga, did Frenchie immediately hug you when he saw you?

I'd love to see more of Brian and Frenchie in the kitchen as their dishes looked incredible. Really cool fusion ideas from Brian (that confit looks insane) and Frenchie's dish basically looked like the most mouth-watering version of a steak and mashed potatoes I could imagine.

Only thing that would make the mashed potato better is if it were mixed with some cheese store bought block (wanna splurge get the fancier cheeses) like Edam cheese or cheddar.

Living in Europe and eating mashed potatoes in various European countries, I've never had them made with cheese. And since he was making a French recipe, it makes sense he kept it simple with potatoes and butter.
@@panvlk nah not an American thing more personal preference of the chef's (usually mommy dearest) home cooked meal. Also the cheese helps give some flavour to the mashed potato other than the salt and or pepper.
One thing that I will say is that you can make Brian's dish at home with cheaper and readily available things like oil instead of tallow. You can make a bunch of the scallion oil and put it in the refrigerator or freezer for a long time safely. I recommend it because it will take your leftovers and meal prep to new levels.
I knew whose dish was who’s before watching the vid. I haven’t seen the ending, but I have a lot of respect for Frenchie, watching him cook with simple ingredients and having faith that his dish will be delicious with simple ingredients AND techniques. I like this guy Edit: I just had that feeling. 4 decades in the business will do that. Very happy for him.

Interesting to see different styles by any means no style is bad. I wish I got the chance to taste both dishes as well as Guga's of course- France (Paul) vs. Korea (Brian) vs. Brazil (Guga). Yes I know Guga didn't cook this episode but we see his style every other episode the Brazilian way which seems awesome!
I like Brian's bibimbap-eque presentation. And even though you typically make it with plain rice, I think going full dolsot bibimbap would've given an extra texture to the fried rice, and the heat from the bowl would also help cook the yolk a bit when you mix it around. Frenchie's steak looks like a classic steak. Not sure what else you can say about it - looking at it tells you everything you need to know about the food you're going to enjoy.
Someday, somewhere, there’s going to be an episode where Guga, Andy, Brian & Frenchie, Taku, Hiro, Joshua, uncle roger, matheson, leone and maybe even deermeatfordinner (and a few others I probably forgot to mention) gonna get together and hold a massive youtube smorgasbord for a cause.
